Quick Jamaican Rice & Peas

  • Here is a quick Jamaican Rice & Peas recipe. Made using canned kidney beans for those days that you forgot to soak your beans overnight and simply don’t have enough time on your hands to cook them down until they’re tender.
    This recipe is rich in flavour, made with creamed coconut and the authentic fragrant flavours of thyme and scotch bonnet.
    Ingredients:
    800g canned kidney beans
    100ml water
    200g creamed coconut
    1 onion, chopped
    6 cloves garlic, minced
    3 sprigs of thyme
    1 spring onion
    1 scotch bonnet
    1 tsp salt
    1 tsp black pepper
    500g long grain rice, washed and drained

    Amazing tasty authentic Jamaican rice and peas, shelly well cooked just how I like it, scotch bonnet pepper gives that lovely flavour not to mention the coconut cream oh wow excuse me, this is a winner in my opinion.

      Hiya. I half the whole recipe as this was just too much. I use a whole can of coconut milk and fill half way up with water swirl around and that does the job.

      Dried kidney beans are widely available in cities in the UK. Can get them from supermarkets, local Caribbean shops, African shops and Asian shops.
      Can imagine in more rural areas they're harder to come by.

    I felt like 200g of coconut cream was way too much, probably needs half...otherwise the rest was amazingly perfect

    The only problem I ever have when making this is my water to rice ratio. Too much water it’s mushy when done. Not enough then it’s crunchy. I’m try tho method and see if it helps.

      Because the pepper is whole and not chopped, it adds very little in the way of heat. It’s a subtle flavour.

      You can use coconut milk in a can aswell. You can find it at wholefoods or most caribbean aisles in the supermarket

      You have stir constantly remember you are using coconut milk and not just water also make sure you don’t have the fire too high

      Put on very low heat.. I have a gas hob and could barely see the flames I had it on so low.. Need to try and get a very gentle simmer, and remember to stir regularly 😊

      Still works. I would still advise letting the coconut cook for about 5 mins after adding since some of them in the can come with clumps.
