      Fifty years ago I went to the potluck party of a coworker. Another attendee brought a dish called Jamaican Rice and Peas, which I had never tasted before but found sheer delight in tasting and couldn’t stop eating! I was assured it was a traditional recipe I could find anywhere. Sadly, while I looked and looked in paper cookbooks and eventually online when PCs and internet was developed. I never found that unique combination of flavours until now. Bless you and thank you...

    This is the best recipe for rice in general. Your two inch water above the rice rule and measurements in total helped me make regular rice Jamaica rice Puerto Rican rice thx u

    Im 19
    & I hate cooking honestly .
    but i wanted to make smt for me and my boyfriend to eat and this rice was apart of it.
    my mother prolly cooked this rice a thousand times but i literally was never interested to see her do it or watch her .
    so i had to come watch a tutorial lmao.
    i followed your steps and the rice came out so delicious ,& i love tasting coconut milk in rice&peas so i add quite a lot.

    Im american and my girlfriend is from Spanish town and she doesn't cook often so I always find myself going to her mom or aunt house to get authentic rice and peas. I've never asked them how to make this, now I can make it and take it to them to taste test it

    Chinese gal here. Oh my gawd, that’s so many more steps than Chinese rice! It’ll be worth it tho. Gotta get those herbs and spices

    I love rice dishes!!! Jamaican food is one of my favorites. Love the rice and peas. I also love jollof rice and Indian biriyani. My mother use to make jagacida or jag (Cape Verde) rice all of the time when me and my siblings were kids. Just plain old white rice by itself is good too : - )

    Love this. However, you may want to edit where you say to have the water cover 2 inches over the rice. You had less than an 8th of water. So, I'm going to with how the preparation looked on the video. Thank you for sharing darling.

      @@AuthenticPlantbasedEats ah okay. so soak the peas for 2 hours with onion cut up. Then boil them for another hour and half - then add in your coconut milk and seasonings.

    That looks tasty, I get mine from the local Carribean takeaway, but I’m gonna try to make my own now. What does Shelly mean, is it that something to do with the beans? Do I cook until the shell falls off?

    The same water you use to sit overnight is to boil? Is that how you get the red color in the rice ? Mines came out white but taste good maybe that’s because i used canned beans ?

      Yes dear, I used the same water use to soak the peas. It does give the rice that red rich color. At times canned beans will not give it that color and especially if you drain the liquid. If I do use canned beans I sometimes add a small amount of browning to give it the color.

    Thank you for this. I'm trying to omit foil in my house. Can you recommend another way to do the steam bit at the end, without foil?

      You can omit the foil. Once Most of the liquid is reduce put your stove on a low heat and allow the rice to steam.
