I've always thought that Catelyn's thought about Renly being "a ghost in a golden crown" refers to how similar he is to Robert (reinforced by the next sentence) instead of how he was 'hollow' and 'nothing'. It's always interesting how many ways you could take a sentence and it reveals new meanings through the lens of other people.
I'm pretty sure people in Westerosi upper society do know Renly and Loras are a thing. Stannis accuses (by Westerosi standards an accusation) Renly of not being into women (Margaery in particular), Margaery later claims to be a virgin, and Jaime straight up says to Loras that he'll stab him where even Renly didn't or something like that. Jaime was hardly that close to either Renly or Loras when any of this was going on, so if he knows it's probably not a well kept secret. In the show it was made much more explicit still, but this already tells us enough, I think.
Renleys changing eye color does not imply he's been killed replaced by an incompetent faceless man, it means Varys spirited him away and hid him in the walls of the winterfell crypts, only for him to later help aegons cause by having him fight against daenarys in the final boss battle for the throne in an epic parallel to Robert and rhaegar on the Trident.
I agree, even though execive parties, laughter and drinking in face of serious matters is bad are all those needed. When the world seems to end, its dark, wights are coming and everyones last pair of socks are wet someone needs to lighten the mood and remember the good times and that spring may still be coming.
Renly really did have the Stormlands behind him Schwifty! Selmy, Estermont, Morrigen, Tarth and more are storm-houses and Stannis only had 5K men with several crownland-houses (Celtigar, Velaryon) backing him. Aside from House Florent the Reach did not flip, but Stannis army still multiplied from Renly's stormlords switching.
I think the descriptions of Renly here are a bit unfair. The ability to make friends and keep people complacent is a huge part of the legitimacy any ruler of the cursed lands of Westeros can have. It is made clear in the later chapters that those flowery Southerners can throw a punch when it comes to tussling so if it wasn't for plot contrivance spawns-behind-you shadowkiller Renly would likely have succeeded. Also this is Catelyn's perspective and in her grief-stricken state of mind and the stern Stark ideology she adapted of course she'd see all that PR shit as just a show. The idea of the sanctity of lineage has not really been a workable way to uphold legitimacy and with it the peace at least since Aegon the Unworthy and it is pretty sure that Stannis would have made a terrible king. In the unruly Westeros a king as hated by the nobility as the Mannis would have had a bad time - presumably. Of course we'll never know as he made a mess of it when he tried. All this to say Reach with a Peach, Sex on the Beach, Roose likes a leech and Renly is the liege.

I think it's cool in both the book and the show that when Brienne asks to be one of Renly's personal guards, he grants it to her without hesitating. We could have had a king who was (relatively) feminist and (relatively) pro-gay rights.
