  • PICKLE BRINE SAUTEED MUSHROOMS!
    INGREDIENTS
    1 tsp olive oil
    1 tbsp vegan butter (or regular butter)
    1 shallot, thinly sliced
    1 tbsp green onions, thinly sliced
    3 cups variety of mushrooms
    1/3 cup pickle brine (or caper, banana pepper, jalapeño, etc brine)
    salt to taste
    garnish:
    1 tsp hemp seeds
    1 tbsp chopped green onion
    Zest of half a lemon
    PROCESS
    In a large skillet over medium heat, add olive oil and vegan butter. Add shallot and green onion. Let cook for 1 minute on low, add 1 1/2 of mushrooms to the skillet and let cook for 4-5 minutes until you start to see some caramelization. Remember, don’t crowd the pan! Add half of the pickle brine and let reduce. Once all of the liquid has reduced, Set those mushrooms aside. Now cook the remainder of the mushrooms, after 4-5 minutes of cooking, add the remainder of the pickle brine (depending on how large your skillet is, you may be able to cook these all in one batch) To serve, add to a platter, and top with hemp seeds, chopped onion, and lemon zest

    Thank you SO MUCH for your videos! I love-love-love your intuitive approach to cooking, just imagining different flavour combinations and not being afraid of straying from the recipe.
    I just recreated this one, had to improvise as I didn't have all the same ingredients. Used a huge Portobello mushroom, violet onion, and spinach - turned out SCRUMPTIOUS ❤️

    you saved my ass i have a multiple food allergy (milk , wheat, dairy, nuts, tree nuts, figs, kiwi) sometimes its kinda hard for me to come up with something cause everything is limited or sometimes I lose my appetite but I usually watch your videos or scroll through your account on insta nd get inspired today I made tadka with rice nd I really loved it

    I also use brine when I cook boulgour or pasta with tomatoiish garlicish pure chilli sauce. Yes m'am.

    I LIVVEEEE to deglaze with soy sauce! I seriously hated mushrooms for awhile and I started adding soy at the end to let it cook down AND THEY TASTE LIKE MEAT 😍😍😍😍😍😍

    This recipe is so delicious, I’m not a pickle person but I love using the brine, and I end up having left over pickles in a jar. This might be offensive to someone, but I’m working on ways to use left over pickles besides eating them. If you have any suggestions please comment down below.
