I have seen many articles that state you should not cook with whey protein powder, as it does not keep it's protein composition under high heat. That makes me hesitant to try this. However, I have not seen anything negative about cooking with casein protein powders. Literal food for thought.
I think he did the casein because it makes you feel fuller for longer. You can probably do what you want tho. I mean the food police won't come knocking.
The real question is are they tasty? I guess I'll have to make my own because all those big boy brands have either gluten free OR protein waffles, no one has gluten free and protein waffles. I don't feel like throwing up just to eat soooooo Ill make my own.
Can anyone suggest a good vacuum bag product? Also, what would the point be to vacuum if you're already freezing? As long as they're all eaten within a month or two, I imagine they'd be just fine?

I think he does it for the protein but idk. If you can't eat eggs, make a small batch and see if it taste and look good without, otherwise you can use psylliumhusk to replace the eggs. If you're allergic to normal eggs, you might still be able to eat duck eggs because they've got a different type of protein, so that's also an option

Screw this recipe and try this. One scoop gold standard vanilla protein, one egg, splash of water= 1 waffle with 30g protein, tastes like just like a normal waffle.

I was going to suggest using chickpea flower but the quest chips are actually using milk/whey isolates. If you needed it vegetarian / vegan there's probably other isolates... I've used flavorless isolates in dehydrator chips and it works fine as long as you pack it with another strong flavor (jalapeno cheddar etc). Cinnamon raisin flavor might be strong enough for waffles
