    Subbing in powdered sugar rather than granulated sugar is a good way to make it fluffier and it’ll come together way faster. It takes less than a minute in my Kitchenaid.

      Peter Guilherme what's the smallest amount you can make in yours? I can't make a single serving in my mixer, the beaters don't touch the bowl. So I use an aerolatte and it splashes and it's not very strong so I don't get thick enough foam.

      The reason why it probably works better is because powdered sugar, aka 10x, is 3% corn starch. it keeps it dry, so to speak.

      Tim Frey I’ve made it with two tablespoons each of instant coffee, water and powdered sugar. That’s the smallest amount I’ve made and it whipped up fine. Took a bit longer maybe three mins on high.

      Tim Frey I use 1tablespoon equal parts in my stand mixer. With the whisk attachment it works fine for me😊 I’ll scrape the sides of the bowl after about 2 min of mixing though since I use so little.

      Yeah, I second immersion blender, at least initially. I did it successfully (finally) today with an immersion blender and a whisk at the end. Also, I put it in the fridge for a few minutes. I also suggest using a container to mix that has tall sides, not wide.

      @@dracoslaya8 Alton says you don't get quite enough air incorporation with a blender. It's good to get a good start, but you need something to keep going. I used a whisk.

    Oh Alton! I still remember discovering his show as a kid and being completely amused and fascinated as it reminded me of Bill Nye's show, which I also loved. Love all his stuff. This was delightful.

    This brought back serious Good Eats nostalgia! Glad I heard a bit of the science of how Dalgona coffee works. I'm one of the confused individuals that questioned how water, sugar and instant coffee could turn that foamy.

    I've been doing this with the egg beater and it only takes a few minutes. A friend used the whipped cream attachment for her stick blender and said it took under a minute.
    Also...try it with chocolate milk.

      I've seen some videos that use those drink shaker bottle with the wire ball for smoothies (?) but I've personally done it by hand because its easier to shove it off to a sibling when my arm gets tired

      I've made it a bunch over the last couple of weeks, but I usually pour milk over ice and then add the whipped coffee on top and mix. It's absolutely delicious, but be warned, has a major caffeine kick to it and it's way too easy to gulp down in two seconds! So yummy!

      @@kristenp1606 sounds awesome! i'll try it this way next. my first attempt was just putting the foam ontop of already finished cuban style cafe con leche, and it was a bit odd and overly sweet for me. i like the idea of adding the coffee to milk rather than to more coffee.

      I stuck a single beater in my coffee cup, poured the hot water over the coffee crystals and sugar and in less then 2 minutes, I had the foam. The hotter the water, the sooner you get the foam, no need to dissolve the sugar first. Unfortunately, this beautiful foam tastes super gross. Yuk! Of course, I don't drink the instant stuff, I grind my beans right before making my coffee. Fresh coffee beans freshly ground tastes far superior to instant. Was really hoping that AB would have some magic to make this taste good.

      She also added butter and substituted the regular sugar with confectioner's sugar and would brew the instant coffee first, then add to creamed butter/sugar mixture.

    I do equal volumes of sugar, water, and instant espresso (2 Tbs each) and hand whisk vigorously in the smallest bowl I have for a minute and a half and it turns out perfectly every time! Yes, my hand is tired, but it wakes you up so well in the morning! Little to no mess!

      @@egyptiansushi I use Medaglia D'oro Instant Espresso powder and it calls for "1 to 2 tablespoons for 3 oz hot water" for an espresso on the label. This coffee absolutely has a kick though!! 😆

    Alton, as a solution to the mess with the bowl my wife has an elegant solution:
    Use an immersion blender with the whisk attachment inside of a large mouth Mason jar.
    Fits perfectly, no mess no fuss.

    Cool Idea. I checked out a couple other videos on the topic and configured a quick method using your measurements with a couple twists: Ceramic bowl, and used water just before boiling point. I also used a cheap Sunbeam mixer with the whisk attachments. It whipped up extremely frothy/foamy in about 90 seconds. Thank you for the idea!

    I was so excited to see you made a Dalgona coffee, and clicked right away! I love coffee, heard all the hype and tried this myself. I used 1T, instant coffee, 1T. hot water and a little less than 1T of sugar. I whisked for only about 2 minutes with a hand whisk, so was surprised to see you needed a hand mixer and 5 minutes of mixing! I don't really care for milk, so I plopped my globs of foam in a glass with ice, cold coffee from that morning's brew, a splash of half and half and another plop of the foamy stuff. It was good. I will try the vanilla extract next time. Thanks for sharing! I have always enjoyed Good Eats and am enjoying watching you on UA-cam!

    It looks kinda like greek frappé. Foam instant coffee, water and sugar in a glass and add Ice cubes and water or milk if you like. They only take a few seconds to make a stable foam. Its cheap, delicious and refreshing

      I introduced a room mate to coffee milk here and they had never heard of it as they were originally from New York.... Think they killed a bottle on their own! Lol.... That made me sad.

    I'm so excited because I can finally teach Alton Brown something. So I've got an immersion blender, with a whisk attachment, it came with a thick plastic measuring cup, holds about a pint. That whisk fits in there with maybe a centimeter to spare on all sides. Toss the ingredients in that cup, it whips this stuff up in like 30 seconds to a minute . Also awesome for making whipped cream.

    I use my immersion blender with the whip and a mason jar. Thank you informing people of instant espresso. We have used for everything from morning joe to baking. I enjoy this treat every morning.

    This might be worth trying in the afternoon when I have nothing much else to do. If I fail then coffee milkshake sounds great anyway.

      I did it, either I'm weak or my coffee is stronger, this was way too much. Also I'd recommend splitting the water and dissolving the coffee and the sugar in each half before combining as the coffee granules didn't all dissolve for me once I started whisking, getting chunks of 'raw' instant coffee is not nice! The foaming was impressive though.

    I found that a wire whisk attachment on an immersion blender works much better. It only take me a minute or two, and I do it in a tall, narrow pitcher. It also helps to let it cool first, it won't foam well until it cools down. The whisking cools it quicker, but it's easier to let it cool on it's own so you don't have to whisk as long.

    I made this a few months ago, it was pretty fun and my husband loved it. I used my immersion blenders whisk attachment and it only took about 5 minutes to whip up to a fluffy and rich foam.

    Can you make a large batch and then stabilize it with something, like gelatin? And refrigerate it for later use?

      I haven't done this part myself, but I've been lead to understand that you can make a large batch, put it in a wide container and freeze it. It'll freeze in a similar consistency as ice cream, so it's easy to scoop out a portion. You will want to put it in the glass first and pour the milk over it though, so the milk can thaw it.
      I've also seen this made with hot water and it becomes a fairly stable frosting for cakes/cupcakes, no need for gelatin or other stabilizers. I don't think the water temp would make much difference in the flavor, so if you don't want to try to freeze you can go that route instead and refrigerate.

    It’s great to see Alton making Dalgona coffee ! The original dalgona, we actually melt sugar and put baking sugar to inflate it and eat it as a sweet snack :)

    I made dalgona from a cooled down regular drip coffee, worked just as well - though obviously it was sweet and only slightly coffee-tasting. The reason for instant or even instant espresso is the flavor, not any special advantage from the freeze-dried particles. Didn't seem to take any longer, either.
    I'd suggest the foam is actually just sugar dissolved in a bit of water (so syrup), beaten to an aerated foam. Obviously when I did it with already liquid coffee, I didn't add any water to it (the coffee had enough in it), and it foamed up just as nicely and the foam was pretty stable too (it was still foam 30mins later when I went back to kitchen to rinse out the bowl).
    So if this is your jam, just brew up your strongest cowboy coffee and let it cool, add sugar and beat the hell out of it.

      Melanie Nicholson that’s a good idea. I’ve had the best success with a tiny whisk and lots of spinning manually. Can whip it up faster that way then with a blender

      I thought immersion blender immediately too. Not sure it would be ideal, but never made foam before. It would be nice if a regular blender would work.

    This worked great, I used my whipper on the immersion blender. And used half sugar, half Stevia.
    I already had the instant expresso. It gave a nice jolt. It was wonderful, I loved it.

    Yep, learned that a standard, small soup bowl works best for containing the foam mixture. Allows for all ingredients to mix well with consistency

    My teenagers make this stuff every day and they put the coffee mixture into mason jars and shake the crap out of it. Caffeine AND morning exercise! But no mess, so they've got that going for them.

      Just make sure they have a good grip. I once was mixing a salad dressing in a mason jar and it flew out of my hand and shattered against my kitchen door a week after I moved into a new apartment. It smelled like vinegar for weeks and I was finding glass shards everywhere for ages haha

    I used my stick blender with the whisk attachment and the tall cup that came with it. The narrow vessel concentrates the whisking and to do 4 TBsp instant coffee with 3 TBdp sugar and 4 TBsp hot water takes no more than 20 seconds. Fun and delicious!

    That is a crazy way to make coffee milk (state beverage of Rhode Island). Just use Eclipse coffee syrup or Autocrat coffee syrup.

      I love Autocrat syrup. Makes great milkshakes, too. I haven't had it in a while, and stores down here don't carry it. I guess I'll bite the bullet and buy a bottle from Amazon.

      @@melissasaint3283 Nah, just found it after watching an anime where the main character was a "coffee milk" fan -- not exactly the same thing, but Japan has a sweet milk coffee drink. It sounded good, so I looked it up and found the RI thing and ordered a case direct from Autocrat at a fair price. Seems like they stopped doing direct-ship now, or at least I can't find it. Born in TN. I'm in Huntsville, AL now. Might move out West (Colorado, maybe) in a year or two.

    Just made it your way with Bustello instant espresso instead of Tasters Choice instant coffee.
    Really good! I might have put a little too much vanilla, but I liked the toasted honey flavor it provided. Also made me feel less 'coffee gross' if anyone knows what I'm talking about. Excellent first take at it.

    You have to make it with instant coffee from a Korean grocery store. American instant coffee just plain tastes bad. And it's 1:1:1 ratio by volume.

    I was happy to see him use Bustello instant espresso. I like that stuff so much that I hardly use regular coffee anymore. Makes wonderful lattes and great Dalgonas.

      lol the bowl makes all the difference. A steep sided bowl made for a stand mixer works much better with an electric.
      the bowl Alton chose works much better with a balloon whisk, and you can mix it perfectly well by hand, just start listening to podcast or something because you'll be there a while.
      as for cleanup, everything there's water soluble so it isn't so bad.

    I just made this using the whisk attachment for my stick blender in a one quart Mason jar. It worked beautifully without making a splattery mess. If I do it again, though, I'll make a half batch; the foam to milk ratio is a bit much for me as is. It would be perfect for 2-3 people as written, though.

      Jim Cook bruh it’s kinda like asking how to make…idk, applesauce or something. There might be some personal variations but the basic idea is literally just boiling butter until it clarifies. Don’t get so worked up if people who make and eat it regularly find such a question a bit odd.

    The best method I've found so far, is to use the whisk attachment that came with my immersion blender, and a narrow cylinder container (also came with the blender). Very little mess as long as I wash everything promptly, and only takes a few minutes.

    I've done this with my 2 year old (she doesn't get to drink it though). I use a stand mixer so I'm not holding it for 5-10 mins. Chocolate syrup around the edge of the glass is also a nice add on.

    Let the mixture cool before mixing and an immersion blender works great. It makes my coffee feel a little special too.

    I use the whisk attachment on my immersion blender and a much smaller bowl. Just keep it steady and let the motor do the work, move it around too much and it goes flying everywhere. I like to put it over almond milk and ice and top with whipped cream

    Hey Alton, my Greek friends have been making “Frape” for ever! All you need is water sugar “RED NESCAFE” if you can’t get The Greek style imported, and a cocktail shaker. You can even use a Tupperware container or an old margarine tub if you have to. Shake until foamy and pour over ice. Dilute and add milk or cream to taste. Sure it’s not as velvety but it only takes 60 seconds....

    I've been doing this with the good ol' arm and whisk. But I am using 1 Tbs of each so it's not too much. Takes 3-5 minutes to whisk it! Not bad. The coffee "smoothie" texture is unbelievable!

      They discontinued it while I was still in New York. I remembered I used to stock up all the coffee milk if I can find it. Like got 8 of them in the World Trade Center and carried them all the way back.

    I make the foam for Cuban style coffee in a similar way. I pour some of the coffee into a cup and add sugar. I also use a hand mixer. I remove one of the beaters so it can fit into the cup. The cup keeps everything inside and reduces the amount of splash.

    Ok, we have a thing in Greece we call "frappe coffee" which is made by vigorously blending instant coffee, water and sugar, and is then diluted with water, milk and ice cubes. NEver thought that a far-away Asian country would have basically the same idea

    This made me chuckle I first made this coffee with a random brand of instant coffee and then found cafe bustelo. I find bustelo is way better and actually froths up much faster I also use vanilla almond milk(I can't do the whole lactose thing) for extra flavor.
