White popcorn, coconut oil, (it’s what the theaters use and have since the 70’s; that and or palm oil, but that’s the devil), and grind some of your favorite fancy salt in a coffee grinder to extra fine. White popcorn has a thinner hull so doesn’t get stuck in your teeth as much. Coconut oil has a low melting point, a very high smoke point, is saturated, and a good source of Lauric acid. Plus it doesn’t coat your mouth like many other oils do. Amount depends on your popper size, but about 1/3-1/2 c for 4qt size. For oil, use enough to submerge kernels totally when tilted to one side. 1t fine salt for 1/3-1/2c kernels. And if you have a hot air popper, try this method sometime, so much richer! It’s how the theaters and every bar, fair, and other popcorn for sale is done. Not that anyone asked, but we are all bored, and I make popcorn almost every night. Coconut oil comes with or without the coconut flavor too, (virgin has taste, refined is flavorless) A very fiber rich healthier snack.
Oh, I had not thought about Furikake, I love that on rice. I already have the cheese powder. Use that on rice and popcorn already. Yes, cheese on rice is yummy. Thanks Alton.

Two things: Wayyyyy back in the middle of the last century, my family had a popcorn popper, probably from the 1950s. It was small, but had a popping bowl separate from the heating element, and the bowl was, in fact, hemispherical. They may have been on to something there. Second thought: we saw your live show in Philly and enjoyed it a lot, but my wife still hasn't forgiven you for not finding some way to get popcorn to the people way up in the nosebleed seats where we were. If you don’t want to buy cheese powder off amazon, you can also get moon cheese. Costco sells it in big bags and many grocery stores have it in little ones. Just dehydrated cheese. Then grind it up and sprinkle on the popcorn.

I like this method and even bought the ghee to do it. But my question is why if I try it in this fabulous hollowed out half sphere copper bowl that I own it won't pop.? I thought that copper had superior heat transfer properties but NO, just heats but no pop. Last night had to transfer the whole hot mess into the cheapo SS bowl and presto- poppo!
You just blew my mind, and I'm going to be forever grateful! How do you attach it to the bowl though? Just hold it on with the towels? I think I might see if I can use binder clips to secure it, but if you have a better method, I'd like to hear about it. Knowing myself, if I tried to hold it on, I'd end up with half-popped corn all over the floor and be very sad.
@@soygurl24 My spatter shield has a long handle like a skillet. When I shake the pan -- as I always do when making popcorn; I make mine in my soup pot -- I just have that handle in the same hand as a pot handle.

I use a stock/large soup pot, crank up the heat, add ghee/oil and salt, popcorn immediately, then I hold the top lip of the pot and side handles and splatter shield together and vigorous shakey shakey until popcorn is done. The top lip of the pot never has time to get hot, the shakey makes the unpopped guys fall to the bottom and moves the popped guys around fast enough so they don't burn. I can make a video if that isn't clear.
I cannot find an 18/10 stainless bowl anywhere! Where do you get one online preferably? Is there another designation that might help other than 18/10? I love popcorn and need to improve my technique so...bowl...yes

Two things: Wayyyyy back in the middle of the last century, my family had a popcorn popper, probably from the 1950s. It was small, but had a popping bowl separate from the heating element, and the bowl was, in fact, hemispherical. They may have been on to something there.
Second thought: we saw your live show in Philly and enjoyed it a lot, but my wife still hasn't forgiven you for not finding some way to get popcorn to the people way up in the nosebleed seats where we were.

When making your clarified butter or ghee, Save the butter solids and use them as a topping for your popcorn

By the by, since I don't like popped corn (leaving two hungry, unsupervised kindergarteners in the car at a carnival in 1962 - you could do that then and not be arrested- with a huge bag of popcorn, is a recipe for gastric disaster, and a lifelong aversion. We finished it between us. 'Nuf said about that), I got some whole sorghum grains at the health food store and will pop them soon. This is enjoyed often in Africa and India. I'll try it with ghee. It's also gluten-free and non-inflammatory, unlike corn.

I see the size of that bowl and it reminds me a lot of the shape of a large wok. Do you think that would be a good alternative? Perhaps the handle will make it easier to keep your hands safe?

If you don’t want to buy cheese powder off amazon, you can also get moon cheese. Costco sells it in big bags and many grocery stores have it in little ones. Just dehydrated cheese. Then grind it up and sprinkle on the popcorn.

@@immaculab.4231 That's also a good seasoning but they do have the elote seasoning which is salt, chile powder, cheese, chipotle, and cumin. An elote is street corn on the cob in Mexico.

I just noticed he has a tattoo on his left arm. And it's funny how he is and being himself and not the tv personality. Loved that show good eats.
I like this method and even bought the ghee to do it. But my question is why if I try it in this fabulous hollowed out half sphere copper bowl that I own it won't pop.? I thought that copper had superior heat transfer properties but NO, just heats but no pop. Last night had to transfer the whole hot mess into the cheapo SS bowl and presto- poppo!

I have a large mesh splatter shield that I used instead of the foil. It lets more steam out and is reusable. You're welcome 😘
You just blew my mind, and I'm going to be forever grateful! How do you attach it to the bowl though? Just hold it on with the towels? I think I might see if I can use binder clips to secure it, but if you have a better method, I'd like to hear about it. Knowing myself, if I tried to hold it on, I'd end up with half-popped corn all over the floor and be very sad.
@@soygurl24 My spatter shield has a long handle like a skillet. When I shake the pan -- as I always do when making popcorn; I make mine in my soup pot -- I just have that handle in the same hand as a pot handle.
@@soygurl24 I just use my hands. I use a stock/large soup pot, crank up the heat, add ghee/oil and salt, popcorn immediately, then I hold the top lip of the pot and side handles and splatter shield together and vigorous shakey shakey until popcorn is done. The top lip of the pot never has time to get hot, the shakey makes the unpopped guys fall to the bottom and moves the popped guys around fast enough so they don't burn.
I can make a video if that isn't clear.

I cannot find an 18/10 stainless bowl anywhere! Where do you get one online preferably? Is there another designation that might help other than 18/10? I love popcorn and need to improve my technique so...bowl...yes

It'll work fine in a regular old sauce pan, just make sure you keep it moving
