My husband and I enjoy watching your videos. We are fairly new to Carnivore and have some questions about different things especially regarding Diabetes. We would love to have the opportunity to meet you and Chris in the near future. We live in Green Valley, Arizona about 2 hour from Gilbert.
Egg shells are direct correlation to age of laying hen. That and observing the height and color of the yolk will tell you how "old" the hen is. Thicker shell, taller, more yellow yolk is fresher and good!
When I bread stuff, I will also dredge them in Whey Protein Powder, before the egg bath, the same way you dredge in flour, normally. I have found it helps keep the breading better.
We use the airfryer that is also an oven. I line the basket with parchment paper. Dry the skin, liberal Redmond's and put a bit of lard on each wing and air dry, Turing half way. I then turn back and grill. The skin gets so crispy. I can wait though to try these.
I have been making this 50/50 pork rind/parmesan breading for over a year and I use it to deep fry fish or chicken. I found out by chance one day where, not having enough pork rind crumbs, I tried to add more parmesan to it and it worked better than anything I've tried before. I use the very dry powdery parmesan as it makes a better coating and stays on well when deep frying in fat and....the food is not greasy at all! I have even made crispy egg rolls with it.

The egg shells are thinner on conventional(and more so than they used to be I’ve also noticed), it has to do with the health of the chickens. On a higher quality egg, the shells are definitely different
It’s more the nutrition and age of chickens - shells are a matrix with minerals such as calcium. Not enough minerals weakens shells. A chicken can be healthy by industry standards yet low in minerals and lay eggs with weak shell.

Buffalo Wild Wings plain flats are cooked in tallow (my favorite) with blue cheese dip (blue crumbles, sour cream, dash buttermilk) is amazing. This looks wonderful too!
I’ve been doing this with Chicken tenderloins, just adding a half to 1 tablespoon of KFC copycat spice recipe to the Parmesan/Pork Rind mix (found on Nagi Recipe Tin Eats) and it’s totally rave worthy.
We make the drumette portion of the wings all the time and they come out really crispy in a much simpler way although I am sure yours are amazing. We just put a bunch of the drumettes on parchment in the oven at 450 after about 30 minutes or so. I take them out and brush them with melted butter and add seasoning and put them back in for maybe five more minutes and they are crunchy. We do add buffalo sauce or barbecue sauce or teriyaki sauce afterwards.

My main cheat that I use with chicken wings because it seems to be OK for me personally is the use of some cornstarch and baking powder to make the chicken wings extra crispy in the oven! But there are otherwise really basic it’s basically a teaspoon each of those two plus a teaspoon of salt For each pound of chicken wings and I absolutely love these as one of my go to carnivore snacks! Even if you don’t use the cornstarch or baking powder which really helped the other thing I do is to lay them all out on a wire rack on a baking sheet with the salt overnight in the fridge which helps get them extra dry. So this might be a way to get some crunchy wings perhaps even without the baking powder or cornstarch.
After we cook our wings, I brown butter & add minced garlic & a little hot sauce in the melted butter, then we use the butter as a dip or just pour over the wings & toss them. I don’t do any type of breading but I will be doing this for sure! 😊😋😋😋

Definitely agree with the eggs now. They do crumble when you’re pouring it in the pan. But I do seem to find the brown eggs crack less. But because of pricing I get the white eggs from Costco

What a coincidence I said the same thing about egg shells from a few years ago. They didn’t crumble into small pieces before and now they do. What is your theory? I buy pasture raised eggs so not sure if the diet is the issue.
Good luck finding eggs right now! Millions of laying chickens have been lost to bird flu control efforts! Last trip to grocery store, the egg area was almost empty- I paid $5.99 for a dozen store brand large eggs!
165 is for white meat chicken, the dark meat+bone you technically should go a little higher. But likely not a big deal at 165, I just have to be careful at suggesting only "safe" temperatures that are FDA approved. 🙄
Love the vid but why are you always pushing product..ugh? Especially LMNT??? They have been found to hide maltodextrin in their product. Plus, can't we just add salt like you suggested to your friend and not have to buy a special product?

You are not wrong on the egg shells and their density. Good ol' white eggs will be brittle in comparison to pasture raised organic.

Redmond Salt makes an organic seasoning salt that's really good! I bet it would be awesome on these for flavor without a lot of spiciness.
Eggs shells are different colours depending on the breed of chicken, not on what they are fed.

Making your own is great, the one I used doesn't have MSG 👍🏼 but some brands might, always good to check.

I make them with pork crackles, and have had the family try both prepared, and they prefer the pork crackle ones. We do nuggets and strips.

I just bake my skin on bone in chicken thighs at 400 and they come out super crispy. I season them with smoked paprika and Sea salt.
How long do you bake the thighs?
