What a great idea to use the potato oil in the dough to give it a potato taste. I also roll out dough for savouries in potato flour and when they back, there is a hint of potato taste.

I say use warm water and let the dough rest for 20min before you form. That's what I've been taught from my grandmother who has made thousands of empanadas.

Because Yukon gold potatoes aren't very common in the stores where I live, mostly it's Nicola or Charlotte (waxy variants) and they differ in size. And potatoes from the field might be WAY bigger. xD Are 3 of them mayby the same as 4 portions of potatoes (=800G), or you use bigger/smaller portions? Or if you don't like to mention it in your recipes, mayby you wouldn't mind seeing what your average Yukon Gold potato weighs and telling it to me here? I greatly apprecieta the advice!
I could not tell you the exact weight of the potatoes, for me I usually use 1 potato per serving, so I guess 600 grams would be pretty close :) much love

Not very similar at all. At least not to a proper pastie.
I think it looks the same but the texture of the pastry and the general taste is sooo different! I am English but lived for a long time in Sevilla!

Nice recipe! I would use the oil from the tuna can for the dough. Otherwise, it will be poured away. Certainly gives a good taste to the pastry

How do you ensure the dough is not dry--that is our usual problem. I have never heard of this kind...looks delicious.
by following the measurements, if it´s too dry add more liquid as you are mixing it :) much love

I said flip them if your oeven does not have the top and bottom heat, which my oven does, as explained in the video :) Much love
