Homemade Caramel Apples

  • Apples dipped in rich homemade caramel and then rolled in chopped peanuts. You can use whatever you wish to roll these in after they are dipped...chocolate chips, M&M's, chopped candy bars, etc. You can even drizzle them in chocolate after rolling to make them even more gourmet. Not as hard as one might imagine and no umwrapping of dozens of caramels!
    What you'll need:
    8-10 small to medium apples (I used Gala's)
    8-10 skewers, chopsticks or popsicle sticks
    1 cup butter (do not use margarine)
    2 cups packed brown sugar
    1 cup light corn syrup
    1 (14oz) can sweetened condensed milk
    2 tsp vanilla extract
    chopped peanuts or topping of your choice
    waxed paper or parchment paper
    candy thermometer
    Thoroughly wash your apples. Remove the stems and insert a stick into the center of each. Dip the apples in near boiling water for 5-10 seconds and then immediately dry them to remove any wax. This may slightly discolor the apples but that's okay. Lay out a piece of waxed paper or parchment paper and thoroughly grease it with butter. Get your topping ready so you can roll the apples immediately after dipping.
    In a large heavy bottomed sauce pan, stir together butter, brown sugar, corn syrup and sweetened condensed milk. Stir constantly over medium-high heat until butter is melted and insert your candy thermometer. Turn heat down to medium and bring to a boil. Cook, stirring constantly, until the caramel reaches 245*F on a candy thermometer.
    When caramel is done, remove from heat, continuing to stir. Let cool for 1-2 minutes and add vanilla. Immediately dip apples and let excess caramel drip off. Roll into the toppings of your choice and set onto buttered wax or parchment paper. Continue with the remaining apples. If your caramel becomes too thick to dip the apples, warm slightly while stirring constantly over medium heat until you can continue dipping more apples. Let cool for 3-4 hours and enjoy!!
    If you have any remaining caramel, pour onto a surface sprayed with nonstick spray to cool for some awesome caramel candies!

    Caramel burns before it can get to the point it would be like rock candy so double check your measurements. Follow the recipe exactly like it is written. It may look like I used a whole can of sweetened condensed milk, but I can guarantee it was only half a can. As for the temp, test your candy thermometer in boiling water to make sure it is accurate (should read 210-212*F at a full rolling boil).

    Why is it that so many people make comments on how he can make HIS caramel apples differently? If you don't want to make it like he does or change ingredients then you do that and post your own version instead of making comments about the way he does it. I understand when you just have a question about it, but either use the ingredients he uses or don't then end up with rock candy or some other horrible crap... lol.. BTW I made these using the listed ingredients last year, and they came out DELICIOUS! I'm about to make them again and just came here for a refresher. ... Thanks for the recipe!!! :)

    First watched this video in 2015. Used it and it worked. Taught a class on caramel apples today and my students wanted me to use caramel bites and coffee creamer. It worked, but hands down.....this homemade recipe won me over. I made both today and homemade is the absolute best. Thanks so much for sharing.

    This is honestly the perfect recipe! This has been my “go to” recipe for a couple of years now when making my caramel apples and they come out perfect every time! No more having to wait for October to come around to buy the caramel apples from the store, already made, when I can make them just as good myself from home anytime of the year!     I made this recipe over the weekend. They turned out fantastic. This is now my GO TO caramel apple recipe. I've tried many recipes over the years and they usually turn out to thin and won't stick to the apples well. This recipe is perfect. Nice thick caramel that really sticks to the apple and tastes really good. Thanks!

    long-time subbie -- I've never seen this recipe -- BUT -- I love love love love love -- to infinity and beyond -- your soft pretzel recipe -- following your exact instructions, it never fails -- so my fear is not that this recipe will fail, it is that it will be TOO GOOD !!! -- I just turned 63 and food that used to take a least a day or two before hitting the hips, now just goes straight through on the express lane !! I'm going to give this a go -- we have a farmer's market and I'm sure they have fall apples -- thank you for posting !!! PS: Paul Hollywood on The Great British Bakeoff thinks he's big time when he gives them pretzels in the technical challenge -- and his recipe is not as good as yours, because the bakers can't "pull" it off, plus I can tell from the ones they use of how they're supposed to look and taste just don't match yours -- be well, Patricia

    Yes, it stays chewy and soft. Although for a cake, depending on how firm the cake it is, it would still be too firm. You could cook it to anywhere between 235-240 and it should be more apt to go with cake.

    I used fresh golden delicious apples from Colorado and my husband said it was the best caramel apple he ever ate and he has dentures and was able to eat it. I had to cook it longer for it to stay on the apples...delicious!!!

    I made your full batch recipe exactly like you mentioned. The only thing I did differently was that I stopped cooking the caramel at 240 degrees. I also drizzled a little dark and white chocolate to create a very delicate web effect and put a spider on the top of them. I displayed them on a tiered platter for all of my guests that arrived for my Halloween Party. EVERYBODY JUST LOVED THEM!!! Thanks for posting this delicious recipe and making it a home run.

    Absolutely FABULOUS!!! I just finished making them. They are beautiful!!! Had no problem with the caramel sticking after cleaning the wax off as you described. Next time I think I'll try cooking to 238 degrees per your advice for a gooey caramel apple! THANKS for a great recipe and tutorial !!! I used unsalted butter.

    OmGOOOOOOOOOOOOOOOOOODNESS!!! I made this caramel apple recipe tonight and it was absolutely delicious. The only change was that I used butter vanilla extract because I didn't have plain vanilla. I made the full recipe. I did 8 apples and spread the rest on our silicone mat, topped with peanuts. It tasted like a fresh, buttery Gourmet payday bar!! I ate so much caramel that my skin is scented like Fresh Buttery Vanilla-ee Delicious Caramel!! This recipe is a zillion times better than those pre-wrapped squares. Everyone is getting Delicious Caramel for Christmas this year! Some with a hint of Pumpkin Spice, some with jalapeno and pineapple, some covered in milk chocolate ext!!     I cannot express how AMAZING these are... I didn't add the light corn syrup and they are spectacular! so Delicious. The salted planters peanuts that I crushed and added gave it that perfect sweet and salty taste!

    I just made these. I followed his directions and cut it in half because I was only making a few apples. This is the best recipe by far. I found the hot water for few secs worked faster and better than scrubbing.

    Yep. A half recipe of this will cover 4-5 medium apples with a bit left over for candies. Just half all the ingredients and cook like you would a full recipe.

      Crouton Crackerjacks I tried your recipe once and I absolutely loved it. I made half the recipe like you did but I now realize I used the whole can of sweet condensed milk 🤦🏻‍♀️. BUT it was delicious lol. However I made it again now a full batch but it didn’t quite work out the same. 🤷🏻‍♀️. I’m not complaining though it was the same great flavor. But I guess I all this chatter lol what I’m trying to ask did you use the whole 14oz can of sweet condensed milk for the 1/2 recipe in the video?

      How come some recipes use baking soda? Is there a difference between not using baking soda or condensed milk? Can you please tell me what the difference is? Most recipes use baking soda!

    I just want to thank you for the wonderful recipe and awesome video. I have tried 3 different recipes for caramel apples, and this is the only one that worked :-) I am a baker for a local restaurant and they asked that I make caramel apples to sell.     Pretty sure it was plain ole semi-sweet chocolate chips. You can use any kind of chocolate you like. Just put it into a zip top bag, seal it and then put the bag into a cup with hot water (not quite boiling). When it's melted, snip off the corner of the bag and use it to drizzle the chocolate over top.

    Great recipe I've used it once and I'm going to try it again.This time I am going to dip them in semi sweet chocolate after the caramel cools then add slivered almonds on some and potato chip crumbs on a few also.....

    This is more of a sticky caramel however if you want it softer, just reduce the temp you cook it too by a few degrees. Say 238 or so for a starting point. The same can be done with any caramel recipe. Hope that helps!
