You can use metal. I use my kitchenaid all the time. Proof your yeast in the warm water and sugar 1st. It will float and get foamy. Mix in other ingredients and then slowly flour. To break down the gluten, throw dough on your counter several times (it is loud). Let it raise double size a couple times also. Soft inside, crusty outside.
I don’t know if this was already mentioned,but using Bread flour is much better than all purpose flour for baking bread. I use King Arthur bread flour.

Try Kachava. It is a superfood shake. I drink it in the morning as my alternative to breakfast. They have different flavors. I love it because not only does it taste good, it is packed full of superfoods.
