  • This video reviews how to raise or lower the tamp fan so that you can adjust the dose that is dispensed into the portafilter. As far as I know, this is the only way to adjust the dose on the Breville Oracle Touch machine. The lack of dose control is by far the greatest drawback of this machine.
    Alternately, you can measure your beans before putting them into the grinder so that the grinder only grinds a specific amount. This method has been hit or miss for me... regularly leading to channeling. I suspect that this is due to inconsistencies in the tamping because if you don't place sufficient beans in the grinder (based on the height of the tamp fan), the fan will keep spinning (and I think not tamping?).

    Great video…had the original Oracle for the last 8 years and just got the touch…tried this method to adjust the dose lower, but it seems to still dump the same amount and the tamping fan just digs into it and makes a mess…not sure what the issue is…seems others are experiencing the same thing.

    We have a Breville Oracle Touch and you need to unscrew the tamp fan adjustment collar, it does not simply pull out as you demonstrated. We simply use the tamp fan itself to unscrew and re-screw it back in. Likely a design change that Breville changed at one point. But it is not simply a Touch vs non-Touch issue, ours is a Touch and requires it to be unscrewed.

      I have seen some inconsistencies too. I am trying different things. I tried single dosing, but that didn’t work well at all. I really think inconsistencies come from the grinder and maybe the tamp fan. I bought a separate grinder and I will run tests to see if I can prove that it’s the grinder and/or tampfan, or something else. Maybe it’s water temperature?! I will post a video on that in a week or two. Take care and be safe!

      @@CoffeeWiser awesome! Definitely looking forward to future videos. I think many of the Oracle users are just mixing it with the milk and not really tasting the espresso. I have been to many cafe's where I order an espresso shot and it just tastes awful. Unfortunately that seems to be the status quo here in the US, many so-called "baristas" dont even taste the espresso they are pulling.

      Was about to reply the same, I checked with my machine and indeed I needed to unscrew it. Wasn't sure if it was because I had the the EU version sold under the Sage brand, but apparently it's not :)

    I have the Oracle non touch, got it for Christmas and I was able to follow this procedure just as in the video, I didn’t have to unscrew it, just use the magnet. It definitely helped me to dial in for a better espresso, however I still want to tweak it a bit more. Thank you for this helpful video.

    I'm living in Switzerland,so I have the EU Version, and this since end of this February 2020. I wanted to change the dose and in the Manual and other videos is described to turn out the piece. So, I had no chance and gave up. Today I saw your video and bingo, it works perfect. Just pull out. :-D. But... the screw was not in the hole, so I have to order another one. Anyway, after this Machine I bought also a "really" Espressomachine, a Lelit Bianca:-) Thanks for the great content! rem

      So when you get a new machine, the first thing to do is check if the grub screw is in there. Is it a metric or imperial sized screw?

      A small dab of blue medium strength loctite will hold it in properly as well while still allowing for easy removal.

    Been wondering why the coffee seemed weak, today found out the machine was dosing at 29grams . After watching this video I discovered the screw is missing on the tamp fan🤦‍♂️ will be on the phone with Breville tomorrow to resolve

    I have a question about adjusting the tamp fan height. I’ve tried to adjust to give me 20g, but when ever I think I’ve nailed it, I get a poor tamp. If I then adjust back for 22g, the tamp is perfect. It seems that there isn’t enough threads as the locking screw is right at the end where it needs to be to get a 20g dose. I have read that a lot of people adjust for 18g, how is this possible as I can’t even get down to 20g?
    What are the benefits of a 20g dose over a 22g dose?

      By "poor tamp," do you mean like a wavy tamp?
      If you are getting a wavy tamp, it is likely because you are tamping too coarse. Also, with a smaller dose, you definitely want to be grinding finer so that your shot has a nice and controlled flow.
      When I adjust the tamp fan, I make the adjustments slowly (one quarter turn at a time) and I use the machine a few times so I can confirm the weight of the new dose a few different times. You shouldn't be all the way down the shaft to the point where you don't have any more thread. What kind of coffee are you using? Is it fresh, with a "Roasted on... " date?
      Using a different dose has benefits for different roasts. For dark roast, a dose of 21g or 22g is good with a yield between 22g and 30g. For medium roast, right around 20g is best, and aim for a yield of 40g. For light roast, aim for 18g dose and a yield of 42.5g. Ultimately, taste is the most important, so if it tastes good to you, then it is good, no matter all the numbers I just mentioned.
      This machine does not allow for easy dose changes, so it is best to stick with the roast you like most, and adjust your tamp fan to product the best dose for your roast.

      It so happens that the tamper fan connector thread was too short, it was a manufacturing problem. Sage has decided to send out a new machine as they don’t have any push in connectors. Only downside, they are out of stock as I’ve been waiting 4 weeks now.

    Hi ! The size of the grind should influence the weight; how to proceed to obtain an extraction of a simple espresso in 30 s (pre-infusion included)?
    Should you start by adjusting the grind and then adjust the weight of the grind in the filter?

    Thank you so so much for your video that was amazing I did that this morning after watching your video and now it is at 19g instead of 23!!!! Wowww i wish that i knew this earlier had wasted so much coffee for years!!! And the shot was so much better creama now too. Thank you so much. My machine is a bit different instead of pulling out that little screw thing you actually have to unscrew the whole thing in order to have it come out to adjust the height. Do you happen to know if we can use the steam wand manually instead of automatic??

      Yes, you can do manual steaming. You flip the steam toggle up versus down.

    !! I found a pretty good solution to wavy tamps, which have led to very consistent shots and perfectly clean/flat tamping. Its all in the Grinder option. Instead of pressing the Grind button, i use the lever. But I don't release it right away to activate the grinding. I hold it to the right for a second or two while the tamp fan starts, which seems to aid the auger sensor a lot better. Let me know if this works for anyone!

    Thank you for your videos, very helpful! I tried lowering my fan few times, but I can't get it below 22g dose. Few times I lowered it to 4-5 grooves, I ran into issue of machine just grinding coffee without tamping it. This would result in a lot of ground coffee that would fall out of the area after I take the tamp fan off. Did you maybe run into this issue?

      How does your machine perform at 22g? Does it tamp well?
      When I adjust the tamp fan, I make very minor adjustments and then I use it a few times. I have noticed that sometimes it takes the machine a few grind and tamp to adjust to the new settings.

      Same here. Adjusting the screw to the lowest possible setting still resolves in 21g in the basket. I am buying a 15g basket now and hope this will work better.

    breville 890 I have a problem: the automatic coffee macerator does not form a tablet correctly.
    The surface of the tablet is uneven - waves from the rammer remain on the surface.
    I think the reason is that the screw on the axis of the thrombizer has loosened ... I tightened it and probably
    setting failed...

      Usually, if you have uneven tamp (waves) it is because the grind is too coarse. I recommend you try to grind finer.
      It sounds like you already checked the screw on the axis.

    Hey Mister, I'm really glad I've found your channel, it really helps alot with my newly bought Oracle :) thanks for all this well informed knowledge.
    I've got one issue with my Oracle, maybe you can help? I found that it's really hard (almost impossible) to knock my puck out after brewing my Espresso with the Double basket (havent tried the Single). It doesnt matter it's a good shot (good ratio in good time with nice flow and nice looking puck) or a bad one. Everytime I have to knock like 10 times really really hard. Do you have any idea? I tried to lower the tamp force and duration without any effect (other than ruining my shot, lol).

      Your English is fantastic actually!
      Sometimes if I am grinding too fine, my puck will be more condensed, so it will be harder to remove. But if you have good shots, your grind level if probably fine. Could it be the type of coffee you are using? Or does it happen with every type of beans? Also, do you leave the portafilter in the group head for a little while after your shot? When the puck dries in the portafilter because of the heat from the group head, it is harder to remove.
      It usually takes me two firm hits on the knock box to get the puck out; 10 times definitely seems like a lot. On the oracle touch, I cannot adjust the tamp force, so I don't have any experience with those settings.

      @@CoffeeWiser thanks for your reply! For me adjusting the amount of grind solved the issue. It was obviously simply too much Coffee. After reducing it by 1.5g the shot is still perfect and the puck comes out more easily.

      Your tamp fan can deliver between 18g and 22g depending on how you calibrate it. I have found that the lower I go (I tried 18 for a week), the more inconsistent my dose. At 20g, I get a somewhat consistent dose right around 20g. The grind setting should be adjust to get a great flow and complete your shot for a medium roast at about 28s (adjust for your taste).       I wanted my dose to be 20g at a grind setting of 19 or 20 (this grind setting works well for most medium roasts on my machine). After the adjustment you saw on the video, I raised the fan by less than a quarter turn; I made just a very small adjustment because at 19.5g I was very close. I hope this helps.

    I adjusted my tamp fan to dose at 20 grams on a grind setting of 19 - 20 (medium roast). My question is that when I brew my shot, I usually get not quite 2 ounces of liquid espresso by volume but the gram weight is often close to 50 grams (28 second brew time). How can I get the gram weight of the brewed espresso down so it’s closer to 1:2 ratio?

    Any suggestions for how to get the pin out? The one in your hands at the 1:07 mark of the video ... I cannot get that thing out for the life of me. I even tried padded needle nose pliers, it's not budging.

I've turned it clockwise (as the video says) and counterclockwise for at least 30 seconds each way and nothing happens. Either way, I'll just keep playing with it, I'm sure it has to be screwed out .... I'll get it eventually. Appreciate the help, and will surely check out more of your videos as I try to learn how to use this beast of a machine I just got.

    Non-Touch user here. The tamper nut is a screw in and it's not coming loose. Used tools and still no luck - so frustrated! Did anyone solve it?

    So to get the 20 grams for double shot only four threads is visible? Or you make 5 threads?

      Mine is at four threads right now. The thread count may be different for you because it depends on the coffee you grind, and it also depends on how fine you grind. Because the tamp fan works on pressure, you will be able to fit more coffee in the basket when the grind is smaller, before the tamp fan senses enough pressure to stop. When the grind is coarser, it takes up more volume so the tamp fan will sense pressure sooner and stop sooner. It is normal for the dose to fluctuate when you move by several grind settings.

      I was not able to order just the screw to I ordered the tamp fan connector, which comes with the screw. This worked for my machine, but it's probably worth double checking with Breville Customer service to see if this is the part for your machine serial number.

    Thanks for this great video. I’ve been adjusting and with the screw as far out as possible(i.e. barely any thread left for the grub screw to grip), I’m still getting 22grams, any ideas?

      That is interesting. I am not sure what could be the problem.
      Are you using the original double basket?
      How are your shots with 22g? I am guessing you have to grind pretty coarse to get flow out of such a large dose.

      So shot wasn’t too bad but I expected something a bit better from a £2k machine so repaired my other machine and sent this one back.
      My tamp was great but I’d suggest if yours is not, then you may be winding the fan assembly out too far just as I tried to in order to get the lower dosage.

    I’m getting waxy tamps. Breville sent me a new tamp fan and the connector and the new one is doing the same thing. Probably 50% of the time is there something else that causes a wavy temp?

      Most of the issues I've heard of is from grinding too coarse. Have you tried to grind finer? If you can afford to grind finer without over-extracting, that would be a great place to start.

      Some tamp fans have to be unscrewed. Try to turn it in either direction to see if yours screws on/off.

    Too bad you cannot adjust the time the grinder grinds and increase/decrease it that way. I love this machine with the exception of that one thing.
    Would have been nice if we had some more control over how many grams of coffee comes out of the grinder.

    Why is it when I have my Tam Phan done when I take it out for some reason it looks like there's extra grinds and not tamped good enough. When I first got it it worked great

      Do you have a wavy tamp? like in the video I made about tamp fan issues? Or do you just have a few grounds not flat? My tamp fan will tamp most of the grounds, but it is not as beautiful and perfect as a manual tamp. There are little grounds left.

      I watch the other video and it does exactly that I have the PIN in there but it's still have a lot of grounds the same way. Still having the problem

    Would this work on the normal Oracle machine (non-touch). I tried to pull out the rod after the fan, but it won’t come out. I can see the allen screw though. Thank you

      The Breville Oracle mechanism is slightly different. If I recall you can turn it in one direction to unscrew it. I will try to find the video for you.

      Wow! That was a super fast response .. first I really want to thank you for these videos. They are really helpful. I’ve tried the method in the video but it didn’t work either. The whole thing rotates. Maybe i’d better give breville a call. Without your video, I wouldn’t have known this was even possible. Thank you again

      No problem. I am glad the videos are helping. I started to make them because I couldn't find anything on youtube to answer my own questions! Breville customer service is normally pretty good but I am not sure how they are dealing with the quarantine. If you get a resolution, it would be great if you can post it so that others who have this problem can find your solution!

    Mine is doing 21 grams out of the box. I think I’m going to leave it alone.

      If you focus on good flow, and try to get close to 1:2 ratio (21g to 42g of espresso) in maybe 30 to 32 seconds, you will have a nice tasting shot. Have a great day.

    I have an Oracle touch, keeps under extracting (too much liquid) even on #2 grind setting (almost finest) and newely purchased beans. Any tips?

      GreekEuros, there is a conical burr setting inside of the grinder, accessible right under your bean hopper. This setting will allow you to set the whole grinder finer so that your current #2 would be a #20, for example, allowing you to go finer. There is a UA-cam video on how to adjust this setting. I am sorry, I don’t have the link handy and I am out right now.
