  • In this video, I try to show what good and bad flow looks like so that if you don't have a scale or measured shot glasses, you can identify what is wrong with your shot and correct it. Brewing without a scale is tricking, so knowing what right looks like is critical.
    Accessories used (Amazon):
    - Breville Oracle Touch machine: amzn.to/2wOJQ72
    - Large basic kitchen scale: amzn.to/2VkmO1m
    - Small brewing scale: amzn.to/3bmDGtN
    - White latte cups: amzn.to/2XM4908

    hi tx for the great video..I m also looking for an expresso machine.Me and my wife love latte flat white cappucino so we decided at dual boiler machines...We come up with the oracle touch.First impression was expensive but the idea sounds uniqe and machine features are great..The machine warming time is really impressive..maybe the fastest dual boiler machine at the market..And this is one of the most important thing for us as home users..The automated milk frothing and the amazing milk results also one of the other most important reasons..
    But after some digging we come up with some serious problems..first and maybe one of the most important question is the grinder..What grinder is placed inside?İs it breville smart grinder pro or some other low quality grinder? The question "oracle touch is a great espresso machine with a useless grinder?"
    Second question is the consistency as you mentioned before.This is an expansive machine and have to be consistent without any excuses.Getting an espresso shot from a 2500 dollar machine should not like rolling a dice..
    So we are at the starting line again..Looking for a dual boiler machine.A good and consistant espresso machine which warms fast and creates beautiful milk foams..
    Please help guys..Budget is about 2000-2500 dollar.. Any suggestions?

I’m trying to follow your videos and attempting to pull a good shot of espresso using medium roast beans (not fresh). Using a grind setting of 13, I managed to put a half decent shot and the next day I used the exact same settings and I got a very over extracted shot. Do you know why this could be?

    Can u tell more about the grinder burre? (The grinder under the coffee-been holder). What does it do when you change the settings in there? What is the optimal settings? Do you change this Daily, or do you just change the grinder on the side if you need to ajust on a Daily base?
    My focus is to make great expresso and great amricano 😊

    • @CoffeeWiser
      @CoffeeWiser  2 роки тому

      The adjustment in the burr is to make really large adjustments. I have never adjusted mine because all my brewing is done between 19 and 23, so I have a lot of room to go up and down with the knob on the side of the machine. However, I have answered some people before who were grinding at 5 and still couldn’t slow down their flow. This is when you change the burr settings by one or two so that you can get back to grinding around 20 and adjust from the side know. I hope this helps and I hope you are making wonderful expressos and americanos!!

    Hey there, great videos, thank you.
    I use a double filter with 20g coffee and I use the "Single" option when brewing.
    What exactly is the difference between "Single" and "Double" brewing options?
    Is it just the brewing time that changes here? Or does the amount of pressure also change?

    • @CoffeeWiser
      @CoffeeWiser  2 роки тому

      The only difference between the single and double brewing option is the time. By default, one is 25 seconds and the other 30 seconds if I recall. To avoid having to make a selection, I created a custom drink and I have mine set to 35 seconds, and then I weigh my shots. You can also adjust the settings for "single" to however many seconds you want, this way you can continue to select single. With the Double basket, if you are using a medium roast bean, you should be brewing for about 28s to 30s.

    • @CoffeeWiser
      @CoffeeWiser  4 роки тому

      It's possible that the burrs wore out, but you may need to just adjust your conical burr settings. Take a look at this video and set your grinder to a finer burr setting: ua-cam.com/video/1lGFJoI77T4/v-deo.html. Also, if your machine is less than 2 years old, it may still be under warranty, in which case Breville would take care of it. I hope this helps!

I have noticed that my shots using the same coffee and grind number (7) and on a (6) on the grind cone) so my shots are not consistent. Sometimes I only get 4 g of liquid when using 21 grams of grind coffee, sometimes I get 60 grams of liquid coffee. Any idea or tips. I’m new with this machine only using it for a month. • @CoffeeWiser
      @CoffeeWiser  2 роки тому +1

      4g to 60g is a really wide range. Are you getting this with the same coffee beans? if you are switching beans from dark to light, you could get this variation because light beans brew MUCH differently than dark. I have some consistency issue, but usually it is just by 5g on the espresso yield when I use the same coffee.

  • @Bronze_Winged_Pionus
    @Bronze_Winged_Pionus 2 роки тому

    Appreciate your vids. I’m getting way too much yield and don’t know what’s wrong. Getting 19-20g in filter with a 20 grind setting, 6 on burr grinder. Flow begins around 10 secs. Finish at 30. Its yielding 82g. It should be 38-40g yield right? How can I adjust?

    • @CoffeeWiser
      @CoffeeWiser  2 роки тому

      Yes, you are right, that is way too much. Are you using fresh coffee? I have experience excess flow on stale beans. My first thought is to buy new coffee, medium roast, with a roast date not older than 7 days from the day you purchase.
      If that doesn't work, it may be worth adjusting the burr setting by two (so from 6 to 4) and then trying to brew again. I like to keep my normal grind settings around 20-22 so that I still have range to go up and down, so the burr settings are a nice option for big adjustments. If 4 on the burrs is not enough, maybe try 2 or 3. If that doesn't work, your burrs may be dull, depending on the age of the machine, or the machine could have a more complicated issue.

    • @CoffeeWiser
      @CoffeeWiser  3 роки тому +1

      The first is also a little different for me. Flushing the grouphead doesn't make a difference, so I don't think it is water temperature. I wonder if it is because the beans sitting on the burrs while the machine warms up will be a different temperature (much warmer) than the beans in the hopper. When pulling consecutive shots, I don't think the beans that follow the first shot have time to warm up as much as the beans that sat on the burrs for eight minutes while the machine warmed up. What do you think?

      3. I usually drink medium roast, and I have my grind settings at between 19 and 22, depending on the day. My burr setting is on 6 (you can see what is the burr settings in this video at the 6:17 mark: ua-cam.com/video/UE1kL1j_khU/v-deo.html). Such a perfect video!!! Sorry for the newbie question but if I want to get 1 espresso of 30ml with a single cup under the 2 sprouts. What settings would you recommend? It seems that my 30ml cup gets filled after only 15sec extraction time...

    • @CoffeeWiser
      @CoffeeWiser  4 роки тому +1

      Thank for your comment. For your 30ml espresso, are you using the the single basket or the double basket? And on the machine, I assume that you press “single” if you are using the single basket? Does 30ml include the crema? Using ml is tricky because with really fresh coffee, you will have a lot more body and crema. 30ml is probably close to 20g, since my 40g shots are normally around 60ml. 15s is probably a little fast for 30ml; if I recall, The default Breville setting for the “single” option is 25s, with a recommended 20 to 25s. I am happy to provide more feedback if you can tell me a little more info. Have great day!

      @@CoffeeWiser so I tried the single basket but found it difficult to fit enough coffee in it so now I'm sticking to the double.
      I use standard barista espresso cups which are quite small they can't hold more than 40ml max I'd say.
      I use the single function.
      At the moment I've the lavazza gold selection beans which are "apparently" medium roasted.
      I made probably 15 different attempts this morning. It's ok but still not perfect. Current settings are grind at 3 (fine) for 15sec which gives me 16gr of coffee. The coffee starts pouring after 7sec and it takes 15sec to fill 40ml

    • @CoffeeWiser
      @CoffeeWiser  4 роки тому +1

      @@FroggyShave The double basket is definitely the way to go; it is more consistent, and produces better and stronger shots.
      Have you tried to grind finer? maybe a 2, to slow down the extraction just a little more. And also, if you have two espresso cups, you can put one under each spout to collect more liquid, although I think with 40ml you are pretty close. In general, for a medium roast, 1 to 2 ratio works pretty well (with personal taste being the ultimate guide). So with 16g of ground coffee, try to aim for 32g of espresso, which I think would be about 47ml, without counting the crema. The crema will fluctuate based on the freshness of your coffee. I also experience inconsistencies with my shots, just like you with the same beans, same settings, and even same day! Here are my theories:
      - Grinder is inconsistent. I’ve read that some conical burrs will shift depending on heat. So your first grind could behave differently than your third grind in the same session, and differently later that day depending on ambiant temperature. Specifically, I have noticed that my grind setting will shift “automatically” overnight or later that day. In other words, I will leave the machine at 20, and when I turn it on again, it is at 19 or 21. I have concluded that the machine reflects the actually spacing of the burrs depending on the effect of heat or cold. Have you seen that happen? I’ve also heard that conical burr grinders can produce different size grinds because it starts loaded so the fists few beans are grinded at a different velocity than other beans that enter the hopper when the burrs are already spinning. I don’t buy that as a factor though because most grinders start full and it doesn’t seem to be a problem.
      - Storing beans in the hopper make them go stale faster. Also, I have noticed that after the machine is on for some time, if I remove the hopper, the beans that are sitting on the burrs are very warm, whereas the rest of the beans in the hopper are not, so I wonder if they behave different when grinded if they are warm vs cool. This could be why my first shot is always a little different than the rest. I use the auto start set for 20 minutes before I plan to use the machine, so maybe the beans sitting on the burrs get too hot.
      - if you are using super fresh beans, they degas quite a bit the first few days, and could feasibly alter the grind setting day to day, or even within hours?
      - Tamp fan inconsistencies / dosing. I’ve been pretty surprised with the consistency of the tamping BUT I have been less impressed with the consistency of the dose. I would say that your shot fluctuations are more than likely from a dose fluctuation. I’ve seen my machine produce 3 dose/tamp right at 20 (19.8, 20.0, 20.1), and then one at 21.1?? I know this because I weight almost every dose with the large scale shown in the video. An extra gram will really change a shot because it adds much more resistance for the water to get through, especially in a basket of 18g to 22g. Same situation if the tamp fan underdoses; you will have a fast shot. This is tricky because I think most users assume a consistent dose, but it’s not always the case. Are you measuring your doses regularly? It would be a good experiment to see if a stray dose is causing your inconsistent shots.
      - Temperature fluctuations in the group head? I always flush the group head before brewing, but I haven’t had a chance to consistently measure the temperature coming out of the group head. I’ve done it only once, and it didn’t seem out of tolerance.
      I recently bought a separate flat burr grinder to compare with the Oracle grinder and tamp fan. I will post videos on that over the next few weeks as I experiment. My goal is to try to isolate the issue to a specific variable. I am not sure if it’s possible but I will try. Have a great day!

      Hi guys, isnt this all very disappointing for a 2100 (euro's in my case) machine? I would really expect more consistancy with such an expensive machine, or am i wrong?

      Hi,
      Thank you for the very detailed reply my friend.
      Indeed I do get different grind settings on the dial some times when I switch on the machine in the morning.
      I have also started weighing my ground coffee as you suggested and I found it can vary sometimes between 20g-22g! I must say though most of the times it was 21g.
      I also found (I might be wrong) that I do get a different quantity of liquid if I leave the machine switched on for too long to warm up?
      Anyway, when I decided to give away my fully automatic bean to cup machine to buy this one, I thought I was going to have every day the same beautiful cup of espresso that I have in the weekends at the small artisan cafe in town.... Obviously not!!! Consistency is a problem with this machine, but on the other hand, maybe that's the beauty of it in a way, as to me it would be kind of boring if it was as consistent as a Nesspresso pod machine... :)))

Do you have any suggestions how to adjust for this? Thanks very much

    • @CoffeeWiser
      @CoffeeWiser  2 роки тому +1

      Are you using fresh coffee? That is the first requirement. I start to notice significant fluctuations when the coffee reaches 12 days after roasting. The older the coffee, the finer I have to grind to slow down the flow.
      Otherwise, it seems like you could try to grind finer. Each bean is different, so 17 may not be fine enough for the coffee you are using. If you are getting 1:3 ratio or more in just 25s, your flow is way too fast. You should get 1:2 ratio in 30s for medium roast, using the double basket. I hope this helps!

      @@CoffeeWiser Thanks very much for your reply, I bought the bean fresh, tho it's from a local coffee store, it's their fresh stock but may not be that freshly roasted indeed. I tried grind finer to 12-14, is this too fine? It did slow the flow and I could get a 1:2 ratio in about ~28s. I'll try a freshly roasted bag of beans when I finish this current one then. Thanks again!

      @@alvaroguez Hi, yes, changing the grind would help, and it largely depends on the beans. Don't be afraid to adjust the grind, there are so many numbers for a reason, feel free to adjust it to a smaller number. The beans also matter, even for the same beans, just-opened ones and one-week-old ones, the flow changes. I started using store-available ones, then the grind number doesn't match up with all the coffee bloggers, but after I changed it to locally roasted ones (like something roasted within a week), the grind number starts to make more sense. Also, the machine is not always stable, usually, my second cup is the best cup, and the first one is usually much thinner. Hopefully, this helps, and after using it every day for a while, it doesn't bother me much anymore, as long as the coffee comes out lol.

    Can you talk about tamping force and time in the settings?whats the influence on your flow?

    • @CoffeeWiser
      @CoffeeWiser  4 роки тому

      Daniel Ferland, as far as I know, the tamping force is not adjustable on the Oracle Touch. But I have to say that the machine tamps the puck well, almost every time. I think the tamp fan is not always consistent with dose, which will definitely affect your flow, but the tamping is very consistent on this machine, so the tamping should not impact flow. If you were tamping , manually then the common wisdom is to use 30 lbs of pressure (or a calibrated tamper that automatically releases at 30lbs of pressure) or just using a distributor tool (many people don’t even tamp anymore).

I've seen some who measure shot times from first drop and that seems a long time with pre-infusion on top of it.

    • @CoffeeWiser
      @CoffeeWiser  4 роки тому +1

      Great question. I use the timer on the touch screen, so it includes pre-infusion. 28s is the total time from pressing the button to start brewing and pressing the button to stop brewing (or until you hit your pre-programmed time. Pre-infusion works well, and 8-12 seconds is about right before you see the first drop. Lastly, of note, if you use manual mode (holding the brew button until it says manual), there is no pre-infusion at all.
      You are right, there are lots of ways to time the shot, but ultimately it comes down to taste. 28s total has worked well for me for medium roast.

      There is no single perfect grind settings. You will have to adjust the settings depending on the type of coffee (light, medium, dark) you are using, and how fresh it is. Ultimately, the most important is to have a nice slow flow. I recommend watching the Good / Bad flow video that I made. Don’t worry about weighing things for now; just adjust your grind settings until you have beautiful flow like in the video and cut it off at 28 seconds (for medium roast).

    It looks like time for me to ditch the Barista Touch and get an Oracle or Oracle Touch. I am convinced that the heating element on the lower end models just aren't as effective and reliable as the real boilers. I am testing a Phillips Lattego fully automated vs the Barista Touch, and the espresso using the same beans are coming out with much less sourness. The water temp of the coffee in the cup from the Phillips is 160-170F, compared to 140-145F in the Barista Touch.

    • @CoffeeWiser
      @CoffeeWiser  4 роки тому +1

      I am very sorry you are having issues with the Barista Touch, but it’s great that you are able to compare it with another machine and confirm that their is definitely an issue with the water temperature. 160-170F for the Phillips still seems low for brewing, even if we add 10F of potential heat loss between the group head and the cup. I wonder if that will limit the potential of the machine as well? I haven’t checked the temperature on the Oracle Touch since last time when I got close to 190F in the cup. I will check again today.
      I just responded to another comment on the flow video I just posted that describes some of the inconsistencies I have with the machine. The Oracle Touch machine is great but has its quirks!

    • @CoffeeWiser
      @CoffeeWiser  4 роки тому +2

      armaniusmaximus, the only way to change the dose on the Oracle Touch (and I think the Oracle too) is to adjust the height of the tamp fan with a wrench. I have a video on that. I think it’s called adjusting the tamp fan to change your dose. It is not hard to do, but not convenient if you want to make a small adjustment to the dose. After you adjust the height, you have to weigh the dose, and adjust the tamp fan again, then weigh again until you reach the dose you want. It is one of the biggest drawbacks of the machine.

    • @armaniusmaximus
      @armaniusmaximus 4 роки тому

      @@CoffeeWiser I'm perplexed that Breville allows for dosage change in its cheaper machines but not in the two most expensive models. Exactly. This was the first thing I noticed. If water is sprinting through coffee it is washing out everything in the fast pace. So you are OVER-extracting.
