How To Make Kuma Caponata - Recipe

- This tasty side dish gets a nice kick in flavour from the vinegar and capers, with each mouthful bringing a new combination of flavours.
INGREDIENTS
3 tbsp olive oil
1 onion, chopped
3 slim eggplants (1 large oval variety) , chopped
12-15 mushrooms, sliced thick
9-10 cloves garlic, halved
1/2 tsp salt
1/2 tsp pepper
1 tbsp vinegar
2 bell peppers, chopped
12-15 mini tomatoes, halved
1/2 cup pitted green olives
2 tbsp capers
1 tsp dried basil
DIRECTIONS
1. In a large pot, heat oil over medium/high heat. Add onion, eggplant, mushrooms, garlic, salt, and pepper. Cook, stirring occasionally, for 8-10 minutes.
2. Add vinegar and deglaze pot.
3. Add remaining ingredients. Cook on medium, covered and stirring occasionally, for 8-10 minutes.

We love having the occasional waffle or pancake night. We cook them at the table and fix our own. Lots of fun.
Oh, and waffles are great. Smothered in fermented butter and topped with Canadian Maple syrup! Love 'em!
Luckily, maple syrup is easy to get here.
Kevin... "No Green Bell Peppers"... What? At my supermarket, Green is the norm....you have to hunt for the Yellow and Red... First time to see this dish. Like veggies, so will have to try it. Thanks.
Are those bell peppers or piman? The little green piman are abundant, but they don't have the same wall thickness as bell peppers.
Of course, you could use piman in this recipe instead of bell peppers.
@@KumasKitchen We can get the Piman, that are just early picked Bells, and the regular Green Bells. Yellow, Orange and Red are just Green Bells that have been left on the vine for a longer and longer period of time before picking, and so are more expensive, right?
By clover markt i have seen different olives😊 went with my aunt.
Unfortunately, all we get here are the regular green and black olives.
@@KumasKitchen some get in cans, or olive bar, gyomu super i have seen can ones for red soaked in olive oil
Are those capers that were packed in salt or packed in vinegar? Did you rinse them before use?
BVinegar and I don't rinse them. I want that flavour from the juice.

Actually, it's originally an Italian dish; however, I've Kumanized it.
A good way to get in your vegetables. I like it when the garlic softens like that, great texture and taste. If it works with waffles, then it would work with pancakes too! 🧇🥞😋👍
I could eat tons of baked garlic. Once, I ate three heads - nobody came near me for days.
