being from louisiana, you'd think i would have had tried to make this by now (i'm 27!) i have always been intimidated by the long process of cooking collard greens, but after watching your video-4 times over the course of a month-i went for it. i even washed each leaf individually! and wow, they turned out amazing. thank you for teaching this southern gal how to cook AMAZING collard greens!
Aunt Inez (great aunt old school) used ham hocks, bacon fat, garlic, red peppers (not too many) and skipped that "drying process". She like to use "mixed greens" which was the bomb: kale, mustard greens, collard greens, turnip greens, all fresh from her garden that I grew for her.
My mom just made collard greens the other day for Easter. Only she uses smoked turkey neckbone, hamhock AND bacon. And up until a couple of years ago, I did not like collard greens at all. Now, I can't get enough of them! Your little boy is so cute, and it looks like he loves the collard greens. Most toddlers won't touch veggies.
Maam, I don't know your name but I must say, you have taught me well to make greens! I now make them on a regular basis and have become the local champion of greens! thank you Guru!

I was told today by a southern black woman (I'm white lol) that smoked turkey legs are better/healthier than smoked ham hocks, and I tried them with your recipe, FABULOUS!!! I still cut the stems with the knife though...LoL! Great video, reminds me alot of how my 2 1/2 year old is when I'm tryin to cook!
I used your delicious recipe twice now and will continue to do so! Thanks a Million! Greens are my husband's favorite so I wanted to learn how his grandma makes them (from scratch). They definitely taste better than the seasoned greens in the can and healthier for you. Plus, I enjoy removing the stems. :) BTW, adorable son! Love the name Isaac! Keep the videos coming!
This was a HUGE help. My sister's boyfriend's mom brought some and I loved them so I decided to make some and I have to make them for a party today and I have to get started in like an hour haha I'm gonna go run to the store for the onions and chicken broth
You can just leave them out. They will still be delish. I sometimes just make them with just the chicken broth and red pepper and they still come out great.
Isaac is a doll! LOL A budding food critic. And you're right it's very important to get all the grit off fresh collards. Collards are not typically a get-off-work-and-put-them-on type food because you can't rush them. They do take a couple hours, but they are well worth it for the weekend!

Hello. My Friend Dave gave me some Collards. A great big bundle of 'em. I've never prepared them myself. We're talking about an arm-full here. I've been eating Collard Greens for, ...my whole life! Never cooked them, myself, however. I watched your UA-cam video once. Followed your recipe to the letter. Went to two stores. The Smoked Turkey legs from one and the Onion and Garlic from another. I shared them with family and friends. We are all amazed. It was the turkey. Thank-you so much =^.^=
heres a trick, after wetting the leaves thoroughly, i put it flat against a cutting board and scrub a few times with a corn brush. collard greens is too tough uncooked to be torn up by a corn brush, but will loosen ALL the grit and grime. one more rinse and its good.

You deserve own cooking show on Food Network. Cut lil baby with gorgeous hair. Love your jeans and hairstyle. You make greens like my grandmother except I find the way u remove the leaf from the stem easier and you use smoked turkey legs while mg family and I use ham hocks or neckbones.

I use to cook greens in water. Idk why I didn't think to use chicken broth and steam them. Smh. Looks delicious.

My grandmother saves the leftover juice from the greens so that the next time she makes some, all she has to do is add the greens!

Learned a better way to seperate the leafy from the stemy. :-)
I' always add vinegar right before putting the greens in the pot. Do you recommend waiting until the last quarter of cooking? And if so, why?
