The pot liquor as our Southern ancestors called it 😊, is good for colds and sore throats y'all. So remember that this Fall and Winter. Wherever I get sick like that, I fix me some greens and drink that pot liquor by the glass full, and I'm good to go in a day or two! 😎 It's like a toxin remover.

Beautiful job! I usually cut mine in ribbons and then wash them. When they are smaller, you really can get in between there and get out the dirt and sand. It does make it harder to retrieve them from the water but so much dirt is in the bottom of the sink.
This is exactly how I was taught to make mine! Did my grandma steal her recipe from yours? 🤔😂 Only thing I altered is I cook the smoked turkey in the broth until it’s falling apart before adding the greens. Probably not necessary but 🤷🏾♀️

I usually cook my meat beforehand and taste for salt, then make adjustments. You can remove some of the broth (save for another dish), add water, then the bullion and greens. Although I have Better than Bullion, I'm not in the habit of using it when I cook with smoked turkey because of the salt content.

Does anyone else stick your collards in the freezer first? I’m from the Deep South and my mamaw always told me if the collards haven’t been hit with frost yet then they are better if you freeze them a little bit. I always do it because her food was the best I ever ate.
My grandma taught me to put salt in the water to help remove the grit and dirt. Then she layered and cut her collards. Seasoned with smoked neck bones.
Thanks for the recipe, Monique. I know about the "grit" problem: I had cooked spinach in a local diner once that was gritty and it was disgusting. This looks like something you'd bring to a church social.

Diva I just love ,love me some Collard Greens , I been married to a country girl for close to 30yrs now and we grow our own .She pretty much cooks them the way you do . But we are going to try the broth use use , and she says she'll try the Turkey drumstick instead of the ham hock . Just curious what kind of Collards are you cooking ? Morris Heading or Georgia Southern ? I grow both . I'm partial to the Morris Heading because they grow larger .

Great video! Another reason to use vinegar to clean any greens is that it tenderizes thick greens and helps to remove bitterness.

I also allow more smoked meat to cook in the broth prior to adding my greens. I uses smoked turkey necks and turkey tails.
