Your points on how building helps get a better sleep and reduce stress level work really well for me. I use the building time in my evening to relax and my quality of sleep has improved since I started this model kit building routine. For sure blue light from screen does not help falling asleep. There's still time for it to turn around so don't lose hope. As for the Gaia notes recommendation, I generally do 1:1.5 for regular colors with leveling thinner. For metallics, I do 1:1.5 but regular thinner. Primers are 1:2 regular thinner. This just works for how I paint, but 1:2 across the board is perfectly fine.
