I just made some recently just using oranges, no anise or vanilla extract and they tasted great. The use of the lime, cinnamon, vanilla extract, and anise extract for the syrup is just what my family was accustomed to when getting capuchinos from a Cuban Bakery. You can really flavor them however you'd like as long as the consistency of the syrup is the same.
Yes, preheat the oven to 300 degrees F. Make sure the oven is preheated by the time you are ready to place the capuchinos in the oven because you don't want the capuchino cake mix/batter to sit around too long after it's mixed.
