Spanish person here - who also happened to have lived in Valencia, where the paella purists live. The technical term is "Arroz con cosas" or "Rice with Stuff". That socarrat pronunciation was on point though -Bravo! You get +1000 points for not adding chorizo - the paprika (and fat in non-vegan) chorizo overpowers everything else and substantially changes the flavor of the dish, that's why we get upset when Britons add it. Do try to get some saffron though, it is really really worth it. You just have to use a tiny bit. PS: If someone is thinking on which meat substitute to use, I use those dried soya chunks they sell at Holland and Barret (v cheap) and they work fantastic!
I always have fermented non dairy hand-rolled cooked by moonlight mung beans in my kitchen cupboard, wtf are other vegans even doing without those ?????

Buenísimo Jules! Some info: paella comes from a specific region of Spain, Valencia, which i happen to have been born and rised in. It is true that there is a strong “paella culture” as it’s the typical meal for sundays lunch in family. Your version is the best that could have been done to mimic the meat that is tradicionally added to the dish, that’s for sure. But as someone who has had to find a way to not give up on this tradition, while not eating animal products, i assure you that meat is not an essential ingredient. Plant-based or vegetal paella is also very typical and easy to find, and completly vegan! The taste is completly genuine and, well, simply tastes amazing. You shoud research some info about it, i guarantee it’ll be as nice as this one you made up. However, i guess some ingredients are difficult to find depending on where you are. Once again, another great video! Muchas gracias! Fun fact, “socarraet” means burned in valencian, which is the languaje many people speak here (quite similar to catalonian).

I've tried this recipe 3 times now. I love the socarrat, I want that flavour in everything that goes on the stove. I didn't play out that well when I tried to get the socarrat in the porridge, just sayn'. I've added brocilli instead of peas and that was great and I also have done it with carrots at the same time as onions which worked well too. I even made one batch with saffron that I had lying around - incredible! Thankyou for your wonderful food instruction and the hilarious format.
Since the blog is down: Ingredients: Paella: 2 purple medium onions 4 garlic cloves 1 capsicum 100g frozen peas ~10 cherry tomatoes 600ml vegetable stock 2 tsp smoked paprika 1 tsp turmeric Paella/Risotto Rice Meat substitute (Portobello Mushroom, self-made, store-bought…) Optional toppings: Bread Lemon Parsley Finely chop onions and capsicum. Mince Garlic. Prepare vegetable broth. Fry all vegetables 3-5 Minutes or until onions are soft. Add rice and seasonings, keep frying and mixing for a few and until evenly mixed. Add vegetable stock. Stir until evenly spread. Bring to boil. Leave for 10 minutes. Stir or no stir - depending on your soccarat needs. Reduce heat. Add Meat substitute, frozen peas and cherry tomatoes. Press into the rice. Leave 8-10 minutes, covered with baking tray, foil or lid. Check for water the bottom. Take off the heat, leave covered for 5 minutes. Optional: Serve with bread, lemon slices and parsley.
I'm from Barcelona and I can tell you THAT SOCARRAT WAS ON POINT. Even though you put in there some non traditional ingredients like the cherry tomatoes your recipe looks wonderful! I think people from Valencia would congratulate you as well. (Valencia is the city in Spain where the paella is originally from)

Nice! You got the the socarrat, the no stirring rule, it is rice with vegetables though. I did mine oil free and got cold feet so couldn't get the socarrat.

Mrtva banana go for it. I'm so adjusted to the diet/lifestyle that I'm not a burden on my family at all (and love it). For example, thanksgiving is lentils, carrots, mashed potatoes, and cranberries for me. Doesn't change the menu for the rest of my family. My family even has vegan days because of me now. It's great.

I was all for your recipe until I saw the frozen chick peas and cherry tomatoes on the top but altogether thanks for the video and for your version of this recipe. Vegans here in Mexico we do it a bit more different, kind of similar to the real thing but with vegan meat of course. Gracias!

Try this: PA-EHH-YA! If you do it traditionally, making the broth before and then throwing in the rice it will have a lot more flavour! I usually do my vegan Valencian Paella with this ingredients if you wanna try it: Fried textured soy with chicken salt (is a salt mixed with herbs for chicken with no chicken obviously) in the pan (I sometimes do it in the rice cooker I hope that no valenciano reads this) plus garrofó (Big white beans), bajoqueta (green beans that you can eat with the skin on, but peas are nice too), 3 tbsp of pureed tomato, and as you said you can use turmeric to give color and paprika for taste. A lot of olive oil and salt to taste (the trick from every Valencian granny is to taste the salt in the broth before throwing in the rice). That's it! P.S. The ingredients you used ar ok, but we never ever put onion on the paella because it's too sweet and changes the texture of the rice, but be careful if you go to Spain for using chorizo in a paella!!
Your socarrat looks really tasty and your paella looks good! We don't use tomatoes in the Spanish paella but, to be honest, as a spanish and vegan I call 'paella' to any yellow rice with peppers and green peas, smoked paprika and lemon slices. So your rice is also a paella from my point of view 😝😝😝💚💚💚
Guys I got the SOCARRAT Even though the recipe doesn't print properly so I did important steps out of order and I misread something so the onions and garlic cooked a long time without the bell pepper It's SO GOOD I didn't have time to freeze the tofu before cooking so I used a package of Boca chicken burgers!
If you use a better pot... I have one Le Creuset pot... things don't burn on the bottom. I've read a review that said Cuisinart makes enameled cast iron cookware that is about as good, for half the price, just fewer colors. Get it while you're young so you get lots of use from it! It's such a pleasure to use.
What's a decent anti-matter substitution? Not everyone has access to a few km long particle accelerator. I've heard photons can be alright, but it's a tricky ingredient to work with because you have to add them when they're in a wave form and not a particle, and the tutorial I saw had something to do with not looking directly at it while cooking?

Yeah, it might not be a classic paella but not even Spanish people can agree on which are the ingredients of a "true" paella,so screw it. I went vegetarian less than a year ago and there are things I miss,but your channel has been super helpful. And I'm definitely trying this recipe soon. Paella was my favorite meal before I went vegan. I’d never personally cooked it and my few attempts since being vegan were pretty bad. So I’m very excited to try this it looks very manageable and delicious 😋

Nice! You got the the socarrat, the no stirring rule, it is rice with vegetables though. I did mine oil free and got cold feet so couldn't get the socarrat.

Mrtva banana go for it. I'm so adjusted to the diet/lifestyle that I'm not a burden on my family at all (and love it). For example, thanksgiving is lentils, carrots, mashed potatoes, and cranberries for me. Doesn't change the menu for the rest of my family. My family even has vegan days because of me now. It's great.

I was all for your recipe until I saw the frozen chick peas and cherry tomatoes on the top but altogether thanks for the video and for your version of this recipe. Vegans here in Mexico we do it a bit more different, kind of similar to the real thing but with vegan meat of course. Gracias!

If you do it traditionally, making the broth before and then throwing in the rice it will have a lot more flavour!
I usually do my vegan Valencian Paella with this ingredients if you wanna try it:
Fried textured soy with chicken salt (is a salt mixed with herbs for chicken with no chicken obviously) in the pan (I sometimes do it in the rice cooker I hope that no valenciano reads this) plus garrofó (Big white beans), bajoqueta (green beans that you can eat with the skin on, but peas are nice too), 3 tbsp of pureed tomato, and as you said you can use turmeric to give color and paprika for taste. A lot of olive oil and salt to taste (the trick from every Valencian granny is to taste the salt in the broth before throwing in the rice). That's it!
P.S. The ingredients you used ar ok, but we never ever put onion on the paella because it's too sweet and changes the texture of the rice, but be careful if you go to Spain for using chorizo in a paella!!
Your socarrat looks really tasty and your paella looks good! We don't use tomatoes in the Spanish paella but, to be honest, as a spanish and vegan I call 'paella' to any yellow rice with peppers and green peas, smoked paprika and lemon slices. So your rice is also a paella from my point of view 😝😝😝💚💚💚

Even though the recipe doesn't print properly so I did important steps out of order and I misread something so the onions and garlic cooked a long time without the bell pepper
It's SO GOOD
I didn't have time to freeze the tofu before cooking so I used a package of Boca chicken burgers!

If you use a better pot... I have one Le Creuset pot... things don't burn on the bottom. I've read a review that said Cuisinart makes enameled cast iron cookware that is about as good, for half the price, just fewer colors. Get it while you're young so you get lots of use from it! It's such a pleasure to use.

What's a decent anti-matter substitution? Not everyone has access to a few km long particle accelerator. I've heard photons can be alright, but it's a tricky ingredient to work with because you have to add them when they're in a wave form and not a particle, and the tutorial I saw had something to do with not looking directly at it while cooking?
