I’m going to try this. I’m Mexican so I’m not used to making paella but this is an easy enough recipe for me to try. I tried another one once and it came out horrible, but I’m sure this one will be delicious. 🙂🌞

I love paella, the ingredients are so simple, but the end dish is beautiful. I can never get the socarrat, though! Good tip about not over-stirring it, thanks. I think I stir mine too much. I also stir in a glass of white wine at the beginning, just before adding the tomato and paprika. I don't know how authentic that is, but it adds an extra *something*.
A nice recipe! Unfortunately, I had already cooked another paella from here this week. The basis was the vegetable paella. Since I still had leftovers from the fried chicken, they were added. But, if I make paella again, I'll try this one.

As much as I love scallops, I've developed a mollusk allergy. Any suggestions on what I might substitute for scallops? ... maybe cubes of salmon? That might add nicely to the color
Yes, but that would be more arroz al horno, once you add the liquid, add the pan (oven proof pan) into the oven for 20 to 25 min or until all the liquid has been absorbed :) Much love

You can use the lid rather that the foil cover for the last 4-5 mins at the end, saves a little time and foil too.

There are many tourist made restaurants that do serve bland paellas, but if you go where the locals go, that is where the goodness is!!! Much love :)

Sautee the calamari first and then remove from the pan, then add it back in towards the end along with the mussels :) Much love

Just cover at the end, there is lots of liquid that the rice takes in before it is gone.
