    RECIPE:
    Healthy Biscotti! Vegan, Refined Oil & Sugar-Free
    INGREDIENTS:
    * 1 and ¾ cup almond flour
    * 1/3 cup date sugar (add more if you prefer a sweeter flavor)
    * 2 Tbsp cornstarch or arrowroot powder
    * 1 tsp baking powder
    * ¼ tsp salt
    * ½ cup raw almond slices (optional)
    * 3 Tbsp water
    * 1 tsp vanilla
    **NOTE: You can also add unsweetened coconut, raisins, dried fruit, or whatever you prefer.
    INSTRUCTIONS:
    1) Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
    2) In a bowl whisk almond flour, date sugar, cornstarch (or arrowroot powder) baking powder, and salt. Then, add water and vanilla and stir to combine.
    3) Pour dough onto your baking sheet and shape into a rectangle (about 8” wide by 3.5” tall and ¾ of an inch wide)
    4) Bake for 20 to 23 minutes or until light golden brown.
    5) Remove from oven, turn off oven, and let log cool completely. Then, place in the refrigerator for at least 1 hour.
    6) After 1 hour, transfer log onto a cutting board by lifting from the parchment paper. Place parchment paper back on baking pan. Preheat oven to 250 degrees Fahrenheit.
    7) Cut log on a diagonal using a sharp knife, making about ¾ inch wide slices. Place slices on parchment paper-lined pan with the cut side facing down. Bake biscotti for 20 min.
    8) After 20 minutes flip using a spatula and bake another 20 min.
    9) After 20 minutes on the other side, turn off the oven and let your biscotti stay in the oven for about 90 min to allow it to further dry out. Then, enjoy!

    Your biscotti came out amazing. Followed all your tips and ingredients,except that I added half a teaspoon of almond extract. So wonderfully good. Thank you for this healthy recipe.

    Thank you for this! Nice to find a gf recipe. Would any of the ingredient ratios change if I add a 3/4 teaspoon each of anise and almond flavoring?

      I haven't tried it, but it sounds to me like it would work without having to change other ratios since it's only 3/4 tsp of each added. Best of luck if you try it!

    Do you have a recipe for vegan struffoli?

      I don't have a recipe for struffoli unfortunately, but I guess you could modify the ingredients to make them plant based, and then bake instead of fry the balls, and use date syrup instead of honey, although that might make the balls dark in appearance. For the sprinkles, the ones that use coloring from natural sources from fruits/veggies can be used instead of the artificial red 40 etc coloring. Or omit the sprinkles if you don't want the added processed sugar. Best of luck if you try it!! Struffoli looks like such a festive dessert for the Holiday's.
      I don't make sweet WFPB desserts so much these days, and prefer fruit platters, fresh fruit cake, or fruit skewers, etc. for dessert for parties/gatherings. Even the WFPB desserts are addictive for me, and high in sugar because of the large volume of dates in it, so I'm better off with fruit. Hehe :) There are lots of Holiday fruit designs on Pinterest.     What can I add instead of date sugar. Will stevia work

      I have only tried this with date sugar. I'm sure other sugars will work but haven't tested it.

    These were tasty but way too crumbly. I'm wondering if a little aquafaba might make them bind better. Will try that next time.

      Yes it’s crumbly when you dump the mixture into a pan but you must compress and squeeze the dough when shaping it into a rectangle. Then, it becomes more solid and not crumbly. It keeps its shape and the crumbles form one mass once compressed.
      Also, when flipping each cut piece after baking halfway be very gentle because it is only half cooked. It will firm up more once fully cooked.
      I suppose you could try adding more water to the mixture if you really wanted to, before shaping into a rectangle, but very little only…like a tablespoon.

      It will probably alter the taste a bit and won’t be as crumbly but should work I would think

      I haven’t tried it with oat flour but it may not work for this recipe because the almond flour is high in natural fat and the oat flour has much less natural fat. The almond flour also has a flavor that comes out when it’s baked that would be missing with oat flour. Hope that helps. Thank you so much for watching!!

    That,s really only 6. Those r too small.
    Too much trouble for so few. 40!min.s added on is.totally unnecessary. Waste of elec..
    I made some.last.wk. Choc.from coco powder and cherry extract, half coconut flour, just a little sugar. w.walnuts .
    They were goood .
    No choc chips . Too sugary. Roll in powdered sugar.
