Vegan Veggie Chopped Salad - WFPB Oil-Free
This was my favorite oil-free meal that someone made for a vegan potluck I went to this past Thanksgiving. It is so delicious and packed with nutrients. Who doesn't love a good chopped salad? :) Thank you to the person who made this dish, whoever you are!! :D

    Another great fat free "butter" spread... Put 1/2 cup cornmeal, salt to taste, a little nooch if desired , a dash of turmeric for color, + 2 cups of boiling water into a high speed blender and blend on high for 3 minutes. Once it cools below 110 F, stir in 1/4 cup of plant based yogurt and chill. It thickens as it cools and makes a great spread, or can be thinned with milk as a "melted" addition to veggies.

    Do you have a recipe for vegan struffoli?

    • @WholePlantFoodForLife
      @WholePlantFoodForLife 9 місяців тому

      I don't have a recipe for struffoli unfortunately, but I guess you could modify the ingredients to make them plant based, and then bake instead of fry the balls, and use date syrup instead of honey, although that might make the balls dark in appearance. For the sprinkles, the ones that use coloring from natural sources from fruits/veggies can be used instead of the artificial red 40 etc coloring. Or omit the sprinkles if you don't want the added processed sugar. Best of luck if you try it!! Struffoli looks like such a festive dessert for the Holiday's. I don't make sweet WFPB desserts so much these days, and prefer fruit platters, fresh fruit cake, or fruit skewers, etc. for dessert for parties/gatherings. Even the WFPB desserts are addictive for me, and high in sugar because of the large volume of dates in it, so I'm better off with fruit. Hehe :) There are lots of Holiday fruit designs on Pinterest. Happy Holidays to you and your loved ones! ❤

    • @WholePlantFoodForLife
      @WholePlantFoodForLife Рік тому

      Good question…I haven’t tried it without the dates. I imagine the filling won’t taste so good if you are making it for others without the sweetener, however if you have a sugar sensitivity and you are used to not having much sugar then you might want to try it without the dates in the filling, especially since the pumpkin has a natural sweetness. As far as the crust you can definitely not add the date sugar and it will be fine.
