Chef Farr, thank you for this great video. Snowballs are my fav cookie, so I am always trying to perfect my recipe. I got lots of ideas from your video. One question: in your linked recipe, the amount of pecans is listed as “divided,” but I don’t see two separate times the pecans are added to the dough. Am I missing something? Also, are some of the pecans chopped pea-size and some ground into meal? I think different textures might be delicious. Thanks again! I’m a new subscriber!
Hi! I love snowballs as well! Divided was a leftover note from when my food processor needed two rounds to process the pecans small enough, sorry for the confusion, I've just removed it! You should absolutely play with it, I like my classic snowballs to be a bit more uniform, but I play a lot with texture variation in my Cherry Pistachio Snowballs (cheflindseyfarr.com/cherry-pistachio-snowballs/). Can't wait to hear what you make!
