Pecan balls: I had to laugh when you said to pack them tightly. That's exactly what my mother told me the first time I made them. Well, even at 8 years old I followed direction very well. I packed them so tightly that after baking they were hard as a rock. Almost tooth cracking hard. They looked beautiful but were inedible as they were. I did manage to make a good dessert out of them. Also out of desperation. I put 3-4 in a bowl and put in about a half a cup of half n half. After soaking for a while they crumbled and fell apart. After stirring everything together it became a dessert soup. It actually had a good body and was very delicious. Good, yes. But we never had them again. I learned my lesson well. Never again did I pack them THAT tightly and they are still a staple in my family 2 generations later. LOL

Very nice, but you must try "melting moments." They are made with 3/4 cup corn starch, they are a gourmet sugar cookie that literally melts in your mouth. They are a must do every year.

Keto - peanut butter, butter, Swerve sugar, van, eggs, 1/2 almond flour - half regular flour. Much better for diabetics, asthma, bp. I have done this with all the cookies and breads I have made. Big dif in my health.

My m other always insisted that Christmas cookies should be small bites so guests would feel free to taste several different kinds. When we made our jelly filled bites (like the peanut butter blossoms) we would use a thimble to make the depressions (remember the cookies were just a mouthful), and then fill the jelly using a baby spoon. I always wanted to make them bigger, like your cookies, so you really had a COOKIE! Just like you, Catherine, I love the pecan balls best. Rolling the warm buttery nutball in the powdered sugar made it taste like it was coated in a frosting layer. Yum! Hope your holidays are peace-filled and blessed.

One thing I learned many years ago in baking is spend the extra for pure vanilla and real butter! Makes a big difference in flavor!
