Moist and Delicious Hummingbird Cake | Banana, Pineapple, Coconut, Hint of Spice | Easy Recipe

Moist, tender and very delicious Hummingbird Cake with Cream Cheese Icing/Frosting. Quick and easy recipe. It’s a great combination of flavours: banana, pineapple, coconut and a hint of spice. You’ll definitely like it!
Ingredients:
3 eggs
300g (about 1 1/2 cups) sugar (better to use caster sugar)
125ml (1 cup) neutral oil (I used sunflower oil)
1 tsp vanilla extract
227g can crushed pineapple, drained
2 small ripe bananas, mashed
60g (1 cup) thread coconut
300g (2 cups) self-raising flour
2 tsp mixed spice
1 tsp baking powder
½ tsp baking soda
Cake tin size: 23/24cm
Cream Cheese Ising/Frosting (optional)
200g cream cheese, cold
65ml cream (33-35%), cold
30g icing sugar
For decoration:
about 100g walnuts, chopped
thread coconut
lemon zest
Bake in the oven 180C/350F fanbake for 50-55 min. Place the cake pan on the lower rack. Cool before spreading the icing. Enjoy!
