You can make banana essence by placing the skins of bananas in a jar with sugar for a couple of weeks. They eventually break down and release their strong banana flavour into the sugar as a syrup. You could use this in the icing.
And ferment them into alcohol.....😂

Instead of frosting, I thinly slice a little firmer 🍌 banana 🍌 and brown sugar with a very thin slice of butter in a sauce pan to glaze the bananas and then I place the caramelized thin sliced 🍌 banana 🍌 on the top of the #bananacake for decoration with a little bit of drizzle from the caramelizes sauce on top.

To adjust the mixer bowl to the paddle attachment, put a dime in the bowl and 'using the screw' bring the paddle down until it just barely starts to move the dime around the bottom of the bowl. Done.

The youngest will happily mash the 'nanners (her word, not mine), while the oldest will be intrigued with the responsibility of measuring with the scale, & the middle one (the bossy one) will hog mixer duty as long as possible. This is going to be fun!!!

I made a banana cake the other day....chucked some chocolate chucks in there. I was given the bananas in a food parcel, but can't stand bananas....but hate food waste....so tried the recipe with a few tweeks....OMG it was amazing ❤
Banana cake is literally the only way I will eat bananas. My grandmother had a similar recipe to this minus the frosting, so I wonder if this would be better.

I often add about 2 or 3 Tablespoons of a good orange marmalade to my banana cakes (cutting back somewhat on some other liquid elsewhere in the recipe.) The orange flavour gives it a good tang.

I make the Australian version of this recipe, just throw everything in one bowl and fold for 20 seconds to combine then bake in a loaf tin for 45 minutes at 180°C. Delicious, quick and easy.

FYI, canned pears work wonderfully in banana bread in a pinch too! I use only Himalayan pink salt.

This sounds very similar to my grandmother's recipe. She was born in 1917 so it makes sense if it originated in the Depression. My grandmother's recipe didn't call for frosting and it was baked in a Bundt pan. My grandmother was frustratingly imprecise in her recipes (pinch of this, handful of that method common in experienced older cooks) so I look forward to having a recipe that is written precisely. This is literally the only way I eat bananas too. Thankfully my husband likes bananas so I don't have to buy them just to wait for them to turn brown to make this cake.

I can absolutely see a little bit of orange zest added into this cake. Just barely enough to taste it in the far background. A little bit of cardemom and a sprinkle of ginger & cloves 😋
And maybe some nutmeg and cinnamon to make it taste like a fall & winter cake 🙃
