    Love the recipe! You could also add coconut milk instead of veg stock to make it so rich and creamy, it tastes so good!

      If you add that instead of the stock you'll mis the base of the soup, I mean the herbs and saltiness. I would add both, so good suggestion. :)

    When it comes to spinach, I always add way “more than you’d think you need”. Can’t wait to try this recipe!
    Update: Tried it. Loved it. Made it repeatedly. My teenage son requests it! He’s health-conscious, but like most teenagers, doesn’t exactly beg for veggies. This soup is a day’s-worth in a bowl. It’s so delicious, he’s more than happy to eat it. I think I’ll start doubling the recipe!

    I made this today, subbed out asparagus for the broccoli, topped it with lemon zest and pepitas. Delish!

    Made this today. I didn't have as much frozen peas, I added some cabbage, and I don't like mint so I used basil and parsley with just a dash of paprika, garlic powder, and thyme. And it's super with the creme fraiche!

      love creme fraiche used a dollop of greek yoghurt herbes provencal and roasted garlic because nothing gets wasted these days no fresh mint ... still managed to impress myself and partner!!! Also made Irish soda bread which was a treat. Best wishes 2 yrs later!!!!

    I just made the recipe, with some changes because I was out of a lot of ingredients. However, it still turned out delicious. Those peas are one of the key ingredients - they add some sweetness.
    I used a lb of Trader Joe's organic frozen peas
    Organic Trader Joe's broccoli florets. The ones that come in the $6 clear bag.
    Two large handfuls of the Organic Spring Mix from Costco $5.49.
    1/2 box of Trader Joe's organic white button mushrooms. I added this for the taste and the nutrition benefits.
    Celtic Sea Salt
    Homemade Bone Broth - about 3 cups.
    Sour Cream at the end.
    Nothing else. I was out of black, peppercorns, no cheese, no mint, etc.
    Still came out delicious.

    Lovely recipe. I'd personally use the stem of the broccoli, too, by finely chopping them and roasting them in a bit of olive-oil, adds a nice nutty flavour.

    I guess I have tomorrow's dinner. This is perfect also after training due to the protein coming from the peas (I might add edamame on that note to increase the protein even more). And probably I will go for Ricotta instead of Feta :) Thanks for the amazing recipe!

    So more in consistency a 'passata' as opposed to a 'zuppa' which is more liquid, or a 'veluttata' which is creamier..

      I'm not sure I've ever seen a cooking channel wash their produce on screen. Even shows on TV don't. Most shows skip a lot of prep work because there's no need to film it. If you're referring to the spinach most prepackaged spinach has already been rinsed and is ready to serve.
