Vegan Drumsticks | Washed Flour Method | Seitan | (NTW) BBQ & Fried Chickn

  • Here’s another seitan recipe that I’ve created. This one here is a family favorite! I hope that you enjoy making it as much as I’ve enjoyed creating it! Please be sure to tag me @yessies_plantbaseddiet_ I’d love to see your creations...
    Seitan Seasoning:
    1 1/2 Tbsp consommé ( I used Osem brand)
    2 Tbsp sesame seed oil
    1/2 Tbsp agave syrup
    4 Tbsp liquid aminos
    5 Tbsp nutritional yeast
    2 Tsp onion powder
    2 Tsp garlic powder
    Breading ingredients for fried chickn
    Wet mix
    1/2 cup of flour
    2 Tbsp corn starch
    1 cup water
    Mix well to create a batter.
    Dry Mix
    1 cup flour
    1/2 tsp celery salt
    1/2 tsp white pepper
    1 tsp ground ginger powder
    2 tbsp paprika
    1/2 tsp onion powder
    1/2 tsp garlic powder
    1/2 tsp black pepper
    1/2 tsp oregano
    1/2 tsp thyme
    1/2 tsp poultry seasoning
    1/2 tbsp salt
    1 tbsp umami mushroom powder
    Troubleshooting
    Possible Modifications & Tips
    1.) I prefer washing the dough with warm water, but some people alternate cold and warm water. Do what works for you.
    2.) Not Thoroughly Washed (NTW) flour gives a softer consistency. Washing the flour until the water runs clear gives you a chewier consistency.
    3.) Squeeze as much water out of the dough as possible after washing it, before adding the seasonings. The dough should bind together at this point and should be very stretchy, not too wet.
    4.) Rest the seasoned dough for 2 hours after seasoning to allow the dough to relax. This allows the dough strands to develop. The dough becomes more elastic to help with the knotting stage.
    5.) Cutting the dough in smaller pieces allows it to cook in a shorter time. I’ve cut the dough in 8-16 pieces and I steam it for NO LONGER THAN 1 HOUR.
    6.) Steaming the dough longer than 1 hour will result in a sponge like consistency. Not ideal! If you’re steaming it in a pot, make sure that the water is always at a simmer not boiling. The dough will expand too much if it’s steamed with boiling water.
    7.) Though you can use the seitan right away, allowing the cooked dough to rest in the fridge overnight gives a more dense consistency.
    8.) I encourage you to play around with the seasonings and do what works for you. Also, have fun with it and remember practice makes progress!

    Thanks for this video. I've tried WTF seitan every few years for the last 15 years and failed almost every time. This was a win for me - I will make this all the time. My husband doesn't like my seitan but he ate this and went back for seconds.

    Oh boy. Every once in a while there is a recipe, often a video, that tempts me so much I simply _have_ to try it. This is in part how I became a vegan, I saw something and instantly thought "This looks amazing, like someone created the impossible, challenge accepted." Your recipe and video gave me that feeling again, thank you very much, I'll certainly do this. Nice video editing, voice over, cutting and overall presentation as well, you deserve more subscribers.       If you have not already seen him, you should check out sauce stache on UA-cam. He’s does many challenges where he tried to perfect a vegan version of something.
      I tell you this because early on I also really liked watching videos of vegan food, for the same reason you said. Then I became vegan

      Do you also refuse eating a piece of a wedding cake because the baker could have spent the time making it for other things?

    I literally cannot believe what I just watched. Did you actually just make seitan from scratch?😳😱I had no clue that was possible but I suppose anything is possible if you put your mind to it. I literally cannot wait to try this recipe. Becoming vegan during quarantine was the best thing I ever did.       It will be worth it! Just make sure that your dough isn’t too wet after washing. Squeeze as much water out of it as possible. Most people have a difficult time with this step.

      Thank you! Yes, the most important part is getting the right texture after washing the flour. Just make sure you squeeze out as much water out of it before the seasonings stage 😉

    Thank you for sharing your process. Being a more visual learner helps me to feel more prepared to try a WTF seitan. As you would surely know and have seen the drama on Facebook groups, for whatever reasons recipes are tremendously controversial, but this gives me a solid reference point of what to watch out for and how to start while I develop my own process.

      You’re welcome! I’m happy to help and share my methods in hopes that it will make it easier for someone to create their own seitan. It’s definitely a learning experience. Just be patient and don’t give up. I didn’t get it right until my third attempt, as my dough was too wet after washing. I had to learn just how much to wash it and to squeeze as much water out of it before incorporating the seasonings.

      Why do you want to eat the starch? Better give it to the plants. Starch can make you fat. Imagine having half a kilo of flour goes into making two seitan sticks which you can easily eat. Can you consume half a kilo of flour in the form of around 700g bread?😂😂😂

      @@sfr2107 I just throw them away because almost everything contain major proportion of starch, be it grains, cereals, pulses, beans, vegetables, etc. Protein is expensive, so we can derive the same from wheat flour in inexpensive way. At our place pure cottage cheese is almost twice as expensive as chicken. So being vegetarian i have these alternatively every week. I prepare seitan at home to make sure there is minimum starch left in it and embed it with defatted soy flour. It gives nice flavour to seitan without reducing the protein content and balancing the 9 essential amino acid profile. Gluten alone has 8 essential amino acids and deficient at one.

      @@Dave_en waste makes me uncomfortable even if there isn't financial gain. Someone suggested that it can be given to plants. Maybe it is suitable for composting as well

    Gurllll .. that was absolutely amazing! I've seen seitan boiled to get that texture, but I've never seen it the way you made it. The flavoring of the 'meat' portion was just brilliant. It's time consuming, but boy, this just looks so delicious. Did you use the starchy water for the batter? It's a basic tempura mixture from the looks of it.     You were extremely thorough and clear in your instructions, Yessica, which I greatly appreciated. I haven’t been tempted to try this method of creating vegan chicken before, but, because you make it look so simple, I will try it. I have heard great things about the Breville Air Fryer Oven. Be warned, though, it’s quite expensive.

    I am making this again right now. Iam going to try with the drumsticks lol. I used wholewheat flour + soms vwg and then washed it.. because I dont have a high protein level in my flour I think. I am excited about it. My mom lovedd it last time that I made it and she is not vegan or vegetarian.
