I'm not vegan but I'm trying to reduce my meat consumption (not every meal needs an animal in it!). That being said this is the best plant-based meat I've ever seen. I wouldn't be able to tell it's not a meat brisket, but most importantly, it looks genuinely mouth watering. Thanks for opening my mind on the possibilities of gluten-based meat!

First: I am a meat-eater. The end product looks absolutely amazing and I WILL BE making it this week. Second: During the stretching and knotting phase, my stomach literally turned because it looked so much like beef innards that I was grossed out lol. When it was stretched out into a u-shape, the seitan looked exactly like venison backstrap or beef tenderloin. This recipe is astonishing and truly an engineering and chemistry marvel (as said by Larissa down below). Well DONE!! ~RS

This looks sooo real, I can’t believe it. I’m gonna give this another shot (first time was an epic fail 🤦🏾♀️). Just in time for the Memorial Day holiday!
The first few trials I did turned out more texturally similar to bread, but letting it rest in between twisting and knotting it a few times changed the texture significantly. I also cooked mine in the microwave for ~1 minute increments, twisting and kneading it after each minute in the microwave; then I seared it in a cast iron skillet, which formed a nice sort of 'bark' very similar to the bark on an actual smoked brisket.
@@connorapurcell I think the blending is important to that ''meat'' like texture because of all the seitan videos I've watched, only the ones where they used a blender or food processor after making the gluten mix did the final product come out looking almost exactly like meat. The ones using the more traditional method seem to always produce something that looks more like bread than meat. And I'm sure they're delicious, but if you're actually trying to make a meat replacement, I think it should actually look like it, if for nothing else than to convince anti-vegan people that not all vegan meat replacements are just subpar imitations.
@@landshark1215 yeah, it also helps if it's not just raw "meat" too. I'm currently in the process of making a faux-Texas smoked-style brisket that'll be covered in my barbeque sauce, with a pickled onion and pickled green tomato, served on a bun. It's surprising how much the addition of sauce and a few toppings can help sell the "meat".
Hi Yessica, my wife and I are living vegan for more than eight years. We have already tried many recipes with Vital Wheat Gluten Seitan (VWG), but none has really thrilled us. We have not used the WTF method before. Your explanation of the Washed Flour Method method (WTF) is exemplary. It made it a breeze to lay the groundwork for the vegan brisket. The recipe for the vegan brisket itself is also wonderful. I made the vegan brisket yesterday afternoon and evening. Our whole apartment smelled incredibly delicious. Then today we ate the vegan brisket together with my son and his girlfriend. What can I say, the taste was just incredibly good. It's not that we miss animal meat. However, it was still a great experience to prepare vegan meat that is not inferior to animal meat. Thank you for this awesome recipe and for all the work you put into this and the other videos. I will definitely be trying more of your WTF recipes and certainly some of your VWG recipes. Please keep up the wonderful work you are doing!

So I made this yesterday (first try) and it is AMAZING!!!! The flavor is full and rich and the texture is incredible. Will be taking this to the beach house this weekend and will be grilling it with BBQ sauce....I know my non-meat friends AND carnivore friends will be so amazed. I wanted to suggest that, if you press this brisket under a weight like Korean "pyeonyuk," you might get a denser texture which you could then slice thinly. Just a suggestion! Thank you chef!

Awesome! The texture is great. I made mine similar to a smoked Texas BBQ brisket, and it turned out very similar to the bark section of an actual brisket. I cooked it in the microwave in intervals of ~30 seconds/1 minute, then seared it on a stove top. Thanks for sharing this!

just made a seitan brisket following the instructions (though not flavouring ingredients but that shouldn't matter) of a wicked kitchen video and it is so chewy. came here for next time, looking at that texture i can't wait.
I don't know how I missed this one before. I was looking for a way of not having to use a blender but mixing more ingredients into my wtf seitan. Looking forward to trying this over the weekend!
I really like the technique of covering the knots with the extra piece! Brilliant! I have been hesitant to incorporate the seasoning into the dough, because I thought it would ruin the gluten formation and shreddy texture (I rest the dough before washing and after). But this looks great!
This was epic. I am plant based but because I am gluten free...I almost exited. But when you got to the Wisk tool instructions woman you had me. Super funny to instruct all to use the tiniest Wisk we can find. Been there done that when that Amazon picture looks full size and the price can't be beat, it's the deal of the century. When it arrives you wonder which century. : )

Wow that looks really good. You could look into adding some actual fat into the „meat“ though maybe it enhances the flavour! I‘ve seen other people addong refined coconut oil (frozen to make it hard)

Im making this right now. It all shaped and resting waiting to be browned on both sides. Im so excited because yours look like real meat. I add little balls of rice paper between for a chewy fat profile. I hope it works.
Hi Jessica😀 Oh it is so good! The rice paper mended to the gluten and the brisket was a little pink in the middle making it that more meat like. I would use less marmite next time though. The flavor for me was great but a bit much for my family. Thanks for the recipe😊
