I love Pastitsio! It was on rotation for our Sunday family lunches growing up in Adelaide, Australia. I tried to make it in my mum's style but I was never satisfied and one day I realised that everyone has to find their own way to their Pastitsio. So now I make a mix between my Aunt Martha's style and my Mum's style here in Austria which makes it a Greek Australian "made in Austria" Pastitsio! And we hardly had Mousaka at home in Adelaide to be honest- My Mum made "Papoustaskia".
I like how the "chop chop" became a regular cooking verb here, along with "mixxy mix" :D Good you remembered the Extra Virgin Greek Olive Oil! I wouldn't resist eating more than one portion, looks delicious!

It’s all okay, Akis. But for heavens sake, why do you indirectly teach people that it’s okay to cut with knife in a nonstick pan? The coating is ruined especially when it’s hot. The chefs in these videos always work with brand new kitchen stuffs (pans, knives…etc) and newer care about harming the nonstick coating of pans - that are not good for health as we know. Please avoid showing this carelessness

Sum non stick pans can be used with metal utensils.
