Thank you Becky. It does mean a lot. I am from Bradenton Florida which is right in the direct path of Milton. I am a lunch lady and am working a school shelter. We have over 1,100 people in this elementary school and we are still getting more. My family stayed at our home while I am here. We've done everything to our house to make it as ready as possible. Prayers are always more than welcome, thank you.
Who else is here because everything just gets overwhelming and their hearts are breaking for those dealing with loss from these devastating storms and wildfires and Becky gives such a sense of calm?
Same. I just came to watch while taking a break from live coverage. My sister refused to evacuate when she should have and lost power about an hour ago. Now it’s just a waiting game hoping I hear from her.
We live in the hurricane’s path & have chosen to evacuate. Made an 11 hour drive north that because of evacuation exodus took 15/16 hours. We are sitting outside on a deck enjoying nice weather in the TN mountains & I am loving you video which is very calming. Thank you Becky.
We are near Tampa we still have power but our rain gauge overflowed it’s rained all day. Wind getting a lot worse. It scary for sure. Enjoy your time in TN.
You have a relaxing personality. I could watch you chop food/cook all day long. Never feel like you need to make shorter videos. Many times I notice editing to shorten the video and I'm like Oh No- I want to watch it all! Maybe I'm weird but would love longer videos. There too few relaxing creators, you are great.

I’m praying for everyone in Florida and those affected by the storms. I’m in Kentucky and we have tornados but several years ago we also had some of the Hurricane Ike. Most of the city was without power for 5 days plus lots of downed trees. I myself did not lose power. However to February after Hurricane Ike the previous fall we had a terrible ice storm and we did lose power for 6 days. It was really hard on us because we are total electric so we had no heat. My husband got ahold of a couple of kerosene heaters that we placed in two of our bedrooms so we had heat. We lived in those two rooms for 5 days and I read a lot of books and my husband read his mechanic books. I don’t really remember what we did for meals
I was happy to see that Mandy in the Making and family are all ok and am hoping the O’Donohue’s are also safe. After spending literally all night on Tik Tok praying with folks from Florida and worrying about their safety, I was so happy to find a new episode of yours. We all need a little break from this stressful situation and you provided it for me today. Thank you for all you do. On a lighter note, it’s soooo much easier to caramelize onions in the slow cooker. I fill mine to the brim with onions, add a splash of evoo and let it do its thing. I usually do this first thing in the morning or right before I go to bed. They turn out amazingly well and making more allows me to freeze some for future use. Enjoy your party!

High quality butter, the best of the best is Kerrygold. It’s an Irish product. Spread on your home made bread to bring to another level…I always use it in sauces that require butter and again it elevates the meal. Merry Christmas everyone.

When I first started cooking chicken over 50 years ago...whole chickens were cheap. So we bought whole chicken and my grandmother taught me how to cut up a chickens. She also taught me how to kill a chicken, pluck it and clean it for eating. I was raised in the country and appreciate all the gifts from the land. As you do. I make bacon every now and then, but use bacon grease more often. I discovered BACON UP Bacon Grease at the store. I bought that and keep it in the refrigerator. At 63 yrs now, I still love cooking, but it's now for just us two. Enjoy watching the new recipes that y'all do.
It wasn’t until I got out of the restaurant business that I started cooking more at home. We had always had chickens and turkeys from Grandma's best friend who had a little hobby farm. We, my brothers and I helped weed and harvest the vegetable garden. Lots and lots of canning was done. But a while after I started cooking at home, and my neighbor started raising chickens, I finally asked my mom why I didn't know how to kill, pluck, and butcher chickens. I found out that it was the thing she hated the most about farming and she wanted to spare me the experience. 😂

Don’t give up on the sourdough! Remember, it’s just flour and water. I almost gave up, I started having success when I quit over thinking it. I was carefully measuring with my scale. Then I reminded myself that Old Time Alaskan Sourdoughs didn’t carry a scale! I do use my water pitcher with a filter as I am on city water. It takes time so I started practicing when I wasn’t in a pinch or planning it into a menu. I throw it in my fridge for weeks,months….pull it out,start feeding it, some times for a couple days if it’s been in the fridge a while. I just revived mine this past week. We had soup and sourdough for dinner and it’s so good! I defiantly wake it up in a warm spot in my kitchen. As far as making the bread, I also quit overthinking that too. I make the dough, stretch it a few times to develop the gluten. Cover it let it rise and do its thing, form it into a round loaf, throw it in a bowl or banneton. Pull it out in the morning and put it in my preheated Dutch oven, cook for 20-25 min. Covered and then take off cover and cook another 15-20 min.

I just want to add a word of warning: it is never safe to par-cook chicken and refrigerate it to finish later. Par-cooking chicken creates an environment for pathogens like salmonella. The outer areas may cook fully and be temporarily safe, but the inner regions remain in the temperature danger zone, allowing bacteria to reproduce. Even though cooking reduces bacteria, it doesn't always eliminate them completely. If the chicken has large amounts of bacteria from being partly cooked and then the bacteria reproduce in large numbers while it is cooling down in the fridge, cooking it fully later won’t necessarily kill all the large numbers of bacteria, making it potentially unsafe to eat which could result in food poisoning.
VV here: It’s conspicuously clear this commentary was not written in your voice but copied from the internet. Chickens that carry Salmonella are NOT to be sold in the first place. Since her chickens were personally and carefully grown, I am sure they do not carry Salmonella. Most meats and other foods that carry pathogens do so because they sit at room temperature for a period of time or some inauspicious environment. This is what occurs on cruise ships with large batches of food (called church and grange food) for thousands of passengers who end up becoming very sick especially in warm weather voyages. Just an example. While what you state is “true” (dependent upon time & temperature), first what is your understanding of partially cooked? This is a video that has been edited so you don’t know for how long she cooked that chicken and at what temperature. In addition she seasoned that chicken with so many spices and salt that the osmolarity of the liquid solution is probably comparable to the DEAD SEA where nothing thrives. I feel confident her chicken is ok. BTW: I am a retired RDN, LD what are you……a food scientist, RD, chef, or a John Q Public? Just curious.

Yes please to the sour dough. I haven’t had much luck making my own starter but I just ordered and received a 225 year old starter from Etsy. I can’t wait to reconstitute it and start baking. You’ve been such an inspiration to me with all things food from scratch!💕😊
Sourdough making is so simple. i never made bread and my first attempt was with sourdough, as I am intolerant to yeast. I made my own starter after watching a video. Simple! It only takes a little time to « grow » your stater. And NO NEED to feed it everyday once it’s made. Pit it in the fridge, forget it and when ready to make more bread, take it out and feed it.
I agree. I specifically stopped the video and went to show my daughter how Becky can communicate so much with her eyes while tasting food. We both enjoyed it very much 😂 I always smile with her
Hi Becky you should not par cook chicken then put it in the fridge to cook later it can lead to bacterial growth and food poisoning. you would be better cooking it then reheating the dish on the day. Hop this helps
I totally agree. Why does Becky never reply to comments? I have commented a few times about wearing nail varnish when preparing food. It is very unhygienic and she should know this if she went to catering colleges.
I have given several formal dinner parties (for up to 25 people), with all the planning, prep work, staging, cooking. So I understand what you go through for these friends. My dinners parties could take up to a month of planning and prepping. You are very creative in your menus and you are a wonderful cook. Hi Becky Here on the Uk we are advised NOT to re freeze chicken once defrosted, your chicken was frozen and thawed and your gonna refreeze the carcass with the remaining chicken on ??
It depends on how the chicken was thawed. According to the USDA knowledge article: “If you thaw meat or poultry in the refrigerator it is perfectly safe to refreeze it. The quality may be affected, but it will be safe.”
Well we are experiencing the weather bands now but still a couple hours until it comes on shore.Thankfully I live about 50-80 miles east of the coast. Born, raised and retired here so been thru many hurricanes. Praying for all Becky's friends to be safe.

Most of the counties in the UK end in shire. That pronounciation is shire and not sheer. But when attached to the county it’s sheer. Hope that helps. ❤

I really love watching your videos Becky, so very entertaining and I enjoy all your recipes. I wanted to let you know that, you can bake with plastic wrap..I do it all the time when I'm baking something for a long time and want it to be really juicy. Simply wrap the dish with plastic then wrap with foil,, making sure to cover all the plastic edges. You make me wish I had room to garden and grow things, but I live in an apartment and have a brown thumb.. not an inkling of gardening skills. I appreciate you allowing me to experience gardening through you. 🍁😊💐🌹
Becky, once the chicken is thawed, I don’t think you are supposed to refreeze it due to the potential for food poisoning. Also you are not supposed to par cook chicken for cooking the following day. You are supposed to fully cook it, let it cool, then refrigerate till the next day and reheat to an internal temperature of 165 degrees Fahrenheit.
Oh Becky, on a separate note I made your pumpkin, sausage and cream cheese bake. It was tasting absolutely delicious until I put the pumpkin in. Wellllllllll, I accidentally put pumpkin pie mix in and now it was way too sweet. But I said to myself what would Becky do? So I added a ton of plain Greek yogurt to the mix and that helped take out a lot of the sweetness. Can't wait to make this recipe again the proper way with plain pumpkin. And I may also add a bit more sausage. This recipe has become a new fav.

I’m in Australia and we have one Cavoodle at the moment but two years ago a mini poodle and a Cavoodle. I teach them all ‘cleanup’. So good especially if I spill something like eggs or cheese. I sometimes call the my sour chefs 😄

YES! Lets do the sourdough bread together. That is something I have wanted to do for a long time. I have wanted to learn how to bake bread. Today I made my first apple pie. In the midst of the outages and chaos, I was trying to keep track of how many of your videos I would get to catch up on once power and internet were restored. It's been a few days so you may not see this but I am a loyal viewer and have adopted many of your practices. I bought 15 pounds of garlic from Azure, peeled, minced, and froze it in cubes and shuffled this prized possession between freezers when we were using a generator. I am in a fortunate area of Asheville and endured inconveniences compared to others. No power, no water, no internet, no cell service? No problem. But, it was only for about a week and half for us. So, we were lucky. This was the first of your videos I watched once services were restored and it warmed my heart to hear your prayers for us. Thank you.

Talking about cooking potatoes in bacon fat, I make bacon hash for Christmas with onions & peppers. We take out the bacon, crumble it up and add it back in at the end so it doesn't get overcooked. We also microwave the potatoe cubes, before you throw them into the bacon grease, makes it faster. So yummy!! My family love it!!!!
Becky, I add minced capers in my warm bacon dressing for my wilted spinach salads (just remember that capers and Parmigiana Reggiano have a lot of salt, so omit any salt in recipe). In lemon dressing for any fish and/or chicken picada. I think capers are one of the most overlooked ingredients for anything chicken or fish.
Praying for all as well, currently my family is in the path of Milton on the East Coast of Florida and hoping they fare well. Hi Becky! I know this is a day late & you probably noticed while editing, but just in case; @24:50 you do use the same EVOO on the croutons as you did in the salad dressing! (Unless you have two identical bottles holding two different ingredients 😉). My hubby & I love Brussels sprouts so I can’t wait to try this recipe & all the others too of course 😂! Hi Becky, I recently picked up doing sourdough again after many years of failure and I found for me the secret is rye flour. King Arthur rye flour to first make your starter with. The yeast loves it and it worked out wonderfully and I have had zero issues since then. After getting my starter established really well I was able to feed it whole wheat or even just all-purpose flour from them on and it has still been flourishing.

We all need a little break from this stressful situation and you provided it for me today. Thank you for all you do. On a lighter note, it’s soooo much easier to caramelize onions in the slow cooker. I fill mine to the brim with onions, add a splash of evoo and let it do its thing. I usually do this first thing in the morning or right before I go to bed. They turn out amazingly well and making more allows me to freeze some for future use. Enjoy your party!

High quality butter, the best of the best is Kerrygold. It’s an Irish product. Spread on your home made bread to bring to another level…I always use it in sauces that require butter and again it elevates the meal.

When I first started cooking chicken over 50 years ago...whole chickens were cheap. So we bought whole chicken and my grandmother taught me how to cut up a chickens. She also taught me how to kill a chicken, pluck it and clean it for eating. I was raised in the country and appreciate all the gifts from the land. As you do.
I make bacon every now and then, but use bacon grease more often. I discovered BACON UP Bacon Grease at the store. I bought that and keep it in the refrigerator. At 63 yrs now, I still love cooking, but it's now for just us two. Enjoy watching the new recipes that y'all do.

It wasn’t until I got out of the restaurant business that I started cooking more at home. We had always had chickens and turkeys from Grandma's best friend who had a little hobby farm. We, my brothers and I helped weed and harvest the vegetable garden. Lots and lots of canning was done. But a while after I started cooking at home, and my neighbor started raising chickens, I finally asked my mom why I didn't know how to kill, pluck, and butcher chickens. I found out that it was the thing she hated the most about farming and she wanted to spare me the experience. 😂

Don’t give up on the sourdough! Remember, it’s just flour and water. I almost gave up, I started having success when I quit over thinking it. I was carefully measuring with my scale. Then I reminded myself that Old Time Alaskan Sourdoughs didn’t carry a scale! I do use my water pitcher with a filter as I am on city water. It takes time so I started practicing when I wasn’t in a pinch or planning it into a menu. I throw it in my fridge for weeks,months….pull it out,start feeding it, some times for a couple days if it’s been in the fridge a while. I just revived mine this past week. We had soup and sourdough for dinner and it’s so good! I defiantly wake it up in a warm spot in my kitchen. As far as making the bread, I also quit overthinking that too. I make the dough, stretch it a few times to develop the gluten. Cover it let it rise and do its thing, form it into a round loaf, throw it in a bowl or banneton. Pull it out in the morning and put it in my preheated Dutch oven, cook for 20-25 min. Covered and then take off cover and cook another 15-20 min.

I just want to add a word of warning: it is never safe to par-cook chicken and refrigerate it to finish later. Par-cooking chicken creates an environment for pathogens like salmonella. The outer areas may cook fully and be temporarily safe, but the inner regions remain in the temperature danger zone, allowing bacteria to reproduce. Even though cooking reduces bacteria, it doesn't always eliminate them completely. If the chicken has large amounts of bacteria from being partly cooked and then the bacteria reproduce in large numbers while it is cooling down in the fridge, cooking it fully later won’t necessarily kill all the large numbers of bacteria, making it potentially unsafe to eat which could result in food poisoning.

VV here: It’s conspicuously clear this commentary was not written in your voice but copied from the internet. Chickens that carry Salmonella are NOT to be sold in the first place. Since her chickens were personally and carefully grown, I am sure they do not carry Salmonella. Most meats and other foods that carry pathogens do so because they sit at room temperature for a period of time or some inauspicious environment. This is what occurs on cruise ships with large batches of food (called church and grange food) for thousands of passengers who end up becoming very sick especially in warm weather voyages. Just an example. While what you state is “true” (dependent upon time & temperature), first what is your understanding of partially cooked? This is a video that has been edited so you don’t know for how long she cooked that chicken and at what temperature. In addition she seasoned that chicken with so many spices and salt that the osmolarity of the liquid solution is probably comparable to the DEAD SEA where nothing thrives. I feel confident her chicken is ok. BTW: I am a retired RDN, LD what are you……a food scientist, RD, chef, or a John Q Public? Just curious.

Sourdough making is so simple. i never made bread and my first attempt was with sourdough, as I am intolerant to yeast. I made my own starter after watching a video. Simple! It only takes a little time to « grow » your stater. And NO NEED to feed it everyday once it’s made. Pit it in the fridge, forget it and when ready to make more bread, take it out and feed it.

Hi Becky you should not par cook chicken then put it in the fridge to cook later it can lead to bacterial growth and food poisoning. you would be better cooking it then reheating the dish on the day. Hop this helps
I totally agree. Why does Becky never reply to comments? I have commented a few times about wearing nail varnish when preparing food. It is very unhygienic and she should know this if she went to catering colleges.

Here on the Uk we are advised NOT to re freeze chicken once defrosted, your chicken was frozen and thawed and your gonna refreeze the carcass with the remaining chicken on ??
It depends on how the chicken was thawed. According to the USDA knowledge article: “If you thaw meat or poultry in the refrigerator it is perfectly safe to refreeze it. The quality may be affected, but it will be safe.”

I really love watching your videos Becky, so very entertaining and I enjoy all your recipes. I wanted to let you know that, you can bake with plastic wrap..I do it all the time when I'm baking something for a long time and want it to be really juicy. Simply wrap the dish with plastic then wrap with foil,, making sure to cover all the plastic edges. You make me wish I had room to garden and grow things, but I live in an apartment and have a brown thumb.. not an inkling of gardening skills. I appreciate you allowing me to experience gardening through you. 🍁😊💐🌹
Becky, once the chicken is thawed, I don’t think you are supposed to refreeze it due to the potential for food poisoning. Also you are not supposed to par cook chicken for cooking the following day. You are supposed to fully cook it, let it cool, then refrigerate till the next day and reheat to an internal temperature of 165 degrees Fahrenheit.

Oh Becky, on a separate note I made your pumpkin, sausage and cream cheese bake. It was tasting absolutely delicious until I put the pumpkin in. Wellllllllll, I accidentally put pumpkin pie mix in and now it was way too sweet. But I said to myself what would Becky do? So I added a ton of plain Greek yogurt to the mix and that helped take out a lot of the sweetness. Can't wait to make this recipe again the proper way with plain pumpkin. And I may also add a bit more sausage. This recipe has become a new fav.

I’m in Australia and we have one Cavoodle at the moment but two years ago a mini poodle and a Cavoodle. I teach them all ‘cleanup’. So good especially if I spill something like eggs or cheese. I sometimes call the my sour chefs 😄

I just want to say that I am so so impressed that you are raising your own veggies as well as garlic! That’s so amazing to me. We have had very small gardens before. On a much much smaller scale than yours. I felt so productive when I did get to use what we did raise. My husband died five yrs ago with brain cancer. But I hope to maybe do some box bed gardens one day.

In the midst of the outages and chaos, I was trying to keep track of how many of your videos I would get to catch up on once power and internet were restored. It's been a few days so you may not see this but I am a loyal viewer and have adopted many of your practices. I bought 15 pounds of garlic from Azure, peeled, minced, and froze it in cubes and shuffled this prized possession between freezers when we were using a generator. I am in a fortunate area of Asheville and endured inconveniences compared to others. No power, no water, no internet, no cell service? No problem. But, it was only for about a week and half for us. So, we were lucky. This was the first of your videos I watched once services were restored and it warmed my heart to hear your prayers for us. Thank you.

Talking about cooking potatoes in bacon fat, I make bacon hash for Christmas with onions & peppers. We take out the bacon, crumble it up and add it back in at the end so it doesn't get overcooked. We also microwave the potatoe cubes, before you throw them into the bacon grease, makes it faster. So yummy!! My family love it!!!!
Becky, I add minced capers in my warm bacon dressing for my wilted spinach salads (just remember that capers and Parmigiana Reggiano have a lot of salt, so omit any salt in recipe). In lemon dressing for any fish and/or chicken picada. I think capers are one of the most overlooked ingredients for anything chicken or fish.
Ice cubes are a good idea I use a wet washcloth

Hi Becky! I know this is a day late & you probably noticed while editing, but just in case; @24:50 you do use the same EVOO on the croutons as you did in the salad dressing! (Unless you have two identical bottles holding two different ingredients 😉). My hubby & I love Brussels sprouts so I can’t wait to try this recipe & all the others too of course 😂! Hi Becky, I recently picked up doing sourdough again after many years of failure and I found for me the secret is rye flour. King Arthur rye flour to first make your starter with. The yeast loves it and it worked out wonderfully and I have had zero issues since then. After getting my starter established really well I was able to feed it whole wheat or even just all-purpose flour from them on and it has still been flourishing.
