    Chef John, I made this dish the other night, but a more Middle-Eastern slant. BTW, I cleaned & roasted the acorn seeds and used them as a garnish atop the halves with a dolop of yogurt. Mighty delicious.

    Even in our most fancy grocery there’s no lamb sausage, I guarantee it. So I’ll have to substitute with a spicy Italian local sausage which are really delicious. I also substitute cinnamon with allspice. Thank you for this recipe Chef.

    Made this dish for dinner tonight. I subbed ground pork for lamb, but was able to season it with a homemade merguez seasoning, so it was still fantastic! My kids were nuts about it, and asked for seconds. Such a keeper!!

    @Moulde cookingwithdog is good but its mostly Japanese cuisine. I don't eat it myself but it's interesting to see how the dishes are prepared. Never a dull moment watching those.

    Ha haaaaa....I remember when I was a young wifey.... I was in the kitchen w my wine and some herb, and I had bought some beautiful "squash" in the fall.... I was a choppin and hacking away trying to open these squash. Finally I called my mother w my delimma and she said "Honey...are you sure that's not a gord?" It was!

    That is the yummiest stuffed squash I've ever seen. I've been researching for quite sometime on different for stuffed squashed recipes, and this is it, this is the one I want to try.
    Exotic spices, fatty sausage, and rice, what more do you need?

    @PilotOfTime You could probably easily use any small, round squash to do this. Heck, you could probably even use butternut squash. Might have to alter the cooking times a bit to get the squash cooked.

    I've never tried acorn squash before, but I know i love both butternut squash and regular squash, so I really think I'm going to have to give this a shot. It looks amazing. If I were to go with a different sausage (finding lamb sausage around here is a pain) should I replace the mint with a different herb?? I know it goes great with lamb, but I'm just not sure how it would go with Spicy Italian sausage or Chorizo, lol.

    Sausage and rice stuffed acorn squash is delicious. Did not take as long to cook. Different areas differ cooking times. Recommend trying it!

    @sakarim There's tons of websites that tell you how to make sausage, but if you took ground meat of your choosing and added in whatever spices you liked, it would work out the same, just mix well.
    It's like making a kanish. Grind it all up and mix it well.

    @Gilgamesh417 You can eat the seeds. One good way is to wash them thoroughly and then soak them overnight in seawater or a 9% salt solution. Drain them and spread them out on a pan and bake them in a very slow oven (200 or so) until the seeds are dry and barely brown. They overcook very easily so pay attention and grease them lightly. Just eat them that day as a snack. Keeping them longer takes more salt.

    you can take the squash seeds, wash off the innards, and toast them very lightly. a little spice of your choice and you have a snack. you may have to keep the seeds until you have enough, but that's easy. just dry them off and put them in a jar in your fridge until ready to toast. any squash seeds will work, i.e., acorn, pumpkin, etc.

    Can you eat the seeds John? I don't know, roast/toast them with caramel/honey? Similar to candied pumpkin seeds I suppose. Seems like a waste to just toss them.
