Your voice made me smile and happy RIGHT AWAY lol
@foodwishes I just whant to thank you Chef John! I made this recipe last night for my birthday! I ate it with my loved ones and it was just perfect. You give me so much inspiration for all my meals. Thank you again!!
*Sigh* I gotta learn to love the rest of the lamb like I do the chops! 9 yrs later Chef and I'm still reading all the oldies.
I made this earlier this week... Merry early Christmas to me... it was so amazing that I was sad when it was gone lol
Time to make some more! Lol
Chef John, I made this dish the other night, but a more Middle-Eastern slant. BTW, I cleaned & roasted the acorn seeds and used them as a garnish atop the halves with a dolop of yogurt. Mighty delicious.
Even in our most fancy grocery there’s no lamb sausage, I guarantee it. So I’ll have to substitute with a spicy Italian local sausage which are really delicious. I also substitute cinnamon with allspice. Thank you for this recipe Chef.
Chef John. That looks so good that I don't think I would be able to stop at just one.
I wish I could give more thumbs up everytime I come here for a refresher on one of your great recipes and techniques. Viola.
I was gonna go to sleep, but I guess I can stay awake for the most amazing videos ever.
How beautiful! I stuffed a pumpkin for my Thanksgiving video - such a delicious treat to eat stuffed squash/veggies. Have a flavorful & fun Holiday season!
It is the first time I am trying acorn squash and wanted to learn what might go well with it. What a brilliant idea to stuff with sausage filling!! Saves time and gives just the perfect seasoning! Thanks!
Made this dish for dinner tonight. I subbed ground pork for lamb, but was able to season it with a homemade merguez seasoning, so it was still fantastic! My kids were nuts about it, and asked for seconds. Such a keeper!!
l love foodwishes and this time i will make this dish
This looks really good. We love acorn squash and this certainly is a new twist!
I love your videos so much Chef John, thank you tons sir. I am growing my first garden and randomly choose Acorn Squash, so to find such an awesome recipe is a great delight. Look forward to trying this once I harvest some in a few months.
dear chef john, please dont EVER stop making videos
The best "stuffed squash" recipe so far 👌
So simple
I don't think I've seen so many good looking dishes on one UA-cam channel.
I love you chef john! i have tried several of your recipies and they have turned out perfect everytime
Looks awesome....i have these gourds growing out of my ears...can't do them all sweet.....savory makes my mouth water...great video!
Such great camerawork...that and the narration make chef john the best user on youtube!
Thank you Chef John for this wonderful recipe! Hubby made these for date night last week with a spicy sausage and they were delicious! I think I have a new favorite dinner!
luv it Chef John I've never had squash before but I really wanna try it now
Looks amazing, I will try this but will substitute the sausage to maybe ground lamb? gonna try my twist
@Moulde cookingwithdog is good but its mostly Japanese cuisine. I don't eat it myself but it's interesting to see how the dishes are prepared. Never a dull moment watching those.
i don't even cook, i just watch these videos cuz they're all so gooooooddd *drool
i get so excited when foodwishes pops up in my subscription box! :) :) :)
Looks great! Thanks.
... Except you forgot to tell me what I am. Even though amateurish, I'll give it a shot:
"You are the Bam Bam of your squash and lamb."
"Expensive, yes, but you can substitute any spicy sausage. You are the price boss of your rice and squash."
You Sir are a God. That looks amazing.
@LucLeFou Yes, as long as it's for rum balls.
Ha haaaaa....I remember when I was a young wifey.... I was in the kitchen w my wine and some herb, and I had bought some beautiful "squash" in the fall.... I was a choppin and hacking away trying to open these squash. Finally I called my mother w my delimma and she said "Honey...are you sure that's not a gord?" It was!
What a sweet mother :)
♡♡♡
This just cracked me up!
Oh my gosh! YUM! I have one acorn squash left... im making this in a couple days!! Delicious
Such a homey, innovative dish. Good stuff Chef!
making me sooo hungry at midnight chef John! looks yummy!
Thank you for giving me a new recipe for these things. I tend to always just bake them with some brown sugar and honey.
That is the yummiest stuffed squash I've ever seen. I've been researching for quite sometime on different for stuffed squashed recipes, and this is it, this is the one I want to try.
Exotic spices, fatty sausage, and rice, what more do you need?
This looks heavenly. Sadly I've never had squash or lamb, but that must change soon.
omg my tummy is happy lately been watched ur vids. 4 a while. Ur creative & fantastic! never seen this rec. b4 will make it soooon. Thanks chef John.
@PilotOfTime You could probably easily use any small, round squash to do this. Heck, you could probably even use butternut squash. Might have to alter the cooking times a bit to get the squash cooked.
such an interesting concept. I'm looking forward to trying my own version with different spices, squash, and sausage.
YUM! You can give it even a bit more Mediterranean flavor by adding some minced onions and serving some Tzatziki sauce on the side.
omg!! this looks DELICIOUS.. I woke up this morning planning to start The Cabbage Soup Diet... GOD i wish i did not see this video lol.. No harm in having it shifted one more day lol
CHEF JOHN! they posted your video in an article on yahoo, made the front page :)
I was extremely proud :P
I plan on making this today.. so excited! Headed to Wholefoods right now!!!!!
Healthy - turned out good.
@Malakaiea Yes to both. ;)
I am loving these recipes that feature squash as they tend to be vegetables I avoid. This looks so beautiful Chef John!
LOL "they are a little too good for you so lets add some sausage". That's how I think too. I make this tonight! Thanks for posting.
jsmcguireIII They are too clean~!
Definitely going to try this . May have to do a substitution. Never seen that sausage available here . Thanks for the video.
mmmmmmmm my mouth just watered!! thanks Chef John :P
Finally I made this recipe. Needless to say it was delicious! I used farinheira instead of the lamb sausage (can't find it where I live)
thats gotta be even better than the summer squash version for a few months ago
I've never tried acorn squash before, but I know i love both butternut squash and regular squash, so I really think I'm going to have to give this a shot. It looks amazing. If I were to go with a different sausage (finding lamb sausage around here is a pain) should I replace the mint with a different herb?? I know it goes great with lamb, but I'm just not sure how it would go with Spicy Italian sausage or Chorizo, lol.
omg that looks so good.I'm going to try this.
you're AWESOME mr foodwishes :)
Would try it if they had acorn squash in Australia! Looks delish!
i love all your videos and recipes!!!
Sausage and rice stuffed acorn squash is delicious. Did not take as long to cook. Different areas differ cooking times. Recommend trying it!
LOOKS SOOO GOOOD
This is defenately a new recipe to me! Thank you for introducing it! :)
Great idea. Can't wait to spin it up
You can give it that will trim before you cut in half to hold stable during that more challenging cut.
Oh my this looks amazing! I'm gonna try this one, only with chicken probably. What spice should i use then?
Great recipe!
Looks delicious
I was looking for a new recipe for dinner tonight, and this is it! Thanks Chef! :)
The thumbnail got my mouth watering.
And remember you are the Daniel Tosh of your Acorn Squash.
omg! i just looked at the picture @ my homepage and i said (OH MY GOD! THAT MOST BE THE MOST D.E.L.I.C.I.O.U.S STUFFED OOD IN THE WORLD!!)
hahaha love your videos! keep at it!!
Fantastic! I need to grow more next season
dear chef, can i steam the squash be4 to make the baking time shorter? looking forward ur answer! :) thnks!
Ooooh! Looks Yummy!
Can you prep these for a week or two before, so that other preparations can be made, for a party? While they still remain fresh and tasty to eat when cooked?
@sakarim There's tons of websites that tell you how to make sausage, but if you took ground meat of your choosing and added in whatever spices you liked, it would work out the same, just mix well.
It's like making a kanish. Grind it all up and mix it well.
It's.... GENIUS!
Mm that looks awesome!!
OMG!!! Its look so good....
Chef John, this was awesome. Thanks. :)
looks delicious!!!!!!!!!!!!
What an awesome idea! Totally trying this :)
Looks good, l will try it.
Cheeef, why do I always watch you when I'm hungry???🤤🤤 can you eat the skin?
I love squash!!!!!!
wonderfull recipe, thank you
totally new recipe . good job .
Thank you Chef John.
Good combo, meat, veg and starch
What a wonderful meal! Thank you for uploading.
@malsolv Oh, is it so that the bottom doesn't stick after you cut that little piece off?
Have to try this one.....thanks!
Could you use peppers instead of squash? How would you change the baking time?
Love your videos chef john :D
I'm making your lasagna this week!! Wish me luck!!
@Gilgamesh417 You can eat the seeds. One good way is to wash them thoroughly and then soak them overnight in seawater or a 9% salt solution. Drain them and spread them out on a pan and bake them in a very slow oven (200 or so) until the seeds are dry and barely brown. They overcook very easily so pay attention and grease them lightly. Just eat them that day as a snack. Keeping them longer takes more salt.
Hello chef John,,,,just wondering if you can use hot or sweet sausages
you can take the squash seeds, wash off the innards, and toast them very lightly. a little spice of your choice and you have a snack. you may have to keep the seeds until you have enough, but that's easy. just dry them off and put them in a jar in your fridge until ready to toast. any squash seeds will work, i.e., acorn, pumpkin, etc.
chef john, is there any other gourd that i can use? Acorn squash is a little hard to source where i live!
Chef John, I'm interested in more Mediterranean food. Could you demo a moussaka?
awesome.
Can you eat the seeds John? I don't know, roast/toast them with caramel/honey? Similar to candied pumpkin seeds I suppose. Seems like a waste to just toss them.
