    a quick and safe way to cut thru hard squash (spaghetti, acorn, etc.) is to put your sharp knife in the center, and push it in just a little - the blade is parallel with the squash, then use a mallet or hammer and gentle pound the knife thru the squash - no harm no foul

    Made this tonight. It was really good. I used currants. I had some leftover and put in scrambled eggs for breakfast.

    Brava! I love that flavor profile with the uber-umami boost from a mere sprinkling of Parmesan!
    Your recommendation that we use a very sharp knife, though it may sound counterintuitive, is absolutely the safest way to cut.
    I have found that microwaving the whole acorn squash for a minute or less softens the skin enough that I am not risking a serious cut from my knife.
    Because though I may start the task as Madam Safety Inspector, because I have no patience whatsoever, within 15 seconds of struggling, I will attempt things I know are dangerous to me and destructive to my knives just to get the job done.

    Microwave for a couple minutes before cutting. Softens it up just a bit so you can cut through easier.

    How did you prepare the quinoa.....? I haven't used it before...? Other than that the recipe looks great, I have one of those little squash!

      Hi! Just follow the package directions. All you have to do is cook the quinoa and water and simmer until cooked! Super easy.

    Ahh why you put the plastic container on the hot burner 😱 this looks good tho! I hate cutting these squashes but it eventually becomes worth it

    Good lord it's been a while since I've seen knife skills this bad. The size of the pieces of apple, sausage, mushroom, and onion are about 3x what they should be for a stuffing that fits in an acorn squash.
