In Europe, the best fillets I've eaten in high-end places have always been cooked and served whole, and rested for a *long* time. Here, the cutting is done during the cooking and there appears to be no resting time. Any comments?
To answer your question, high quality marbled Wagyu has a high percentage of fat, so the juices do not escape even if the beef is not rested, and it is soft to the palate.Also, because of the thorough production control, there is no need to age the beef, and if the cooking process is not mistaken, it is relatively easy to enjoy Wagyu beef.

Steak being cooked for that length of time looks fine. When the chef cuts into it, it's still pink at the center. Steaks were on fire because that's how it's supposed to be. The fire is to cook off all the alcohol from the wine poured on the steak so it's not bitter and the flavour of the wine is incorporated. Potato skin unpeeled probably because the kind of potato is better with the skin on? He washed his hands. Wasabi is a condiment. I'm not a wine expert but it doesn't look wrong to me?
