Even though it wasn't as authentic as in Japan, I hope I can visit Japan one day because it's such a beautiful country.
I paid attention the next table chef, just seen how she cleaned up after cooking. I really admire that kind of culture. To me , it is not just cooking, but also how much dedication they put in the work, and how much they enjoy working. It is amazing.

ahah, i was here :D. It's a nice restaurant inside a complex of a big hotel 3 min walk of the Yokohama station. (Literally at the end of the street ^^, but you have multiple entry) The view from the hotel is wonderful. To bad i can't post a photo here.
wagyu is lovely, but for me it's all about that exquisite fried rice. the generations of knowledge and technique and commitment to excellence that you can see in the chef's movements are exquisite, and the finished dish is something i would far rather travel for than steak, no matter how good. this was an extremely educational video, thankfully free of a narrator, just showing us how it's done. thank you.
What are you on? This is just the head chefs preferred way of making it. The person right next to him made it the exact same way. For all you know it was some 2 star Michelin chef from France who made the recipe lol. Also having seen several hundred fried rice videos from Japan I can confidently say this was no different than what they make at the street vendor except the steak juices..... Like onion, garlic, and mushroom in fried rice. "Exquisite?.."

Thank you for your interest in Japanese restaurants. The reason why I don't cut it is to make it more chewy after baking. This is because Japanese scallops are softer than scallops from other countries
so do I understand this correctly that after 1000 steaks ordered in Japan, this dude still doesn't talk the local language sufficiently to express how he wants his steak cooked, or say "thank you" in japanese?
I've been there, not a for a 430$ menu, more like 200-250$, and I honestly thought it was overpriced. The wagyu, prawns and scallops were beautifully cooked, but the side dishes were a bit underwhelming imho. I remember a course was fried rice with roasted garlic, and it was just that: fried rice, with roasted garlic. i like garlic, but that was quite monotonus in flavour. Also, I was there alone, at opening hour, that was the only available spot, and it was not a very joyful experience, being all alone. There was no atmosphere, and I felt a bit awkward seeing all that staff around me, just for me.

I'd say this is pretty much the opposite of pretentiousness. It's few high quality ingredients treated with the utmost respect and very simple and classic cooking techniques.
