You can cook the egg yolks until an instant read thermometer reads 80F. At this point the yolks are "cooked/cured" and safe to eat. I use this method with a double boiler in my tiramisu recipe as well. I hope this was helpful! ua-cam.com/video/OFMj8H0mrKs/v-deo.html
Wow. This look really good! I have one question. I want to make this for my children, but they don't like coffee flavour. I'm thinking about making strawberry tiramisu. Do you think it gonna work with this mascarpone cream? I wil replace the coffee mixture with strawberry sauce...
before adding the mascarpone should i wait untill the mixture get in to room temperature or i could add the mascarpone while its still hot, im sorry for my bad english:)

Hi . I made this. I have the following doubts 1. The whipping cream quantity mentioned is before or after whipping as the quantity increasss while whipping . I m confused 2. I added more citric acid to cream while making mascarpone. The cream in total is too bittery even after adding castor sugar in good quantity. How to correct this. 3..my biscuits were little crispy. Will it become during the resting time in refrigerator

I like the idea of cooking the yolks...to what temperature do you cook the egg yolks?
You can cook the egg yolks until an instant read thermometer reads 80F. At this point the yolks are "cooked/cured" and safe to eat. I use this method with a double boiler in my tiramisu recipe as well. I hope this was helpful!
