I can't make bread with it either, but it does work good for cookies and muffins, and great for chicken breading, or breading for anything really.

I’m totally with you Janet. I will never waste the money to make a flour blend ever. Keto baking ingredients are already expensive enough and I like that you built your channel on using coconut flour for the most part as well as a very small number of additional products like egg white protein, and flaxseed. Too many things can go wrong with a blend like you showed. Looking forward to YOUR next recipe video

I made the bread…it is absolutely amazing. It’s soft and delicious in my opinion. At least my batch was. My husband who isn’t even keto love it. I made exactly like Victoria made it.
Victoria has two different bread recipes that use her flour blend. I have tried both of them. I have also used your recipe for the bread using bamboo fiber. I can honestly say, I think all three are excellent. I have been rotating all three recipes since the first try of each. I am more than pleased with each.

Thank you for trying her blend! I use it a lot, (though I usually sub lupin flour for the almond/flax/pecan part) and I've noticed while it works great for sweet baked goods like moist cakes and muffins, I haven't got the formula right for savory things yet. That's what I was trying the other day with your drop biscuits after I tried the bamboo alone and then oat alone. The blend turned out the best for me, but the taste didn't live up to the beautiful texture and appearance. Today I'll have another go at those. I NEED biscuits in my life! 😄
If u do not know she does recommend strongly certain brands of the products warning that she tried other brands and they did not work. She is very precise about the oat fiber and the egg white protein powder.brands because not all brands are equal and some just taste bad. Thanks for the try!!!
I use her flour for biscuits. When I first made her flour I couldn’t find egg white I used whey protein it was denser but it worked. Now have egg white powder much better. The recipe I used was a biscuit recipe using all purpose wheat flour and I substituted victorias flour. I made this recipe many times
Watching various videos, I've come to the theory that this flour blend is best for replacing the wheat flour in standard recipes (versus those designed to be gluten-free or keto). I have yet to try it myself since some ingredients are hard to find here in South Africa.
Her flour blend is not meant to be a replacement for gluten-free flour. It IS a gluten-free flour replacement for regular all purpose flour. That said, I've used her standard keto flour 2.0 recipe using the oat fiber and almond flour options to make the Cook's Illustrated dream biscuits and they are fantastic like Wes says. I've also used it in a regular Betty Crocker recipe to replace all purpose flour and that also came out good. It seems like you used it in a recipe that is already gluten-free. Not sure why you would do that because it's already gluten-free and that's not what her blend is meant for. Absolutely no disrespect intended, but if you're going to fairly test it, you should do so in the way it is meant to be used.
The flour blend that I use with great success is
192 g bamboo fiber/flour
168 g almond flour
80 g egg white protein powder
20 g whole psyllium ground
10 g xanthan gum
Some recipes will need an extra egg, but I receive good results with cupcakes, muffins, etc.
I make mini lemon loaves using Lorann Lemon bakery emulsion (instead of lemon juice or extract) and the texture of the baked goods are perfect.
Her keto flour blend is for to replace regular flour...not gluten free recipes.
Hi, I'm from South Africa and we do not have all the ingredients to make Victoria's flour blend. So my husband came to Orlando for business and I showered the poor man with all the goodies from Amazon to make her flour. I baked her bread yesterday...what an epic fail. All I could taste was egg whites and baking powder. I hid it from my husband, crumbed it up and threw it to the birds. I still need to go and see if they actually ate it. I actually want to CRY, because I have put ALL my hope into this blend to be able to eat bread again.
Yes I've had some say they've had success with this blend but I personally have not.
Look up Deidre's Bread in the bread machine here on UA-cam. It's the best homemade keto bread I've found.
It looks like you did not use Victorias keto flour exactly. You substituted golden flax seed meal for the almond flour in her recipe. Is there a reason you did that? I am sure that that is why your bun was so dense. You can sub oat fiber for the bamboo flour, and sun pecan flour for almond flour, no where does she use flax seed meal in place of the almond flour. Perhaps if you try the recipe exactly you could have a better result.
She said I could substitute flaxseed meal for a completely nut free version
I’m positive Victoria’s printable recipe offers flax as an almond flour alternative. You ask why Janet would substitute: for me, the oxalates in almond flour are a major problem. After serving my husband “healthy” almond flour muffins every day for breakfast on the go (and often sending a spinach salad as part of his lunch-also high in oxalates) he developed a kidney stone. Needless to say after the pain, trauma, and expense of an ER visit-we’re cutting those items from our diet. A heads up to others)
She actually has a newer flour mix than the 2.0 thing.
I have upgraded to every one she is constantly testing it and trying to make it more like allpurpose flour

hi dear Janet, thank you. I live in germany and struggle often with the different ingredients. My everytime problem ist the almond flour. Here we have fine grinded almonds and also degreased very fine grinded almonds. In most youtube recipes is only "almond flour" mentioned. Is it only fine grinded almond?
Yes almond flour is just very finely ground almonds. I used to make my own using the same method I use for making sunflower seed flour.

Janet I love most of ur recipes, I can’t try them all cause I have dietary issues and can’t use some ingredients u use. The only thing I question with this recipe, should u have put in more xanthen gum since the flour mixture already had ingredient in it. I’m by on way as good as cook as u are, but just wondering? Thank u for all ur hard work and keep cooking!! ( I love ur slogan)
You're welcome. I probably could have gotten away with not adding the extra xanthan gum. I just was following the recipe with the exception of substituting Victoria's flour blend for the all-purpose flour

I do thank u deeply for all ur efforts. I have never had one of ur recipes to go wrong. But I have had a lot of different recipes that went wrong( not mentioning anyone) but I think it’s because u are well educated about what ur ingredients do togather. Thanks agin and God bless u!!

Funny you mentioned that: I made Victoria’s new “Amazing Keto Bread” today, but used the Einkorn blend (and subbed pecan flour for the almond flour in the Einkorn recipe). Other than the recipe calling for too much salt, it turned out pretty tasty! We only tested an end piece, with butter. I’m anxious to slice it tomorrow and toast a piece.
All the bread recipes I have made with her flour have been wet inside. It made good cookies tho.
Yeah unfortunately most baked goods containing xanthan gum always have a slight wet texture in the middle
I tried Victoria’s 2 blends. But being in Canada, I couldn’t get the specific brands listed. I can’t get bamboo fibre here at all. And importing is exorbitant. I had some success with sweet baking…cookies, cupcakes etc. Not anything savoury, like biscuits. Even after several tries. I much prefer measuring flours out for a recipe. I use your recipes and “all day I dream about food” Caroline Ketchum. All easy to understand, and they turn out great.
I just bought some bamboo fiber and I didn’t like as well as the oat fiber. I’ve only tried it in two recipes but the oat fiber taste best to me.

I actually made some biscuits last night. Only 1/2 cup of oat fibre required, so not much. Both my husband and I weren’t keen on the taste of the biscuits. We could distinctly taste the oat fibre. Usually I put oat fibre in a bread, it’s distributed throughout so you don’t taste it in one - two slices. I’m guessing with the biscuits, because it only made 6, the oat fibre was more concentrated. My understanding, from many UA-cam keto tutorials and blogs, is that bamboo fibre doesn’t really have a “taste”. That’s why people like it. It’s bland, and doesn’t add any flavour to what you bake?? But you’re saying otherwise.

my recipe has almond flour, oat fiber, baking powder, sour cream, butter and my flour blend has the almond flour, oat fiber, egg white protein powder and xanthen gum in it. I first melt my butter in microwave then add all my ingredients. Roll out in 1” to 2 1/2inches and bake in oven. This 7 to 8 biscuits and I store then in frig and warm up in mic and they taste as good as when first made!! 1c flour blend, 2tsp baking powder, 1/4c heaping sour cream & 1/2 stick butter
I’ve never made something just out of oat fiber, I always mix more than one flour

I actually had a biscuit with my egg this morning for breakfast. After sitting overnight, the oat fibre wasn’t as prominent in taste as right after I baked. 👍
I use the Victoria blend Nut free with FLAX and I get a perfect nise a real loaf of bread no yeast you should not have put more xanthan gum because the blend already has Americas test kitchen recipe for Dream Biscuits was tested with her flour by Highfalutin Low Carb on his site and they are Perfect She has since a couple of days ago came out with an addition to the flour and we love it granted I still make a lot of coconut flour recipes and some of yours as well....with .her bread recipe I get a nice large loaf with beautiful crumb and texture and I measure cup for cuo.....watch some of her videos if your interested....she explains everything....I have written to you about your recipes not turning out at times the way you show it but you never got back I like your recipes ....also there is no sub for the egg white potein powder
Be careful or she will report you to you tube like she did to Charlotte from Random Keto. I haven’t had success like Victoria claims with her first 3 versions of keto flour. I bought her recommended brands, I use a scale and stopped even trying. Thank you for a real comparison.

I'm so confused by your recipe.... First of all the xanthan gum is already in Victoria's flour mix and secondly you've added yeast to the recipe without allowing the buns to rise🤣
Please try this again WITHOUT the additional gum and let them rise with a pan of HOT water underneath while in the oven. Also, let them cool thoroughly before attacking them with a knife.
As stated in the video I did not use the yeast for rising in this recipe. It is just for flavor. Also as stated in the video these were cooled completely before slicing
