    We are trying freeze dried asparagus 2 ways today. For long term storage, we are blanching the asparagus for a couple of minutes and then freeze drying. We are also putting the asparagus on the smoker with some oil and seasoning to make a tasty freeze dried treat. We will taste test both versions and rehydrate the fresh freeze dried asparagus to compare taste and texture.

    For dinner I often roast whole asparagus spears (with the tough ends snapped off). I coat them in a little olive oil and lemon pepper then roast in the oven at 400F for 5-10 min. Whatever is left over after dinner gets frozen then freeze dried. They are a heavenly snack. I've never tried to re-hydrate because they're just so good as a snack. My friend who insists that she doesn't like veggies fell in love with this FD asparagus.

    I’ve long used unblanched asparagus for years! A bit added to a salad gives it a nice crunch. I’ve also recently FD unblanched asparagus which came out amazing for a snack. I haven’t tried rehydrating any yet. They be great with a bit of seasoning.

    FYI- you can eat raw asparagus without issues, it's equivalent to eating raw green beans, very delicious.
    Like the smoked ideas, can't wait to try.
    Have FD 'd asparagus without blanching, great snacks, very yummy.

    You need to remove the hard/woody portion off the end. Asparagus has its natural break/snap point determining the good nutritious and non nutritious portion. Asparagus should never be bigger around than a #2 pencil.

    So first did you freeze before you put them the freezer dryer? And can you put them in a steam and not a pot water?

      Yes, they can be steamed, boiled, baked, smoked etc. Or even raw. I did not prefreeze, but it will never hurt.

      I froze my fresh asparagus without blanching. I want to freeze dry the frozen asparagus so Do I need to blanch them before freeze drying them?

    You really don't need to blanch any veggies, it only helps to keep the color. Freeze drying should take care of that, unless you are planning on leaving them in the sun and air.

      Good to know….will try mine fresh next time….will save time and energy. BTW….freeze dried asparagus is delicious, plain or seasoned.

    Does anyone know if the bottoms that I usually discard could be FD and then powdered? Use in soups or smoothies? Someone said they are not nutritious and maybe that is true but doesn’t really make sense to me?

      I cut the ends until I reach the hard fibrous area. Freeze them until I have enough, then make asparagus soup. Recently, I have freeze dried the cut ends along with cut up and seasoned spears. I am sure the cut ends will make a great soup whenever I “get around to it”.

    The real problem with preserving asparagus is the best you can hope for at the end is asparagus…

    Pole beans are 'mildly' poisonous, when you eat them raw! NUM~!
