I just came upon your channel tonight. I enjoyed your Aldi’s shopping and you talking about how you are thinking about the challenge. It’s just my husband and I. He is extremely easy to please. We both enjoy most leftovers. We’re retired many years and are laid back about most things. Our challenge is going pretty well. I’ve always cooked extra w most meal components and then put individual ingredients into the freezer. That way we basically mix & match from those items to put together full meals many nights per week. In other words…we don’t cook a new meal every night. It works great for us. Keep doing what you’re doing. Your meals looked great. Blessings. Susan
I love the idea of mixing hummus with vinaigrette dressing. I always have a little hummus leftover I don't know how to use up. My husband likes to put hummus on his tacos or nachos instead of beans.
OMG!! You are a Lions fan, I'm born and raised in Wisconsin living about 35 minutes from Lambeau Field married to a die hard Packer fan :( I've been a Lions fan for 32 years GO LIONS!!!!!
I love cooking with orzo. So many great recipes from our time in Italy. Lemon, chicken, orzo(or even linguine), and artichoke hearts is a southern Italy dish. Orzo is always complimented by cheese. Romano,pecorino,or parmesan work well with a small quantity.
Keep talking about the food you are making, we truly enjoy your excitement over the meal that you are preparing. I tried a potato for nachos recipe last week, yeah, no. We suffered through one serving and composted the rest, too hard to chew. But made burritos with the rest of the ingredients. We made a rolled spinach and cheese lasagna yesterday 😋.
