You're doing fine❤ I would suggest getting a cast iron Dutch oven. You need that for heat consistency. Preheat oven and Dutch oven to 450, then drop to 400 when you put the bread into bake. Bake 20 mins, remove lid, and bake another 15. Bread should be to 190 internal. Your loaf was moist because it cooled in the pan, and there was nowhere for your moisture and heat to go. I feel like bread is really hard, till it isn't. It's a learning thing. I'm knew to sourdough... I didn't think I would ever get right... till I did. Now I try different things all the time...❤ you're doing a great job!!! 😊
I do not bake my bread in a Dutch oven, I use a glass loaf pan. I have found that when I take the bread out of the oven if I leave it in the pan the bottom gets soggy. I take it immediately out of the pan and cool on a wire rack, no more soggy bread. Keep trying, homemade bread just tastes so much better.
I have very limited experience, however leaving it in the pot and with the lid on, seems to me like it would sweat and therefore you had a bit more moisture there. Love watching you work through the process.. Can't wait to see the next loaf.. I would try to find a heavier pot as in cast iron.. or something like that.. maybe find one at the thrift store.
I used to have a bread maker, and my bread done in it or dough from it was always a flop! Then I switch to making dough in my stand mixer and following recipes with lots of good reviews, and it was a total win! Also the more you do it, the better it comes out. So keep at it and don't give up.

You're doing a fine job. My only suggestion would be to get an enameled cast iron Dutch oven. They are excellent for bread baking.

Yes buttering the top helps. That's why I mentioned it. But don't do it to a crust Italian bread, you'll lose the crusty part😊.
