    You're doing great! Most people doing the challenge have large stockpiles of staples like sugar, flour, cheese, etc... You didn't, and you really DO need those things when cooking at home. Don't be so hard on yourself. :)

    You should not feel guilty at all! I admire you for doing this in the first place. Maybe use some of your preserves, it will let you know what you like to use and you can make more for next year. Two thumbs up!!

    you can make that lettuce continue to grow by getting the root end to grow new roots. just dont cut all the leaves down too low. the smaller inner leaves will grow into the bigger leaves. the plant will need some leaves in order to photosynthesize. you can do the same with celery. you can find many great videos on youtube showing you how to do this. it will keep you in lettuce until you can grow some from seed. when you do grow from seed, think about having a cut and come again greens patch. you can just pick outter leaves off the lettuce/kale/chard etc to leave the plant to continue growing. you can end up with a highly efficient daily salad buffet with just 10-15 plants.

      I actually threw the bottoms into glasses of water yesterday with this in mind! I’m not sure it will work, since they seem to have chopped off the roots pretty well, but we’ll see! Still crossing my fingers and hoping for some growth. Thanks for sharing your tips!

    You got this! You did exactly what I would have done. I use the same sugar from aldi. Walmart has it too but its more expensive there. If you have an email you can post I could send some tried recipes for tortillas(all u need is a rolling pin to make them), naan bread, scones etc. Naan bread is amazing and so versatile. Great for a beginner and freezes great.

    You will find that Aldi has great quality, and the prices are wonderful. There ads drop usually the day before they start, so check online for what their special offers are. If you like fish/seafood, their once a year sale is just before ash Wednesday. You wild find that as you scratch cook more, your pantry stores will increase. You will begin to have backups for your regular go to items. I keep one box that is open and one for backup. When I open my back up box/bag, I add that item to a running grocery list. If I catch a good price, I will stock up for 6-12 months worth. You are doing awesome!! No explanation needed. We all do our pantry challenge our way. Just take a deep breath and say "I am giving myself grace". 😊😊

    Baking your bread products is a great goal...since I started the Sourdough journey in 2020, we haven't purchased any bread products...artisan loaves, sandwich loaves, tortillas (no press needed), biscuits, piecrusts, poptarts, crackers, pretzels...no weird additives and definitely less expensive❤

    Stop beating yourself up over $80 of groceries! That’s great!! You’ll get so many meals from what one night out at a fancy restaurant would cost you! You’re doing an amazing job! Be sure to let us know what you think about the butter when you do your taste test!

    No need to stress, get burnt out and feel like you have to explain yourself. Your doing so good. It's a challenge. Take a deep breath. If you have to run to the store then so be it. You dont need to explain anything. It is what it is. Who are we to judge anyway? I think you did very well and only spent $80. These days people spend a lot more and get a lot less. Your doing great. ❤

    I love the pantry challenge every year because i learn so much. Your grocery haul was so good and I like how intentional and well thought out your choices were. I got excited over the things you got at Aldi. Audi recently opened up in our area about 50 miles away but we are always having to go to Shreveport so i will have to check it out.

    Hi Mary,
    You made excellent choices.
    The block cheeses you chose are RBST free...excellent choice.
    The Irish butter is made from grass fed beef makes it a wise choice.
    The sugar was also a better choice. Just to list a few.

    omg your oranges are so big. I have only seen the tiny ones the size of a quarter. Omg wish i was shopping at your AlDI's. Really nice haul. Very useful things for making other items.

    I would do the same thing. It’s not smart at all to run out of everything and then drop a ton of money to restock things. You’ve done yourself no good at all. I agree if you focus on using what needs to be used that you normally don’t use or things you have a ton of, you WIN in this pantry challenge. This is why I’ve been hesitant to do the pantry challenge. I don’t want to end up spending my husband’s entire paycheck to restock my pantry. Tortillas are super easy. You don’t need a press. I did it by hand forever before purchasing a press. The press makes them more even, but you can roll them out very easily. I make all of my own bread products. I haven’t purchased any bread products in over a year. Not only is it healthier, it tastes better. I freeze it all in small batches. So like, I freeze 3 hamburger buns together bc that’s what we use. 2 for my husband and 1 for me. I freeze loaf bread in 4. Take out 4 pieces at a time. That way I don’t end up loosing bread to molding. Homemade bread doesn’t last near as long as store bought. And a tip, add 2 Tablespoons of pectin to your dough. It helps preserve the bread longer. I get a lot longer life out of the bread than I do when I don’t add it. You may need to add a little more liquid to the dough, but I usually don’t have to. It doesn’t alter the crumb texture of the bread at all. Just helps with the shelf life of the bread. Any brand of pectin will work, but the low sugar pectin, like Pomona’s, doesn’t work as well. I use Hoosier Hill brand that I buy in bulk from Amazon. I make jams and jellies as well, so the pectin gets used before it goes “bad”. You’re going to love having all fresh baked bread products. I did buy hamburger, hotdog and hoagie bun molds off Amazon, but you don’t have to. I just find the buns are more consistent in size. I weigh out all of the dough so they are all the same size. And you’ll discover how many grams to use per product as you play around making them. I used around 75 grams for hamburger and hotdog buns and 100 grams for hoagie buns. Once they go through their 2nd rise, they are the perfect size for us. It definitely takes a little more of your time to make all your own bread products, but it’s more than worth it. Just find your rhythm and stay on top of it so you always have what you need. I usually make more when I’m down to one freezer bags worth of bread product so I don’t run out. Good luck! You won’t regret your effort.

      Yes thanks for sharing the tip about pectin. I just made homemade bread for the first time in many years. Turned out really good. Froze one loaf and i'm using the other. I think I need to add more water bc the loafs were not smooth on the top once i got them into the loaf pans. Everything else was perfect. I rolled it up nice and tight. I was worried I over kneaded it. I dont know if thats a thing with bread making or not. I did this all by hand. The youtuber I got the recipe from, shes been making her own bread a long time now. I messaged her and showed her a picture and thought maybe i need to add a little more water. Trial and error i guess LOL but i'll get there. I'd like to not have to buy bread.

      @athomewithtexasgirl, it can be frustrating when you start making bread from scratch. I usually always had dry tops of bread before it went into the oven. It never failed. After the 2nd rise it would be a bit dry and not as smooth. In my case it was a humidity factor. I had been wanting a bread proofer but didn’t want to put out the money for one. My husband bought me one for Christmas. It has changed my bread game for the good. It controls the environment your bread rises in. It is completely enclosed, and you control the temp, plus you fill a small bowl with 1/4 cup of water. I used to cover mine with a towel and a heating pad bc it’s always on the cooler side in my house. The pamphlet that came with the proofer had a huge explanation about tops being dry. It’s bc they are still open to air. Even covered unless you use Saran Wrap or tin foil and tightly put it on. I’m not sure if you can over knead bread or not. But I knead mine at least 10 min, but sometimes 30 min. I’ve never had an issue with anything other than the dry tops.

    Make sure you open and take a little bit of the milk out of the container before you freeze it. The container could swell and burst. So, just use a little then freeze. Your doing a great job. This challenge is about being mindful of using what we have, but, definitely not about deprivation, or making your life miserable. Your ok to buy snacks if you want them! Your kitchen, your rules. I feel like it just makes me more mindful on how to use what I have on hand, add it to my meals, don't waste, and be more creative! But, if i have a craving for something I'm not going to deprive myself of something for this challenge. Because I love chips and salsa, and I make my own salsa, but, I'm just not gonna make my own chips! Js. I don't have time for that. I cook from scratch for almost everything else, its the one thing I give to myself, just like the Takis you bought, some things can't be duplicated at home.

    Sounds like you're doing great! I am late to the pantry challenge and ended up shopping this evening. Guess I'm ready for the coming weeks!
    FYI on sugar--unless it specifies that it came from monk fruit, palm, etc. it all comes from sugar cane, i.e., cane sugar. I personally try to get organic because organically grown crops have less of an impact on the environment

    The pantry challenge wasn’t designed to punish or guilt you. It is to use up things you’ve got on hand before they go bad and prepare for the next growing season.

    Yeah while in Aldi I’ll have my Kroger and/or Walmart apps open to compare prices. Not sure if you know the sugar you bought is cheaper at DT. I believe it’s the same weight.

    We keep two kinds of butter around at all times - baking/cooking butter, and eating butter. The good eating butter is way too expensive for how much I bake!
    I'm actually trying to stay out of aldi for my version of the pantry challenge, because I stick to a small list better at the Meijer equivalent, whereas at aldi, I buy everything.

    You'll only need a tortilla press for corn tortillas. But I used to press the dough between plates.

    The butter is really good. Aldi does have really good cheeses. You gave me another idea for Super Bowl game with Brie. I have a can of cranberry sauce that I’d use.

      I keep powdered milk on hand, especially for baking. I don’t use milk to just drink as a regular beverage so even a half gallon often goes bad

    You should be so proud of yourself for spending $80 after three weeks of spending zero. Also this will also last you several more weeks. Think about what that spend was each week and you will see that you have hit your goals
