    Hoping it’s OK for me to share this here, as I really want to tell someone about it! I’m so inspired by the pantry challenge, but I don’t actually have a pantry. I live in a small flat, and only have a dry goods cupboard and a tiny freezer.
    I’m also chronically ill, both physically and mentally, so my spoon drawer is empty most days.
    This is why I’ve started making freezer meals. I usually do that about 3 times a year, and I make everything from scratch those times (including bone broth).
    Having ready made meals in my freezer is invaluable for those days/weeks/months when I’m not able to do anything, but also leaves me with more energy to do the things I want when I have space for that in my life. I also live alone, so doing big freezer meals reduces my food waste so much!
    So, I made up my own pantry challenge. After a year best forgotten, my freezer and cupboard was neglected. I had no idea what was in them, and kept buying easy meals, or getting Hello Fresh boxes, and that isn’t really on my budget. I decided that my pantry challenge would be to fill my pantry (or freezer), setting me up for about 3 months of meals. I also wanted to use up as much of what was in my freezer and cupboard as possible.
    After last week, not only is my freezer filled to the brim with meals, I also sent about 34 dinner portions to my Mom, Dad and Grandma. And, I’m happy to say, the only “raw” food in my freezer at the moment is two chicken breasts, a tiny bit of vegetables and some berries. It feels so good, and I’m so proud of myself!

    I'm in "Becky mode" today. Used up leftover bread and bagels and made french toast and breakfast bagel sandwiches for the freezer. Made cookies and extra dough for the freezer. Took some green peppers and onions before they went bad, put them in the processor, and placed them in ice cube trays, which I can use for cooking. Lastly, making pizza dough and hand pies for the freezer. Thank you, Becky, for your motivational videos and helping me to rethink how i see and use food.

      @@marilyna597 yes! Me too. My husband closes our small business on Super Bowl Sunday so I get an extra day off and I plan to have food in my canner, freeze dryer, dehydrator and freezer! All whilst making yummy “football food” all day. 😂🤣

    What i like is your freezer meals are filled with good things..not all the processed creamed soups and crap that others use in theirs. You are an excellent cook. Becky even if you don't love the freeze dried potatoes you can use them as a thickener for stew or soup.

      I agree... Not a fan of the faux cooking recipes that so many base their whole channel on. Once you know real food, that stuff tastes gross.

      I KNOW RIGHT. I laugh when I see these channels like "quick home made dinners!" and the "home made" part is just throwing all the processed pre-packaged stuff from the store in the Instant Pot.

      @@AlexandraAndStuff In all fairness it is better than McDonalds after a hard day at work and coming home to hungry kids. I hope you have/had the privilege to stay home while your kids are growing up. Others don’t and that’s the best they can do.

    I started January with a nearly empty fridge d/t a week's vacay. Its getting real around here now y'all!!! I am out of butter, fresh veggies and garlic!!! There are still some freezer meals thanks to inspiration from Becky, but I'm super proud of all the awesome meals we've had this month!

    Even if you don't enjoy the flavor of the reconstituted potatoes on their own, they make a great addition to soups and stews to thicken. Also blitzing them to a fine powder and making potato bread is a good option. I love instant potatoes to thicken potato soup as well. Lots of options :)

    Becky, if you're tossing the freezer bags, that you have Curry, etc in anyway, you might as well cut then open while the contents are still frozen and put the whole frozen blocks of soup in the pot. A lot less messy and you get more of the product

    Sometimes when I freeze dry potatoes (especially mashed sweet potatoes) they take forever to process. So I pull then out after the cycle, put them in the food processor to process into smaller pieces then put back in to continue the cycle and they come out sufficiently dried!

    Love all the videos! Becky, what about filling a couple of mason jars with dry rice and putting them in the upstairs pantry for now. Then you only run downstairs once every 4 times? 😊

    I always add 10 extra hours to my freeze dried cycles to be sure food is done. Also if the cycle ended and you didn't get the food out when it finished push the warm tray button. Otherwise food will start absorbing moisture. Trays need to be warm when it comes out. Don't push the defrost button until you know it is done when you are packaging. You can put trays back in and push the more time button.

      If you add 2 hours at a time and weigh it each time you can guarantee it's dry if it doesn't lose any weight in the two hours

    Thank you for the zucchini in your red sauce idea. I made my meat sauce last week adding a zucchini I had in the produce drawer that was staring to get a little soft. It helped thicken my sauce and adding extra nutrition.

      @@tibbs4000Yes they eat all the freezer meals. She has a lot because she already had some but since she was about to have a baby and wouldn’t be up to cooking, she didn’t want to go through most of her stash so she made more. Between her being a busy new mom, renovating the backyard and the postpartum complications, it’s a good thing she made more.
      This way whenever she gets the time to cook she enjoys being in the kitchen more since she has healthy inexpensive options when she’s not up to cooking and doesn’t feel guilty. Plus she grows a lot of the ingredients herself or buys in bulk and often gets deals from farms so it’s probably not as costly as it looks. That being said, it is alot of food for 2 people lol.

      @@pinkrainclouds2190 logically though...if she is still making freezer meals on her channel before eating the ones that are already stuffed full in the freezers, then no they aren't eating them. It's evident they aren't eating the food they made from scratch and stored, not much anyway.

    Hearing your baby in the background makes me think how exciting it will be when he starts on baby foods 2 see what kinda stuff you come up with 4 him.. There's nothing better than a sweet, pleasantly plump baby. It shows they are well takin care of & seem extra cuddley...

    I’m still pantrying it up. 😂 I really haven’t gotten as far as I want with using things up. Instead of buying tortillas today, I thought about making my own tortillas, but I decided to play it easy on myself and turn our tacos into rice bowls.

    Hey, Tip… BTW-Always enjoy and learn from you!
    When using ziplocks, if your going to throw away anyway, rather than opening top, flipping over and trying to get the ‘goods’ out past the zip lock area, its easier to just use scissors to clip off a bottom corner and squeeze out from top to bottom… anyway, works better for me! I Do try to get several uses out of plastic, but when it doesn’t have another use, its gotta go!

    Took my (from your recipe) curry sauce out of the freezer yesterday and added roast cauliflower and carrots with some green peas. Mine had chicken in it already. Served it over rice and it was so easy and a hit! Thanks for the recipe!

    Love watching you Becky! I just got a half of a hog yesterday. I cleaned and defrosted my freezer. I ordered bags off of Amazon and my freezer looks beautiful! My daughter was jealous and I have already sent her the link for the bags. I gave you credit for the idea.

    Another great thing to cook is a pork loin in the instapot. I cut up an onion, put it on the bottom of the instapot and put the pork loin in. I cut it up some. Then you pour apple sauce over it and add the cinnamon, a little ginger, cloves. We make gravy and use some of the pork for tacos with mango salsa. So yummy.

    I love getting stuff used up. It is making me feel so much less stressed that the pantry and freezers aren’t overflowing. Also I’m using up the fruit that I canned and really enjoying the variety. Hoping for another successful garden season. I’m new to cooking for two people so I’m planning what I need to plant for two people.

    Great job Becky! If you run out of coffee creamer, grab a can of condensed milk, put it in a quart mason jar, fill the rest of it with milk (if you have it) and you now have a delicious coffee creamer!

      I never knew how exciting it would be to make my own bread!! LOVE the no need bread recipe! Glad I watched todays video as mine dries out so I will try the damp cloth trick. For a yummy snack…toast the bread and spread Boursin cheese over it…delish!!!

      @Donna Fisher sometimes I drizzle maple syrup on it if it's not to sweet itself. During the holidays I did a gingerbread flavor and pumpkin spice. I'd just google baked oatmeal flavors! The options are endless!

    An airfryer is great for something like baking the naan so it’s like freshly baked naan! You would’ve enjoyed one soooo much! The Cosori Dual Blaze is a fantastic one with two heating elements (you don’t have to turn things or shake a basket. Since there is no inner basket either, it’s also bigger, you put the food directly into the drawer. Looove it! 🤗

    I’m sure wishing I had some freezer meals ready to go this week! I have doctors appointments almost every day this week and my doctors are an hours drive away. So by the time I get home, I’m too tired to cook a fresh meal. Still not doing take out, but easy (icky processed) things to through in the oven. I’ve set a goal and promised myself, that each time I prepare a casserole this month and from now on, I’m going to make two and put the second one in the freezer!

    instant mashed potatoes work well as a thicker for soups, so if you don't like how the reconstitute, you can still use them sparsely for thickener.

    I had a pretty good recipe for biscuits, but they were never as flakey or fluffy as I would hope for. So, I decided to try ur recipe this weekend for biscuits and gravy and oh my goodness, these were just perfection! I absolutely love every single one of ur videos and can’t tell u how much I appreciate everything u r showing and teaching! You have been helping guide me out of chaos and into a more organized and happy life.     Becky, once your potatoes are done why not try to put them in a blender and turn to a powder? You inspired me to make the oatmeal bake for my husband! I used peaches and cinnamon and vanilla! You're the best, Becky!!

    I've reorganized 4 freezers, prepped mahi mahi fish, made three freezer meal lasagna, cleaned, organized and prepared my seed and planting schedule, prepped meatballs and sauce and am now getting ready to make roast chicken dinners for the hubs to take on the road for work.
    Becky is my angel!
    She gives me direction, energy, hope, even if something doesn't work out.
    I've spent a very long time incredibly sick and wondering if I'd ever be able to pull out of this spiral. She has helped me so, so much!💕😇

      I love the gray. This is what we used on the ship lap in our bathroom remodel. We cut our own using 4x8 luan boards. The gray is a neutral color great new choice instead of beige or white. I new she wasn’t going to like all that beige. I’m almost 70 so I don’t have Becky energy,but who does!😊

    Mrs. Becky, I mostly use my freeze dried potatoes for thickening soups/stews/chowders and gravies. However, when I freeze dry them I do prepare them exactly as we make them, for the ones we will use within a year or two. But, for long term storage I still season but omit all fats, to help keep them longer. I use them also to make "Instant Potato Soup" by putting whatever I put in my potato soup into the storage container in the dried form. When I need it in a pinch, I just add boiling water or broth or hot milk and butter, stir in and allow to sit for just a minute. I often use them for homemade potato cakes. And, don't forget potato candy, potato bread, also...NOT like you need one more thing to do, but gnocchi

    Becky you should keep your jar of yeast in the refrigerator to keep it fresh, room temperature tends to reduce its activity.

    I had the same surprise eggs from one of my Easter Eggers last week, after no eggs in forever! I checked the nest box for grins and there were 4 beautiful blue eggs! And for sure the store bought eggs are way smaller than they used to be!

    Hi Becky ;) I noticed in the freezer organising video that you said you had a lot of riced cauliflower that needed using up.
    I just wanted to come with an idea that I use often because I’m not to happy with the cauliflower as “rice”
    Use the cauliflower rice as you would the shredded summer squash it adds some veggies to a dinner - when I do that with my curry, meat sauce etc it always turns out wonderful 🥰

    I do it the old fashion way but while doing the pasta I steam broccoli in the same pot. Brown ground sirloin with red pepper flakes then combine everything with my cheese sauce and bake. Its very good

    I know this is a year old but putting a shower cap over your bowl for when you are waiting for your dough to rise it will not dry the top. I got this tip from John Kirwood who is a retired Baker.

    I was really allowing the enemy to interrupt the peace I get from watching your grow this morning while reading horrible things people can say. You are so strong and I commend you for not feeding into the negative. .wisdom beyond your years. It's an honor and a privilege to be able to send my students to your channel, website and other social media up learn.     The tray limit on a medium is 2.5lb food per tray. I go over a bit here and there but that's a guideline to know how much to fill. If you do too much ice may build up on the drum so thick that you'll actually have to defrost if mid run because it struggles to pull enough moisture.

    If you don’t like the reconstituted mashed potatoes then you can always add them to soups. Chowders potato leek and loaded potato soups for example. Or use it as a thickener.

    Just a tip. After you zest a piece of fruit, wrap it in Saran Wrap before putting it back in the fridge. This keeps the fruit from drying out.

    Twice a year, I use do an “eat what you own” month. I might still get something at the grocery store but was mindful about it when I did - like no random things added. The pantry challenge is a great reminder that I need to do it again soon

    Hey Becky,
    When you rehydrate your mashed potatoes, don’t over mix while rehydrating. You’ll keep the texture nice. I only stir once. 😃💕

    I always hated getting thick liquids out of ziploc bags. I found if I can’t reuse the bag, I cut a corner off and squeeze it out like a make shift piping bag. Then I don’t have to contend with the zipper opening

    Just a tip if you cut the conner of the zip lock bag when putting it im your pot it is less messy and less waste

    I make curry green beans with my Chicken Tikka Masala as a side. I lightly quick stream green beans in microwave for just a few minutes. In the meantime I sauté cumin seeds in butter & oil. Add onions and sauté until golden brown. Add sliced mushrooms and cook for few minutes. Add curry powder to taste and extra 1-2 Tbsp butter. Stir to combine then add lightly steamed green beans. Stir and cook for several minutes. You can also add a small can of drained chick peas if you like.

    I'm going to start looking into freezer meals because it's so easy and ready to go.
    I have an ankle sprain and fractured I'm struggling... My mother in law has been a huge blessing cooking for us and my husband as well coming from work and take care our 3 kids

      What I have always done is try to make the “one for now, one for later” method. So, 2 lasagnas, 2 meat loaves ….. you get the idea. It’s a great way to start the freezer meal way of cooking.

    Add a smaller tv screen to the wall in the dining room/kitchen. Makes an alternative entertaining zone. For optional viewing or keeping up with the scoring whilst prepping or entertaining en masse. Or just for music streaming ...

    One way to brown sausage like that, for future reference, is to put them on a sheet pan and use the broiler to brown. That way you can still be doing other things while it browns.

    Wow. We always made macaroni cheese with white sauce with some cheese in. Not just cheese and butter. We then topped with breadcrumbs, sliced tomatoes and a bit of grated cheese. A sprinkle of dried parmesan boosts flavour without having to use much. Price of cheese right now in Germany, those big blocks you have... That's WEALTH! Milk and cheese prices have basically doubled in the last 18 months. So my frugal recipes from my Scottish youth come in handy!

    I just put a plate over top of my bowl when I am letting dough rise. It always works great and there’s zero waste.

      I see that bread can be made, proofed, and baked in the Instant Pot. I don’t eat bread but it looks good in the pictures that I have seen done in the IP. I would love to try making it if I wasn’t on a low carb diet.

    At the start of each new year, I try to "eat myself out of house and home". I purchase in bulk, and stock up during sales. By the end of the year my pantry and freezer are bursting at the seams. My goal is to get the freezer empty so I can defrost it. My self-imposed rule is to only buy things that I need in order to use the things I have. I applaud you for not going to the grocery store during your pantry challenge, that's very impressive. I've already spent $53.78 on food this year.

    Freeze dried potatoes - you can add it to soups to thicken it! Especially potato or creamy soups.

    when my freeze dried items are close to being done, I weigh each tray on a kitchen scale, write it down, then return the trays for additional time (2 hours.) Then at the end of those 2 hours I will weigh each tray again. if they weigh the same then they are finished. If they have lost weight then they go in for 2 more hours and I repeat the process until all trays are not showing any weight lost.
