Regarding chocolate chips - I often find even the best ones like scharfenberger, don’t melt as well - I simply use a good quality dark chocolate bar and use a good knife to cut it up and create my own chips or chunks
Getting good chocolate chips is a real struggle here. So I have ended up using chocolate chunks in my cookies and muffins. I absolute love the 55% amul chocolate. I chop it into medium sized chunks and add those to my recipes.

Guys, if you have difficulty finding Brown Sugar, you can use molasses/treacle . Just add 1tbsp to 1 cup of normal granulated sugar for light brown sugar and mix it thoroughly. If you want dark brown sugar use 2tbsps. Molasses is available easily online and it is quite economical , if you use Brown Sugar frequently.
In place of chocolate chips, I just use Amul Dark Chocolate chopped up into chunks. Works great for cookies-much better than those tiny chocolate chips.

We have Soft Brown Sugar, which is easily available and amazing to use and it is 'Parry's Soft Brown Sugar' and we use it for all purposes because Brown Sugar is much much better that White Sugar.
In delhi, pigmento has their own vanilla extract thats really good and inexpensive. Even mawana fine brown sugar is quite. Totally agree with you on the chocolate chip scene here in India 😒
Hershey's 1 is too expensive and the other brand u mentioned has bad reviews on Amazon. I always struggle to get good quality chocolate chips. And what abt the home made cream cheese ?🤔

And the departmental stores don't have or keep Amul or packaged whipped cream. Once I was able to get my hands on an expensive whipping cream but it was in big pack so couldn't buy it. 😥😥

I have experimented a lot with baking myself. I can relate to you so much. Through the years after loads of trial and errors and near disasters with my experiments I have learnt a few things myself. This video is extremely relevant for Indian bakers. Very much agree about the Amul dark chocolate and d'lecta cream cheese. I had ordered Philadelphia cheese once and it costs a fortune here. I wish we'd get better baking supplies here like we do abroad. A question for you- I ended up buying the 75 and 90 percent Amul bitter chocolate. It's too bitter. What do you suggest I do with them?
Just a suggestion please do try coconut sugar,coco powders and honey from our Indian make brand Indian natives,the guy is very hardworking almost similar to ur age.Also try chocolate from sihi and do give ur feedback. P.S. am in no way connected to these brands but am a loyal customers of theirs.I use to use Hershey's before but now I try to use more indian brands as possible. I use a lot of Blue Bird products in my baking like their Vanilla essence and Castor Sugar. That's mainly because it's freely available and also affordable. Do you recommend the same?

Hi Well in pune we get lot of stuff at quite cheap rates from bakery supplies stores. They r not always from a big brand but quality wise they r good. If everyone use the branded products shown in ur videos m sure only rich ppl will be able to afford them. Cuz in cities like pune where lot of homebakers/bakeries use low quality ingredients n sell it cheap there r hardly ppl who would go for high priced cakes etc. We do get rich, Tropolite, Fiona brands here. Morde, Callebaut n many other brands too. Mawana brand is quite popular for castor n brown sugars.
You are right . Only quality matters. Brand does not .25 years ago Amul was a great product. But now its ghee is amix of mostly vegetable oil, shortnening, ( Read Dalda/lard) , some ghee , and essences which gives flavor and smell of the ghee

I like to add Urban Platter Vital Wheat Gluten to my All Purpose Flour whenever I bake breads. It seems to be expensive but isn’t actually as my 500gm packet has been used atleast 30 times .

I like to add Urban Platter Vital Wheat Gluten to my All Purpose Flour whenever I bake breads. It seems to be expensive but isn’t actually as my 500gm packet has been used atleast 30 times .

For food colouring, do try Magic Colours, it's potent and holds well while baking too!
