- When I started baking 7 years back, I was baking one disasters after another and back then, if somebody would've told me that I'll have a baking blog and a book, I wouldn't have believed them! 1:01 Understand your ingredients and the science of baking. Take baking powder and baking soda for instance. BAKING POWDER has baking soda and an acid in it so it's reactant itself however BAKING SODA is alkaline in nature and needs an acidic ingredient in the recipe to react with.
So he only uses baking soda in recipes which has an acid going in it or else you'll get a horrible soapy taste. He uses it for Chocolate cake, Carrot cake or any desert with citrus in it.
1:36 SUGAR
he doesnt like using granulated sugar because the chunks can be too big and they don't always melt in the oven giving the cake an unwanted crunch, however, he uses the sugar in anything he's making on the stove like caramel ♡
1:54 Make sure your ingredients are at ROOM TEMPERATURE especially the ones you store in your fridge like your eggs, butter and milk.
If you eggs aren't at ROOM TEMPERATURE, place them in some room temperature water for about 5 to 7 mins then theyll be ready to use.
For butter, the consistency you're looking for is softened. When it's right out of the fridge it's cold and hard to emulsify. However cold butter is good for pies, crumbles and crisp.
2:34 He also doesnt use melted butter for his cakes because it doesn't have enough structure. Only use melted butter if the recipe calls for it. So what should your butter look like? It shouldn't be completely hard or completely melted. It should have some structure and be soft to the touch.
2:50 PRECISE MEASUREMENTS. The most accurate way or weighing your measurements is by using a scale but since alot of us don't have access to the scale, you can use measuring cups spoons. Use a spoon to transfer the ingredients Into the measuring cups and then level it off with a knife or the back of your spoon. Never pack down an ingredient like flour otherwise you'll get the wrong measurement.
3:45 ALWAYS PREP YOUR PAN CORRECTLY.
Use a pastry brush or fingers to coat the bottom of your pan with butter or vegetable oil.
Parchment paper is your bestfriend, it makes sure you get your cake out smoothly each time. Fold it into half, then another half and twice diagonally. Measure it from the center of the pan and then cut. The parchment will line the pan perfectly.
4:20 KNOW THE DIFFERENCE BETWEEN PARCHMENT AND BUTTER PAPER.
Use parchment paper to line your pans. Butter paper isn't always heat resistant and sometimes loses it's shape. However, it's good for wrapping food. Once it's done.
4:30 ALWAYS ADD ONE EGG AT A TIME
if you add more than one you risk the chance of splitting your batter and mix it well before adding the next. Eggs are naturally watery.
4:49 NEVER OVER MIX WHILE COMBINING YOUR WET AND DRY INGREDIENTS.
Many novice bakers are led to believe that the more they mix the batter, the better the cake will turn out but that's not true. When comibinging wet and dry ingredients he stops using the electric mixer and uses a spatula to cut and fold the ingredients together. Use the spatula to cut the middle on the mixture, scrape up the mixture from the bottom and gently bring it to the top. Continue doing this slowly till it's fully incorporated. This is called the CUT AND FOLD TECHNIQUE. If you overmix at this stage what happens it you can potentially knock out all of the air out of the batter resulting in a dense cake. Only mix until you dont see any large flour pockets in your mixture.
5:42 ALWAYS PREHEAT YOUR OVEN.
Time and temperature always affect the taste and texture of baked goods and starting in a cold oven affects both of these things.
5:52 Always place your baking tray in the middle rack. The time required is always stated in your recipe and may vary and be slightly shorter or longer with different ovens so monitor it but dont keep opening the over door because everytime you do that you'll disturb the baking process.

There's one more tip you forgot to mention. Never let your batter rest, some people do that and it leads the baking powder or soda to lose it's rising ability.

Very good tips especially the baking soda tip because my mom always complained of the overpowering taste of baking soda.now I know that when a vanilla cake calls for baking soda I shouldn't add it bcs it doesn't have any acidic content to activate it

Whenever I bake a cake I definitely think of u.
I always over melt the butter, use cold eggs and cold milk straight from the refrigerator and definitely over mix the batter.. oops! thanks for the tips

I also made a lot of mistakes in the very earlier stage while I got microwave convection oven
Even I didn't know the difference between microwave mode and convection mode before 11 years ago
But now I know my oven very well

Don't forget always sieve the flour to soften it and mix dry ingredients seperately so the baking powder/soda incorporates itself properly.

Oh n i love your serving plates. What arr they made of? Is it wood? Resin? Also your kitchen setup is very rustic looking. Gives a library like vibe at first glance n then u realize it's a kitchen. Love it!
