      I prefer beef above all. Chicken is not as satisfying as beef and I get sick eating pork. But woweee beef bacon yummo!!!!

    I am so lucky to be able to get meat from cows that live on the same hill I live on - it couldn't be more local. And it's all grass fed and -finished too. And that butcher only has grass and pasture fed and grown animals, which is wonderful. I'm making a 'deal' with him about offal, which most people don't want anyway, nor the suet and the fat to render lard and tallow out of, so he is very happy that I am happy to take some off of him! He even has local, pasture raised eggs of different kinds: chicken, duck, occasionally even goose eggs! Those are very large but I don't care, I'll have them when I see them there! Thank you so much for your very informative videos - I love them and your family!

    My Father inlaw was a surgeon. He loved kidney. He would say "You have to boil the piss outta them" literally! Lol!

      That’s true you boil them 2 time pouring off the water and then put water back in the kidneys and bring to boil and season the simmer until tender. Also my mother cooked them outside over an open fire. Very delicious.

    Loved this one ! Recently came back to my senses after trying other ways of eating . This blog was enjoyable . I like seeing the country side as you travel also . Very enjoyable for those of us that cannot travel much . I also have to cats 🐈 that I am trying to improve on their diet .

    Im a new subscriber I’ve been binge watching all of videos. I love you and Dr. Berry’s channels I started keto in 2019 it was awesome until quarantine hit and I gained all the weight I lost back. Since watching your channel and a few other keto carnivore channels I’ve since started back on keto/carnivore. I’ve noticed so many improvements. Thank you for all that you do!!!!

    We live in Iowa and just bought 1/4 of a beef. Aged Angus Grass fed no antibiotics etc. 250 lbs of beef at 3.00/lb! Thats roasts, ribs, Tbones Ribeyes its amazing!! Only way to go!

    When we lived in Central Illinois, we used to go to a farm outside of town limits for eggs, butter, bacon and chicken and the farmer introduced me to side meat. Fry it like bacon and salt and pepper to taste. SO GOOD!

    My husband and I went out of town to do a little shopping. We did the same thing haha our food cooked at home taste so much better than anything we could eat at a restaurant.

    Didn't check to see if the meatballs have bread crumbs...girl, story of my life. I often have a moment where I think "did that have carbs in it?" It's not easy to not eat garbage since it's in everything! I have found carbs in everything since going keto a few years back.

    Our local butcher has a blend of ground beef burger, kidney, & heart. I add 1 extra pound of ground beef. It’s pretty good this way.

    We have a local deli & butcher where they do not cure anything! I love to pick up as much as I can there. Bratwurst, Brisket, bacon, steaks...everything is from local ranchers & all grass fed & finished. Overland Meats. They were named best Butcher & Deli by KTLA news Los Angeles. The only things they get from afar are the ales & the cheese! 😋🥩🥓 of course no ale for me. I'm Celiac 🍻 can't have the sandwiches anymore either (which really ROCK!) 😢

    I found a butcher about 30 minutes away but it's so worth it. I get my beef marrow bones for bone broth there and beef fat trimmings for tallow and amazing meats!

    There is a butcher in Franklin TN also. It’s called The Butcher Block, on Carothers near the Galleria. Maybe check them out next time you are in the mood for a meat haul!     I have not found a Keto meatloaf or meatball recipe that makes tender meat. They all turn out like hockey pucks, or cinder blocks. If the meatballs you purchased were tender, they had breadcrumbs!

    Ken, beef kidney is pretty good if you marinate the hell out of it. I marinated it in sour cream to soften it up, then I washed it off the next day, cooked half of it and it wasn't bad. Had some remnant weird taste, but otherwise good...and this is coming from someone who likes liver. After that meal, I decided to remarinate it in a salt water brine with garlic powder and ginger...so the next day it tasted almost exactly like hotdogs. It was funny... ...all that time...all that prep...just so I can taste what was essentially me just ripping open a pack of hotdogs and cooking it on a skillet.

    We do Carnivore with a dab of Keto. Cant afford the meats at our local butcher. Just cant do grass-fed/grass finished all the time on our small incomes. And no freezer or extra fridge to buy a cow or half a cow. So we still get meats at the grocery store during a sale. Love regenerative Ag but some can not afford a small-ish size haul like that for $138.00. Meats looked nice though~

      @@NeishaSalasBerry we raised meat chickens and processed them on our farm. Lots of egg layers too. We also raised lambs turkey pigs ducks geese rabbits etc. Rabbit stew is good. Also we got lamb and pigs from amish. They slaughtered the animal but we butchered it up. Over 240 various barn birds we incubated many. Semi self sustaining lifestyle and true satisfaction. Now we buy from local farms to support them.
      It's a whole other world when u raise and process your own meat 😀

    Some people soak white bread in milk and then throw it into the meat mixture. So it kinda just melts into the mixture. So it's hard to detect.

    I love love love beef bacon but can’t find it anywhere where I live and if I order it it cost way too much for shipping because of shipping in dry ice or some other safe way. I’ve went to every local butcher shop around me and they won’t carry it as it’s too hard to cut and it makes it too expensive for the customer! 😤😭. I wish I could find it here in North Florida but I can’t
    So happy you have a source! If I’m ever in Nashville going to bare bones will definitely be on my list to stop and shop! It all looks wonderful! Thanks for sharing 🤗

    Wow good meat seems expensive in the US. By comparison in the UK. 1lb dry cured back bacon approx $6. I must admit it did look very lovely

    3:30 I totally agree - buy local if you can and know who the producers are and how they produce it. You have to be careful with New Zealand produce, because a lot of it is packaged in NZ but comes from China. Same with Australia - the land is depleted and does not taste the same as it did 30-40 years ago. Go local and support your local farmers for the right reasons.

    I just made a STUPID move--- I'm sitting here watching you do this cooking-a nd looking at that- and I'm on my second day of a 3 day FAST!!! ha. Seriously- though, I'm not hungry.. little twinges so far- no headache or anything.. and feeling good... I COULD eat- but dont' HAVE to.. and I intend to make this a habit.. LOVE the local shopping-- problem is for me- there IS no local shopping-- no local farms selling much that I've seen..

    I have been eating beef bacon for a few years now. No pork bacon at all. I just wish it was more available. Maybe you guys can bring it forward. In Florida, it’s just found in Whole Foods,,,... thank you !! I have spoken to Publix. They say they tried it but no one bought it...

    My mom ate kidneys. She would boil them before preparing them and it made the whole house smell like pee. Lol! She never forced us to eat organ meats. She said it was an acquired taste. Lol!!

      @@nelsonchristopher9493 google ketosis. On Keto, the goal is to eat under 20 carbs a day so you stay in the state of ketosis. The body burns on either glucose or fat. Being fat-adapted helps you get into a state of ketosis. The brain works best when the body burns ketosis vs glucose.
      Hope that helped a little.

    West Texas ranch foreman many years ago used to make a smelly pot of stew that had many organs in it. My dad was always wanting to try to duplicate it. He liked the taste. I think it had kidney, liver, tripe, heart etc. We called it sonofagun. I think it is a Mexican dish. Anyone out there knows how to make this? If so please share here.

    Hello from Scandinavia ❄️🥶I enjoy watching your videos as well as Dr Berry’s channel. Dr Berry cracked me up when you guys were talking about planning to cook kidneys again coz previously it smelled like “ nursing home”🤣.
    By the way please next time either on this channel or the other one , could you talk about how to gain weight in a healthy way for us who have Osteoporosis / osteopenia and menopausal . All my vitals are good , just having problems gaining weight after recovering from Covid May 2020. Thank you

    "smelled like a nursing home when I was cooking it"~ ewww! Must say, that's quite descriptive though Ken. Instantly I think of dried urine/formaldehyde & Lysol...maybe a little ammonia & some bland cafeteria food.
    Good of you to give the 'eating noise' warning. It's one thing I can't stand to listen to- normally. For some reason, didn't bother me at all w/you guys... Hah~ My husband just said it's because you're eating meat, that you cooked at home=) He knows me so well!
    We have the same conversation from time to time, while out & about~ no place I'd rather eat than our own kitchen. Plus, I get irritated & feel wasteful for spending the $$ on less than awesome, right?! No sense in that, at all.

    Dr Ken and Neisha, lamb kidney is much less bitter than beef kidney and definitely better than pigs kidneys which would reallllly smell like a nursing home..but on steroids. Traditionally, kidneys would be soaked in milk or, a mix of water with a few drops of lemon juice overnight to draw out the bitter 'nursing home' impurities. Hello from UK. Hope this helps.
