  • Got a wonderful opportunity to test out something that I was curious about. Is there really a big difference between a high RPM flat burr grinder and a low RPM conical grinder? In this episode we will find out from an amateur home barista's perspective.

    This was a super fun video to make. Been curious about this for a while and finally got a chance to test it out in a realistic setting. Hopefully it's helpful for you guys as well 😀
    Additional point, the Niche is still the least retaining grinder that I have tried. Gotten so used to having a consistent output that it shocked me when the Eureka was short by so much. I thought I had measure the beans wrong from the get-go lol
    Edit: Just to clear any confusions that I might have lead to regarding the retention in the Eureka. It was simply an observation and not saying that the Atom 75 is an inferior grinder. I am aware that the set up is not meant for single dosing, hence why we dialed in the two machine in as close as possible to simply try and see the difference in taste.

    I think it is the opposite, the flat burrs better for light medium roast and conical for dark medium roast !
    the flat is unimodal distribution , less resistance so you can go finer, finer grind it reduce or correct this high acidity and sourness present in light roast.
    The conical is bimodal more resistance so the grind is more coarser. In dark roast, coarser add that missing acidity and less bitter . it's only my opinion.

    This is why I am glad I got the Eureka Atom 75E because I am more into medium/dark roasts. I tried the lighter fruity beans and just don't like them at all, Too mellow/bland for me.

    Great Video!!! I agree about the value of a variable RPM grinder. I also think there is value in having both a flat burr and conical burr grinder for the difference in flavours they highlight. If I have more acidic fruity coffee, I will use conical or if it more of a rich chocolate type coffee, I will use flat burrs. Great video, I enjoyed your comparison :)

      Thanks so much for your input. If not for the Niche that I have the Weber Key would look so tempting lol. But after this I do find a point to have both a conical and a flat (budget granting of course.) I think if the Eureka Mignon's price isn't too ridiculous I might pull the trigger.

    This was a really helpful and informative video, especially for those debating about getting a Niche over a more expensive multipurpose grinder. What is kind of shocking is that your friend has over $2,000 in grinders, but doesn't own a pour over kettle of any kind, but I guess I understand if they don't do pour over.

      THAT'S WHAT I THOUGHT! lol I figured that he would have a gooseneck, especially since he have the fancy v60 set, otherwise I would have brought mine. But as it turns out, there was a reason why I have only spoken to him about espresso drinks =P.
      He did end up ordering an EKG for himself in the end though.
      Anyhow, all in all this was something that I was looking forward to testing out, so I am glad that it was helpful.

      @@XICups I can understand not necessarily getting a Stagg EKG, I have an OXO gooseneck because of its' 1L capacity and when making a 10 cup Chemex. But, no gooseneck at all when their Expresso machine, and grinder setup is more expensive than all my coffee gear combined is puzzling. If you said that they didn't have a scale, I would have thought this was a prank and you were going to brew chicory.

      Hahaha well he just got into making pour overs and was making solely milk based espresso drinks before. Funny enough we had a discussion, he decided to start making pour overs because of how convenient the Niche is for espresso grinds. Going forward he will dial his eureka in for pour over, it was a hassle before due to the retention of atom 75, so he had to flush the machine every time.

      @@XICups What??? That like getting a driver's license and starting out with a race car! There has to be some tricks that can help reduce the retention on the Eureka Atom 75. Maybe you could do a tips and tricks for lowering the retention on the Atom.

      Thanks for commenting! So before each take, we would dial 5 grams of beans till it looks visually identical and then test several batches till the brew/extraction time is in similar ranges. It's not down to a dot, hence the "unscientific" part about it =]. But the point of this experiment is to see if an average user like myself can taste a difference assuming the condition is somewhat identical. Hope this answers your question.

    The burr in the Niche is more like flat burr uniformity type, and Atom 75 is unimodal brew type burr.

    Hi , good comparaison , thanks for taking the time to do it . I would like to point out few things tho . First the set up you have with the atome isnt ideal for single dosing , mine came with a blow off hopper extention who help getting the remaining grounds from chamber ... but honestly that whole single dosing trend should only be prioritise if you keep on changing your brewing methods all days long , im doing espresso based drink only , 3-5 drinks a day and single dosing is absolutly useless imo , i put enought coffee for a day or two in the grinder not more . No one would never notice the difference at this point . Also the grind quality of the atome is absolutly fantastic , light , fluffy , clumpfree . I got mine with the red speed burr in it and i grind 20g of light roast in 3.75 seconds very quietly , and while it grind it give me the ability to just spread the grounds in the portafilter in a circular motion , the end result is soo good that i stopped wdt since it just disturbe the bed more than doing any good . To me the atome 75 is an end game grinder and surpas my expectation for home use , its clean , well thought , quiet and built like a tank . Also for me a major plus is the grind ajustement , the knob on the eureka make it way more precise in ajustement than the collar mark on the niche and if you really want to push and fine tune the grind size , a geared knob is much much better at doing it . But again , im an espresso guy , i dont change brew method all day long and i usually buy speciality coffee 1kg at the time when possible so i can really master the reciepe and enjoy it a while befor changing for an other brand / strain of coffee , which a lot of people would benefit instead of bouncing all around and always chase the God shot whitin a 2-300g bag and ending up doing a lot of average shot befor going to the next coffee bag ... but thats just my 2 cents

      To be clear this was never meant to be a grinder review or stating which one is a better grinder overall, but rather a test on whether the RPM and burr style will make a noticeable difference to the average person. the Eureka is a fantastic grinder and I have noticed the same thing that you have mentioned with the precision of the dial, in fact it was really easy for me to dial in the coffee when I tried it for the first time. But I would say everyone's style and coffee intake habit are different, for example I often enjoy 2 different beans at a time (for when I crave different notes or brews.) So the single dosing is quite convenient for me, honestly given the price tag of the Niche (non-scalper of course) it's a fabulous grinder for that purpose. I actually really look forward to the Mignon, would love to have that as a flat-burr option.

      OK, I’m curious to know, when only filling the hopper with about 120-200 grams of coffee, which I assume will cover your need for two days, do you then experience having to adjust the grinder towards the end of day two to accommodate the beans changing character in the hopper? And do you experience different grind quality in the last 1-2 cups due to less weight from the beans in the hopper?

    Great video. However, I believe this is not a fair comparison because you are single dosing the Atom 75. A full hopper Atom 75 crushes the niche in almost all aspects in terms of espresso grind quality. You can even go into the super fine territory and have great espresso without channeling but you can not do that in the niche. The major down side of the atom is the retention.

      The hopper is normally full when he is using his daily beans, we just had to take it out and re-dial it for the bean that we were using for this video. But the point of the video is on whether or not you can tell the difference in terms of taste, not which one of these machine is more superior. It's something that I was curious about.
      On the point of channeling, I would actually argue that the Niche go fine enough for all of the beans that I have came across, and honestly I have pulled some superb shots without channeling from the grinder.

    You should have made a cupping test rather than V60 because that introduces the brewing variable

      Thank you for your suggestion. However the purpose of this test is to see if we can spot the difference using methods that we normally use on a daily basis, as most amateur home users (myself included) don't cup on a regular basis. Hence why I mentioned in the beginning of the video that it's an unscientific test for home users. Again I really appreciate the feedback. =]

    It’s not really fair to say that a flat burr grinder will bring out more chocolate and a conical will bring out fruit. There are so many different types of burrs available for each. The atom doesn’t have unimodal burrs. If it did, you’d find a totally different result in the cup.

      The note difference is more of a general observation and not a absolute rule. Not saying one is better than the other, but rather if you know nothing about these two burrs and are trying to decide on one, it's a starting reference point.

    There is no need to buy a flat burr if you have conical. And no need to buy conical if you have flat.
    The fix is easy: change your coffee type to more fruity type or more bright type and save your $$$$ on grinders

    This is not fair because atom is designed for espresso only and not single dosing. Atom also designed for baristas and prosumer, not an amateur like you, that's why you can't maximized it's potential

      The question was initially if there was difference in taste between flat and conical burrs, the retention and other things addressed are just side notes. It is interesting to see how a single dose grinder compares to a larger pro-sumer grinder. Granted, you are right to point out that the Atom 75 is an espresso-centric grinder and shouldn't be used to taste test filter coffee (except possibly the Aeropress), but when you have a flat burr grinder available, you try to make the most of it.

      Like @Matthew said, this test is really to see if the difference in taste is obvious and NOT a grinder review/comparison. It's not easy for the average person to have 2 grinders like this side to side, so I have been curious about the result, whether it's pour-over or espresso, which I would imagine most users would purchase the grinder for. As with any online reviews, there are going to be inherent bias, I tried to be as neutral as possible in this video by only providing my observations and with both machines dialed in to as close as possible (my friend helped dialed in the Eureka since he had much more experience than I.) Hope this clears up the concerns a little bit. All in all thank you for pointing this out, it will help others make a more informed purchase.

My curiosity was about burr types, conical and flat burrs can do tremendous things to beans and what I believe separates them from one another is how the grounds are shaped when ground and the distribution in size uniformity. One having more fines/boulders compared to another or if one producing grounds that shaped more round and uniform as opposed to jagged and oblong. Is there a type of burr grinder or model you prefer? I am asking for myself, as ideas towards a future purchase.

      I guess you should review ode grinder (ssp burr) and compare it against niche. It's a fair comparison, both are single dosing, can grind for espresso and pour over, low powered motor and in the same price category

    For fucks sake man. You want to taste the difference in flavour and not only you taste the drinks at different time-frames but also douse them with milk? What made you think making a milk drink is representative of the coffee flavour? If you want to compose an accurate opinion have a cupping session with a some different beans and taste the difference without all these variables you can't control.
