An Italian Christmas/Easter tradition (although we're not Italian) is making these delicious crispy wafer style cookies. These homemade chocolate pizzelle are chocolatey but not too sweet and are great topped with a variety of delicious extras or just plain.

3 large eggs
1 cup sugar
1/4 teaspoon salt
1/2 teaspoon instant espresso powder (optional)
2 teaspoons vanilla extract
1/4 cup cocoa powder
2 teaspoons baking powder
1 2/3 cup all purpose flour
1 stick (1/2 cup) unsalted butter, melted

I watched several recipe videos when I got my pizzelle maker and started with the recipe from the instructions in the Cuisinart box and they were tasty. I wanted to make some chocolate ones and after watching a few found this one. To the point, these are great and you are correct about the difference in putting the butter in at the end. They are as crispy as Tate’s cookies. It did add some miniature chocolate chips to my batter, really good. I will always make them this way.

Pizzelle without the hard E at the end. I'm not Italian. My Italian friend's mother probably would have said it with the hard E at the end. I do love pizzelles however you pronounce the word.
