Some people use all brown sugar which I am not accustomed to seeing in a Carmel recipe!! But it seems to work. Some people are assuming it will give it butterscotch flavor! Not sure myself!! Curious!

I add the extract at the end, off the heat. When you add it too early, it can cook out and you lose the flavor.
Thanks Zach, I will try that next time however, mine holds the flavor when I add it in, I use pure extract.
