I made this cake for a potluck, and people just raved about it. It was every bit as good as a gluten cake. Will definitely make it again. I found at 45 minutes that the center was still liquid, so I baked it almost to a full hour! I was nervous it would be overdone, and the top (bottom) layer did get a little hard, but the. inside stayed moist and got all the way done. Also, I only needed about half the ganache to cover the cake, not sure why the difference there.

Lovely! Can you freeze it? I mean, of course you can. But will it stay tasty after having (halfways) thawed? I imagine serving this halfways frozen in summer.

i halved the recipe and baked for 30mins instead, but my mix is so much thicker and the result is like a cracked brownie instead. it doesnt look good but still taste awesome. just wondering what's the problem...?
+Nata Cheesee Cooking times and volume aren't always as easy as halving one and almost halving the other... It does have a brownie like consistency, though it's far from a brownie, so it may be yours was closer to the result than you thought. The top does crack a little too - that's the meringue element floating to the top (or more left at the top as the denser materials sink!). If you enjoyed the taste - I'd say it worked perfectly :) The frosting covers a lot of sins!!! Haha

We have very lovely neighbours who we give lots of cake and sweet stuff to, and Minion takes a lot of it to work... as his colleagues are hugely supportive of the channel and are practically sugar-fuelled! (Any savoury stuff we tend to scoff for dinner! So in those cases, I wrap up quick, we photograph it really quick and tuck in while it's still warm!) hahaha
+Dilini Jayasinghe hmmm it won't be that straight forward a swap. If you can find almonds you could grind them - or any nut - peanut/hazelnut/cashew - but some may have a stronger flavour. Or try a cake recipe, the flour may absorb too much moisture (moreso than a nut would) so it may massively affect the outcome.
Looks good -- I'd try it but of course I'm allergic to almonds. Will pass the recipe along to my friend, though -- she's gluten free as well and loves chocolate! ***** Yes I have a summer cold and my voice was all over the place filming this !!!! If the temperature in your kitchen is high, then you may need to refrigerate but it won't set hard either way and should always be a nice soft topping :-) Big hugs from us all here Sx

Cups are used in 3 countries only and can give unexpected results so I will rarely use them.
