Are you vegan or allergic? I think you should just bake another cake then, both egg yolk and white is so important in this recipe.

I do better separating whites from yolk by dumping it into my hand and straining the white through - I find much more control over the separation this way with minimal chance of breaking the yolk.

Have found coconut sugar doesn’t always behave as I envision. I use powdered or liquid stevia in some recipes but it won’t caramalise. Monk fruit sweetener or maple syrup, caramalised maple syrup, or maple sugar often works fine. All these things behave differently.

You could try sunflower seeds. Pumpkin seeds might work as well. But sunflower seeds are a bit lighter in flavor. Chickpeas or chickpea flour is used in one of my gluten free chocolate cakes and tastes delicious, but is a different recipe.
You are seldom allergic to ALL nuts, so make a test at the doctors to know what nuts you react to, and allow yourself to eat the rest. READ the "TRACES OF" though! Sometimes there are traces of many nuts in one nut package, but check different brands and you'll find nuts without the traces of the ones you're allergic to. Good luck!

I just made this recipe. I used 6 Large eggs total. 5 egg whites for the meringue, 5 egg yolk plus one whole egg mixed with sugar.
